Bozal Artesanal De Borrego Sacrificio Mezcal

On the steep precarious hillsides of Oaxaca, Guerrero and Durango varieties of agave, indigenous to the region, grow wild and are heavily sought after by the local mezcaleros. These varietals produce flavors that are exotically intense, with rich earth tones and savory smokiness. From the heart of the maguey these flavors are traditionally extracted to produce mezcal that is wildly refined. Because we at bozal believe that something wild produces a far richer spirit.

Agave

The Espadín agave, known as the genetic Mother of the Blue Weber Agave, is used to produce tequila, and is also the predominant agave used in mezcal production. Unique in itself, the characteristics of this agave showcase the aromas of wet earth, a rich smokiness on the mid-palate, and a finish reminiscent of wild flowers. This variety of agave is a subspecies of the Angustifolia Family of agave.

A small agave varietal, the Tobalá, a subspecies of the Potatorum Family of agave, has broad, spade-like leaves. The compact size of this agave yields limited quantities of mezcal and takes 12-15 years to reach full maturation. At this time, the plant sends up a flower-bearing spike that can be anywhere from 10 to 20 feet high. Known to many as the king agave, Tobalá can only grow from seed and is becoming increasingly rare. This agave offers intensely aromatic mezal with complex notes of tropical fruit.

Taste

A dry mineral base is offset nicely with an abundance of fruit, herbaceous notes and nuttiness. A viscous entry coats the mouth leading to a fruit forward mid palate with subtle sweetness that shines with bright citrus and persimmons. The finish is smooth with flavors of smoked lamb.

Our story begins in San Juan del Rio, a town in Oaxaca where artisanal, small batch mezcal has been made for generations.

Pluma Negra is cultivated and distilled by the Hernandez family who have produced Mezcal in the region for nearly 45 years. Our Maestro Mezcalero, Rodolfo Hernandez, is a third generation Mezcalero who uses time honored traditions to create Pluma Negra - animal drawn tahona to crush the maguey, pine barrel fermentation, and double distillation in copper pots.

Pluma Negra proudly presents four expressions of Mezcal that embody the essence and complexity of this distinct spirit - deep rich flavors on the palate, and aromas that can be both delicate and robust on the nose - Espadín, and a cocktail Espadín, Tobalá, and Tepeztate.

ESPADÍN
Espadín grows throughout Oaxaca. Our Maestro Mezcalero employs traditional methods for harvest and distillation.

Donkeys transport machete cut maguey down to where it’s cooked in an underground earthen oven. An animal powered tahona stone grinds the baked maguey, which is placed in pine barrels for wild yeast fermentation. All of our Mezcal expressions are finished with a double distillation process in small batch copper pots.

TASTING NOTES
Espadín is light and fresh on the nose - lime, pear and apple come forward, with subtle herbal and almond notes at the end. It has a light and zingy feel that flows between tangy citrus and briny olives that lingers long on the palate. Espadín is beautifully approachable and perfect for people who are new to experiencing Mezcal.

HOW TO ENJOY
Our 40% ABV Espadín is designed as a cocktail spirit, try mixing over ice with tangy sweet pineapple juice, zingy citrus fruits such as tangerine, orange and lime, or crisp and clean cucumber. Our 48% ABV Espadín is a sipping Mezcal that is best enjoyed neat. Pairs well with lightly smoked fish.

Alexander Murray Ardlair 9 Year 2010 Single Malt Scotch Whisky

Although categorized as a Highland whisky, Ardmore flirts heavily with the South-east peripherals of Speyside, lying boisterously at the foot of the Grampian hills. Big and brash, it is also known for flirting heavily with peat, at least some of the time that is.

Built in 1989 for the purpose of producing single malt for blends, Teacher’s opted to make peated whisky here. This move alleviated the company’s reliance on Islay’s producers of peated whisky to add smokiness to blends – a particularly astute decision, given the growing popularity of Scotch whisky at the time. Today, since the distillery adopted steam during distillation rather than coal fires, two spirit characters are made here, a practice that is becoming increasingly prevalent.

Both spirit styles are produced at separate times of the year, in which the point of difference in production is the Phenol level of the barley delivered to the distillery, i.e. the level of peat used in drying. ‘Ardmore’ is the heavily peated single malt; ‘Ardlair’, or ‘Ardless’ as it’s sometimes known, is the unpeated single malt. Worth noting is that, although each spirit is vastly different in character, because Ardmore and Ardlair are from the same distillery, they can be vatted (or married) together and still be called a single malt.

Sometimes big, brash, earthy and smoky; sometimes subtle, floral and fruity. A real Jekyll and Hyde distillery. Let your nose prepare you accordingly.

This 2010 vintage is fantastically assertive: rich and nutty, with bags of the Highland character. A real ‘pick-me-up’ dram; however addition of water reveals layers of complexity, and a softer side that is not immediately apparent.

A whisky resigned to the furthest reaches of the Ardbeg Warehouse, Ardbeg Traigh Bhan 19 Years Old Batch 3 was one of the only spirits in the Distillery’s history to be bottled in the midst of a global lockdown. Having spent months on end behind closed doors, this unprecedented bottling is now ready to come out from the dark… and into the light.

Non chill-filtered at 46.2% ABV.

NOSE

In this whisky, faint waves of scented woodsmoke mingle with sea spray and pine resin. Wisps of aniseed toffee and sweet lilies follow on the breeze while fresh citrus zest laps over notes of cayenne pepper. With a splash of water, waxy notes and charcoal flow into droplets of classic Sherry and linseed oil.

PALETE

A rush of rich, sappy textures is followed moments later by classic sweet smokiness. Tarry rope and treacle toffee plunge the palate into a second wave of soot and aniseed twists. Smoke bobs on the horizon, while smoked brown sugar, walnuts and spices gently dissolve away.

FINISH

A long, unhurried finish carries bitter almonds and clove in its wake, before slowly drifting away.

The inspiration for the name "Cinabrio" stemmed from the vibrant hue of red, a shade that held significance in ancient Maya culture and was achieved through the use of the mineral known as cinnabar, also called Cinabrio. In Mayan mythology, red symbolized the revered deity Kinich Ahau, who represented the sun.

Deep within each bottle of Cihuatán Cinabrio, you will discover a profound connection to Mayan folklore in the form of the Sleeping Woman, a guardian goddess entrusted with protecting the Cihuatán valley. According to legend, the Sleeping Woman would act as an intermediary on behalf of the people of Cihuatán, entreating Kinich Ahau to infuse the valley with his nurturing warmth. Symbolizing Kinich Ahau were two hummingbirds, emblematic of his presence and power.

TASTING NOTES

COLOR: The hue is deep and nearly impenetrable.
