Made from the best Mother Earth has to offer: sustainably grown grapes from the Cte-dOr and water from historical French springs. The Pinot Noir and Chardonnay grapes are hand-selected for this unique bottling of vintage gin. The wine is fermented and aged individually in oak barrel for 6 months. After blending the wines together, it is then distilled one time in a copper pot and six times in copper columns, followed by filtration four times.

JCB Gin is infused in a two-step process: Eleven plants and botanicals, including juniper, a touch of roses, and coriander among others are steeped into the spirits, while seperately, a distillation of an additional thirty-three biodynimic herbs, plants and botanicals including chamomile, honeysuckle, dandelion, calendula, borage, valerian, stinging nettle, lemon balm and yarrow is crafted. The Biodynamic herbs in our gin are known to be the best for the human body, and the most incredible contributor to health. Aviation is distilled using a proprietary maceration recipe that produces a pure medley of botanical flavor.

STEP 1: INFUSION
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a neutral grain spirit for 18 hours in macerating tanks.

STEP 2: DISTILLATION
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.

STEP 3: THE CUT
In a meticulously monitored process, the first fluid leaving the still, the "heads," is removed. Collecting the "heart of the spirit" throughout the run, the distillers then determine the end of the cycle and make the final cut, "the tails." This process takes approximately 7 hours and at this point, the "heart cut" is 142 proof.

STEP 4: BLENDING & BOTTLING
The "heart cut" is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then packed into boxes and ready to ship.

"This seems to have more precise flavors rather than a medley of subtle ones. The aroma focuses on juniper, other berry skins, and freshly-ground coriander. The palate is more bitter than the aroma might let on as anise and orris root play a large role. Though fret not, fresh juniper and elderberry tea are at the center of it all. The custom packaging speaks to the coastal nature of the product - aquamarine bottle color and a flat back so the bottle doesn't tip over while on your boat!

Beefeater Pink Strawberry is the vibrant new pink gin made using the original Beefeater London Dry Recipe with the addition of natural strawberry flavoring to give it a vibrant and delicious strawberry taste.

Our founder James Burrough would often experiment with new flavored gins and liqueurs, purchasing his ingredients from London's Covent Garden markets in the 1800s. These recipe archives and London's markets inspired this bright expression, Beefeater Pink Strawberry.

This "San Diego Style" gin is light and easy going, like the perfect sunny day. Bright citrus is accompanied by a tediously specific blend of herbs and spices. A smooth back bone is the core to the entire experience. This creates a gin that is both complex and delightfully easy to drink.

In the 19th Century, the arrival of English ships in Honolulu Harbor led to a strong Victorian influence. Named after a sailor’s word for “drink”, “Fid” Street, now known as lower Nu’uanu Avenue in Honolulu, became the place where the thirsty and sea-weary reveled. Bridging the gap between old English and American craft gin styles, FID Street Gin is the first gin ever created on Maui and only the second in Hawai'i since prohibition. 

FID Street Gin exhibits a very clean and aromatic fresh cut floral and citrus bouquet with a hint of forest air. FID Street Gin is a Hawaiian Gin reminiscent of a London Dry, with tropical notes from Hawaiian fruit and botanicals. It is crafted with eleven botanicals then distilled in our glass stills, creating a clean and aromatic fresh cut floral bouquet. Distilled with unique glass stills Hali'imaile Distilling Company. FID Street Gin pays homage to this history by marrying the typical components of a London Dry gin with unique local Hawaiian ingredients.

RECIPE - Negroni Originale
An indispensable cocktail hailing from Italy.
Using only Italian ingredients- Mix 1 part Malfy Originale Gin with 1 part Campari and 1 part Italian Rosso Vermouth. Serve in a tumbler filled with ice and a large slice of orange.

Malfy Con Arancia is distilled using the peel of Sicilian blood oranges, Italian juniper and four other botanicals. Blood oranges are a prized variety in Sicily and harvested in November their rich and red color develops from the cool mediterranean nights.

The coastal breeze in your glass.
Shake 2 parts Malfy Con Arancia with 1 part peach liqueur over ice. Strain into a martini glass, add a splash of soda and garnish with a (Sicilian) orange twist.
