It is aged for a month in Burgundy and Bordeaux barrels, and then for five more months in French oak Chardonnay casks. This variation of barrel finishing is unprecedented in the world of tequila. With our commitment to non-traditional yeasts and longer cooking, fermenting and distilling practices, our tequila is unlike any other Reposado available today. Our goal isn’t to make more tequila, just to make it better.

Cambio is on a mission to create a higher standard in premium tequila by exploring small quality changes throughout the spirit's creation.

We approached our Tequila Blanco with a higher set of standards, going beyond traditional expectations every step of the way. First, our whole Blue Weber Agave piñas are roasted slow and low for superior flavors, then the rich juice is extracted from the pulp using only a traditional Tahona stone wheel. Our slower fermentation process utilizes extremely low temperatures and wine yeasts in American white oak and Mexican pine lined fermentation tanks—a step few others have ever even considered. Finally, our tequila spends time in used French oak wine barrels, giving the finished spirit a level of complexity and character unlike any other Blanco.

TASTING NOTES

Fruity and rich with notes of butterscotch, honey-roasted agave, orange peel, guava and peach with a slight mineral undertone. Soft and pleasant on the palate with a clean lingering finish—even at 46% ABV

Espacial Alto Grado Blanco Tequila is a premium tequila crafted in small batches using 100% blue agave plants grown in the highlands of Jalisco, Mexico. This tequila undergoes a careful distillation process that results in a smooth and vibrant flavor profile, with notes of citrus, pepper, and earthy undertones. Its crisp finish makes it an excellent choice for sipping neat or in cocktails, showcasing the quality and craftsmanship that goes into each bottle of Espacial Alto Grado Blanco Tequila.

Its Lager base style means it’s very clean, with not a lot of fruit profiles. The subtle flavors of ube and coconut will really come through. A dessert-like beer, Paint Me Purple is an easy pair with desserts. It becomes more intriguing to pair with local dishes like a rich and flavorful Kare-kare. 

Known for taking the road less traveled, Michael David Winery has always stood apart from the crowd. The fruit for this wine comes from the original “super freak” himself, Michael Phillips’ Cabernet Sauvignon vineyard located only a medicine balls toss away from the winery.

400 Conejos 1 Year Old Anejo Oaxaca Espadin Mezcal is a premium mezcal crafted in Oaxaca, Mexico, known for its smooth and complex flavors. This mezcal is made from the Espadin agave plant and aged for one year in oak barrels, resulting in a rich and earthy taste with notes of caramel, vanilla, an11d smokiness. It is a versatile spirit that can be enjoyed neat, on the rocks, or in cocktails, making it a popular choice for mezcal enthusiasts looking for a high-quality bottle.

Our Celebration of the Deliciousness of Grain Whisky

In 2000, John Glaser created the first ever Blended Grain Whisky released to the market. He called it Hedonism. The Scotch whisky landscape was changed forever.

Over the past 23 years, Hedonism has remained a core part of the Compass Box brand, winning numerous awards and becoming a staple in many whisky fans’ cabinets. The calibre of whiskies we need for Hedonism have grown ever harder to find, which is why our first ever expression will become a Limited Annual Release going forward. For the first batch we have turned to more mature whiskies aged almost entirely in first-fill Bourbon barrels.

Hedonism 2024 contains the last of our stocks of grain whiskies distilled in the 1990s, a period when some of the distilleries featured used maize in their mashes. This brings an enhanced buttery weight to the overall composition.

You can expect a complex array of patisserie aromas, with exotic vanilla and clove-infused caramel. Layers of creamy custard arrive on the palate, with accents of honey and mascarpone. At the finish, a delicate citrus accent appears.

The Story
The 'Old Pepper' label was proudly produced by Colonel James E. Pepper during his lifetime and marketed as 'The Oldest and Best Brand of Whiskey made in Kentucky.' Through Col. Pepper's advocacy on behalf of the bourbon industry, it was the first label in Kentucky to be bottled at the distillery, and his invention of the 'signature strip stamp' was later incorporated into the Bottled-in-Bond Act of 1897, assuring consumers of the quality of the whiskey in the bottle. Our label today incorporates historic fonts and designs from the 1880s through the turn of the century, including the signature strip label—once again giving consumers valuable information about where and when the whiskey was made and bottled.

Unique blends of distinct mash bills, consisting of Corn, Rye, Malted Barley & Malted Rye; Aged in new toasted & charred barrels made from Kentucky Oak, air seasoned a minimum of 18-24 months; Water source from the historic distillery well. Distilled and bottled at the historic James E. Pepper Distillery (DSP-KY-5) in Lexington, Kentucky. Aged a minimum of 4 years and bottled at 100 proof. Distilling season listed on signature strip label.

The finish is enduring, with deep spiciness, dark fruits, leather, and caramel.
