Vinification
Harvested by hand, the selection of ripening grapes in Freixenet's vineyards reaches across the span of several months. From the end of August for the harvest of the warm weather Macabeu grapes, through the beginning of October for the higher elevation Parellada variety, our winemaker awaits the perfect time to gather each bunch, letting the vines tell him when they are ready. The first fermentation is nurtured in stainless steel tanks at controlled temperatures between 57°- 60°F. Exclusively initiated from our own Freixenet cultures, the first fermentation is introduced into the tanks. After 10 to 12 days, the wine is racked and clarified as the blend is readied for bottling. The secondary fermentation finds the bottles of Cordon Negro cradled in the perfectly chilled caves for up to 18 months.

Palate
Cordon Negro Brut is a crisp, clean and well-balanced 'cava' sparkling wine. The fresh palate of apple, ripe pear and bright citrus flavors combine with a long finish and an exciting touch of ginger.

Serving suggestions
Pair Freixenet Cordon Negro Brut with anything from Eggs Benedict to seafood, such as lobster or bluefin tuna. It is also the perfect pre-prime rib cava selection for oyster, caviar, or sushi appetizers.

Cordon Negro Extra Dry was introduced in 1990 to appeal to changing customer preferences. Updated to trend along with more modern palates, Cordon Negro Brut Extra Dry is a crisp sparkling wine with just a nuance of sweetness, making it perfect for stylish, contemporary cuisine.

Vinification
Aged up to twelve months in the perfect chill of the caves that Cava sparkling wines are named for, Cordon Negro Extra Brut is blended with a 2.3 percent dosage, making it the perfect off-dry wine for a number of menus and occasions. Like all cavas, Cordon Negro Extra Brut is produced using the traditional méthode champenoise, creating privileged bubbles nurtured through double fermentation, followed by the long, carefully-tended process of aging, riddling and disgorgement.

Palate
A dry sparkling wine that whispers just a hint of sweetness, Cordon Negro Brut Extra Dry pleases a variety of palates. Earthy, fruity, and blessed with peach, melon and candied citrus essence, this cava leads up to a long, smooth finale of intoxicating flavors and aromas.

Serving suggestions
A superb palate cleanser, Freixenet Cordon Negro Extra Dry cava pairs well with spicy cuisine, but also acts as an excellent bridge between courses. Anything that goes well with beer, from pizza to buffalo style wings, is also elegantly handled by Cordon Negro Brut Extra Dry.

Freixenet Cordon Negro Rose

Cordon Negro Rosé’s bright, fruity personality envelops the senses in the glass with fresh raspberry and fruit cocktail aromas. The toasty palate mixes strawberry jam and red currant to deliver a pleasant mouth feel, wrapped up in a slow, light, sweet finish.

Vinification
The late harvested Garnacha grape, also known as Grenache in France, collects sun and warmth a month longer than most cava grapes, proffering abilities to build higher levels of sugars, translating to higher alcohol content. The indigenous and rare Trepat grapes, by contrast, are low altitude, low sugar grapes that ripen mid harvest, delivering lower alcohol levels upon fermentation. The combination of the two makes for a delightfully complex, nicely balanced blend with a rosy complexion. At harvest, the grapes are processed separately, then transferred to stainless steel tanks where proprietary yeasts from Freixenet's own collection begin the first fermentation. After 10 to 12 days of interaction with the yeasts in perfect 59 to 63 degree atmosphere of the caves, the wines are racked, fined, filtered, and prepared for blending in traditional méthode champenoise, heralding the second fermentation.

Cordon Negro Rosé's bright, fruity personality envelops the senses in the glass with fresh raspberry and fruit cocktail aromas. The toasty palate mixes strawberry jam and red currant to deliver a pleasant mouth feel, wrapped up in a slow, light, sweet finish.
