Stellum Bourbon finds its flavor in the tension of three Indiana Bourbon mash bills, two of which are high-rye, with the third being almost exclusively corn. Older barrels from both Kentucky and Tennessee are folded in slowly, through a multi-step blending process. This brings added layers of depth and complexity, ultimately allowing us to round out a uniquely Stellum flavor profile.

Stellum Tara is a blend of three unique blends. The first is focused on high-rye and high-corn Indiana Bourbon, the second is focused on older fruit-forward Tennessee Bourbon, and the third is concentrated on spice-driven Kentucky Bourbon. The three blends were slowly layered into the final blend, resulting in a multifaceted bourbon with the structure of a high-rye Indiana Bourbon and the nuance of hand selected Tennessee and Kentucky barrels. ABV: 56.77%

Stellum Black Bourbon is the next step in Stellum Bourbon’s evolution. By incorporating reserve barrels from our stocks with the original Stellum Bourbon blend, we created a bourbon that delivers robust flavor alongside profound complexity. The result is an expression both entirely new and deeply familiar, with roots firmly planted in Stellum Bourbon.

This warm, oak driven bourbon is made in preparation for winter, inspired by the Hunter’s Moon of October. It is marked by a high rye spice and a robust woodiness meant for the time of year when days get shorter and the nights get longer.

TASTING NOTES

COLOR:  Golden Caramel.

Nose: Very warm, rounded vanilla and butterscotch aromas initially, giving way to honeysuckle and ripened mango.

Palate: Bright cinnamon at first, leading into flamed orange peel, then savory, earthy notes of black plum and petrichor.

Finish: Sweet and upbeat medium finish that tapers off gracefully.

WITH A SPLASH OF WATER: The layer of fruity, floral aromas is activated with a splash of water. The nose gives ripe mango, coconut, and tangerine, the palate is toasted salted cashew and lemon balm, and the finish is longer and leaner, like a walk down a long dock at the beach.
