Rye whiskies present considerably more diversity in flavor compared to Bourbons, and our Hogback Rye Whiskey is no exception. Lighter than some rye, our 95% rye is complex and enticing.

Nose: Floral and soft. Grassy and sweet, with plenty of green apple and some oak.

Palate: Green apple hard candies are most prevalent, with some tart cherry and flowery sweetness.

Finish: Lingering sweet orange spice. 

Warming and deeply satisfying neat or as the base for a cocktail.

Maker Notes

Our 95% rye whiskey is lighter than many other rye whiskies but still has all the characteristics associated with a rye. Eclipse is finished for two years in barrels that previously held rum. 

Aged a minimum of 4 years in a virgin oak barrel and ex-rum cask.

Nose: A big beautiful nose – wood shavings, freshly cut pine. All the baking spices – nutmeg, cloves and cinnamon. And so much more… 

Palate: Baked apple. Citris and sweet spice with a long creamy vanilla and a warming orange sorbet finish.

The V.S.O.P. differentiates itself by a selection of apple ciders exclusively harvested in the Pays d’Auge region, a delimited terroir representing only 6% of the Normandy region. Caravan shares the pedigree of Darioush’s Signature wines, but displays more ripe, saturated fruit with an elegantly textured finish. Caravan is anchored in Cabernet Sauvignon with lesser amounts of Merlot, Cabernet Franc and/or Malbec and Petit Verdot added for depth and complexity of flavor.

Drawing inspiration from a refined Left-Bank Bordeaux blend, Caravan commands attention with a core of mouthwatering raspberry and black plum fruit while baking spices of cinnamon and nutmeg swirl on the palate.
Cabernet Sauvignon leads the way with its plush, velvety texture while Merlot and Cabernet Franc add savory top notes of bay leaf, hawthorn, and sandalwood. A flourish of rich, round fruits sweep across the midpalate, then culminate in an aromatic finish accentuated by dark chocolate reminiscent of a fine dusting of cocoa powder.

The Belfours’ first small batch is offered precisely at 100.5 proof. A true small batch, only 95 barrels comprised this one-time release. Why in the world would anyone want to put something called "Bitters" into a drink? In fact, Bitters are critical in the best drinks. The first publication of a bartenders' guide which included cocktail recipes was in 1862 - How to Mix Drinks; The Bon Vivant's Companion, by "Professor" Jerry Thomas. In addition to recipes for Punches, Sours, Slings, and the like, were 10 recipes for drinks called "Cocktails".

The effect of Bitters in a drink is to balance, round out and complex the flavor. Your mouth has taste receptors for sour, sweet, and salty; AND it has a receptor for bitter. The more receptors triggered as a drink tickles on the way down, the more interesting the drink. You know you have used Bitters correctly when the person enjoying the drink says, "Wow, there is something going on in the background of that drink". Consider that a slam-dunk.

Domaine Faiveley's Gevrey-Chambertin Vieilles Vignes wine captures Burgundy's essence. Maker Notes

Our Peated Single Malt has been inspired by classic production methods and fueled by American innovation. We source peated barley from Scotland, use mineral rich water from Sierra snowmelt, and age in first-fill bourbon barrels to produce a whisky that is smoky, fruity, and well rounded.
