Dovetail Distillery
At Dovetail Distillery we malt our own wheat for use in our mash bill in a hand-built cedar cabinet. We then grind the malted wheat, wheat and oats into a fine flour which is then weighed out for our small batch process. We use local water from the Sierra Nevada snow melt to cook our mash and then allow it to ferment in open containers until it is ready to distill. At Dovetail Distillery we use the tried-and-true process of double distilling in a copper pot still to produce a spirit with both a full body and flavor. White Dove is unfiltered to maintain a full flavor.
TASTING NOTES: White Dove has a strong peppery taste up front which is followed by a buttery caramel finish that lasts on the palette for several minutes.
AROMA: White Dove has a strong aroma of cut grass and toasted oats.
MAKER'S NOTES: White Dove pairs well with stone fruits and anything with a floral note. White Dove can easily be substituted in place of gin due to its strong botanical flavor. White Dove is unfiltered in order to maintain a rich, full flavor and body as is the tradition of an authentic Whiskey.

At Dovetail Distillery, we believe in preserving the past and sharing memories. We will continue to create authentic Victorian age American frontier Whiskey aged in small freshly charred new American white Oak barrels. Aged two years Cut Throat brings scents of leather, burnt honey & clove while tasting of raisin, chocolate, caramel and allspice. Using our unique mash bill & crisp Northern Sierra Mountain water our distiller has captured in this bottle the message of love shared from mother to son.
