Yangchon Chungju Korean Rice Wine is a beautifully crafted traditional beverage with deep roots in Korean history. Brewed by Yangchon Brewery, established in 1920, this rice wine follows generations of expertise passed down through three generations of brewers. It’s made from rice that’s grown without herbicides, using a unique method where snails are released into the rice fields to help maintain a natural balance in the environment.

This premium Chungju is made from fermented rice, capturing the essence of the region it hails from, Chungju, in the Chungcheong province of South Korea. The brewing process involves steaming the rice, mixing it with water, yeast, and nuruk (a fermentation starter), and allowing it to ferment for several days to weeks, producing a complex, flavorful wine.

Tasting Notes:
This Yangchon Chungju has a rich golden-amber hue and a distinct profile, offering savory notes of fermented soy, cheese rinds, and mushrooms, which are balanced by a natural sweetness that imparts a round, smooth texture. The combination of savory and subtle sweetness makes it a truly unique and nuanced rice wine.

The Sloe
Pacharán is traditionally made by macerating sloes in anise. The sloe, known as arañón in Navarre, is the fruit of the Prunus spinosa bush, which we commonly call blackthorn. It belongs to the plum family but is much smaller in size, smaller than cherries. It is bluish black in colour and has an acidic and astringent flavour.

Its lack of sweetness is surprising, which is why it has never been consumed as a fruit.

Tasting Notes
Pacharán Navarro is made by macerating sloes in aniseed and, therefore, in the glass of Pacharán Zoco we will find the characteristics of its two ingredients perfectly integrated. We pour the glass of Pacharán Zoco and at first sight it presents itself with that red colour so closely linked to Navarra. A medium-intensity red, with a cherry hue that will evolve to brick tones as the pacharán acquires maturity. When we swirl it in the glass we perceive the density provided by the anise in the thick tears that form in the glass. The aroma of Pacharán Zoco is softly fruity on an aniseed background.

Made in Mexico with fresh sweet and bitter oranges, Persian limes, citrus blossoms, and spices, creating a subtly complex flavor perfect for the margarita.

The rich and intense style of Jamaica and Barbados, with their notes of plum, banana and vanilla, is enhanced by meticulous blending and further maturation, in France. The result is a profound structure spiced with notes of cinnamon and clove, whose smoky quality adds texture. An ideal companion for cocktails.

Nose: Hints of black peppercorn, clove, cinnamon, baked cherry, prune, molasses; later sniffs encounter forest, leaves, black tea, dry stone.

Palate: Entry is fruity with white raisins, dried pineapple, and is off-dry. midpalate is spicy, piquant, minerally, and significantly drier than the entry stage. Ends spicy.
