Nelcius Single Malt Whisky Premium (90 proof, 45% abv)

Tasting notes: Notes of butter, butter cookie and nice baking spices on the nose almost like a cognac, with undertones of vanilla and and caramel. In the mouth, the flavor is light and delicate with orange caramel, and cocoa with a hint of toast. Interesting structure. A little bit of heat followed by a slightly sour long finish. A very nice length brought about by the Cabernet Sauvignon.

France has an impressive wealth of terroirs expressed through a multitude of grape varieties. For more than a century, René-Philippe Duboscq’s family has been established on Médoc land as wine growers and horse breeders. René-Philippe continues this family tradition today at Château Laujac not only as a wine grower and horse breeder, but as a whisky maker as well. Through his passion for whisky-making, René-Philippe Duboscq pays tribute to his father’s horse, Nelcius, which won the Prix du Jockey Club in 1966. René-Philippe Duboscq seeks to express the wealth of taste and flavors from the French terroir through his whiskies.

o Premium is exclusively a French product - grown, malted, and distilled in France. Château Laujac whiskies are distilled in small Carle-style stills, and then undergo a double distillation to ensure intense aromas and delicate flavors. The spirit is then matured in the Château’s own wine barrels, first being placed in French oak barrels for 5 years, then moved to barrels that have previously held Château Laujac’s AOC Médoc wines of Cabernet Sauvignon, Petit Verdot and Merlot varieties to mature for one more year. Finally, these whiskies are blended to make the Premium Whisky.

When we say our rums are “crafted,” here’s what we really mean: We focused on doing one thing, really well, and then we focused on it some more. We don’t make anything else, because… well, sometimes one thing is delightful enough to fill up your glass. That’s not exactly a new idea — but it is a good one. 

CRAFTED IN SAN DIEGO

You know how you know when something is “just right”? When you’ve filled a 400-square-foot apartment with jars of sugar and yeast — for 3 years — to find the one with the perfect balance. We don’t do well with shortcuts. We do well with making delicious rum.

QUALITY INGREDIENTS

When it comes to rum, sugar, and yeast are dance partners — and they dance together for quite a while. The right recipe only makes the right rum when you choose the perfect dancers and give them the floor. Our sugar cane syrup is special. It’s hard to make. The process has been the same, following the same tradition for 111 years, and it’s worth the extra trouble. To it, we add heritage yeast. Economical, it is not. But when it gets together with the sugar cane syrup, something magical happens. And that’s how we get a nuanced, flavorful silver rum worth spending an evening with.

HANDMADE COPPER POT STILLS

It’s a whole wondrous world of distillation in there. Where many commercial rums choose an automated, continuous distillation method in a Column Still, Clever Fox comes from handmade copper stills. It’s how we get cleaner, smoother flavors, for an overall tastier rum. We take our cuts by hand, in small batches. What emerges is quality, not quickness — but then, why on Earth would you do something you love quickly?

Vinification
Harvested by hand, the selection of ripening grapes in Freixenet's vineyards reaches across the span of several months. From the end of August for the harvest of the warm weather Macabeu grapes, through the beginning of October for the higher elevation Parellada variety, our winemaker awaits the perfect time to gather each bunch, letting the vines tell him when they are ready. The first fermentation is nurtured in stainless steel tanks at controlled temperatures between 57°- 60°F. Exclusively initiated from our own Freixenet cultures, the first fermentation is introduced into the tanks. After 10 to 12 days, the wine is racked and clarified as the blend is readied for bottling. The secondary fermentation finds the bottles of Cordon Negro cradled in the perfectly chilled caves for up to 18 months.

Palate
Cordon Negro Brut is a crisp, clean and well-balanced 'cava' sparkling wine. The fresh palate of apple, ripe pear and bright citrus flavors combine with a long finish and an exciting touch of ginger.

Jeffersons Ocean Aged at Sea Voyage #24 Bourbon Whiskey

THE VOYAGE

A boat is a singularly uncommon place to age bourbon, but inspiration struck Trey on the deck of his friend Chris Fischer’s research ship. While watching Jefferson’s bourbon rock gently in its bottle, they wondered what would happen to bourbon aged on the bow of a ship. The rest, as they say, is history. The constant movement of the ocean and extreme temperature fluctuations as the ship traversed the globe completely transformed the whiskey. The result is a hyper-aged, darker, richer and caramelized bourbon with incredible depth and complexity.

CAPTAIN’S LOG

The driving force behind OCEAN Voyage 24 was to introduce a New Experiment to the Jefferson’s OCEAN franchise. On all other voyages, the bourbon traveled across the equator several times, experienced hot and cold weather in the North Atlantic and South Pacific and seas that ranged from calm to violent. The OCEAN Voyage 24 Experiment would test the effect of high heat, all the time. OCEAN Voyage 24 spent all of its time at sea in the Caribbean where the air temperatures were always hot. The containers on board served as “Heat Ovens” as the bourbon visited exotic ports of call throughout the Caribbean and Central America. Throughout the voyage, the humidity was tropical and the average temperature inside the containers was 93.82° F, reaching a maximum of 124.52° F.

Storm activity in the Caribbean started earlier than normal, went dormant for a while then came back strong with eight named tropical depressions thus far. Storm Elsa crossed our path but all other activity passed to the north or west of the course. The waters surrounding Voyage 24 were for the most part quiet but, the sea is never still. The constant motion of the water, tropical humidity and high heat encountered during the Voyage 24 experiment has resulted in a bourbon that is both unique and exotic. Caramelization and enhanced tones of vanilla extracted from the wood give it a sweet taste, mellow pallet and laid back finish. We are thrilled with how the OCEAN Voyage 24 experiment turned out and hope you enjoy it as much as we do. Pour a glass and enjoy OCEAN Caribbean style.

Born on September 5, 1850, Jasper Newton "Jack" Daniel was the youngest of ten children. His parents were of Scottish and Irish descent. In 1864 Jack learned the art of whiskey making from the preacher and an enslaved man named Nathan "Nearest" Green. Nearest eventually became Jack Daniel Distillery's head distiller. Daniel's distillery founded in Lynchburg, Tennessee in 1866 was the first registered distillery in the country (at the time, distilleries were required to register with the federal government, and the Jack Daniel Distillery was given Registered Distillery Number 1). Today, Jack Daniel Distillery is one of the most distinguished and recognizable names in the spirits industry. Among all their offerings Jack Daniel's Black Label stands out as the instantly recognizable, iconic classic and the brand's flagship. It accounts for 96% of Jack Daniel's sales, making it the best selling whiskey in the world. While the true meaning behind the "Old No. 7" on the label was lost with Daniel's death, it is known that it won 7 gold medals in a very different time. It received its very first at the 1904 World's Fair in St Louis, Missouri, where the spirit reigned supreme over 24 others from across the globe a sign of things to come. The most important step in its creation is still the charcoal mellowing, or as they like to call it "The Extra Blessing". Before going into barrels, the clear, 140-proof distillate is filtered through handcrafted charcoal drop by drop, a process that takes from 3 to 5 days and is the reason behind the Black Label's signature smoothness.

A Young Italian Embarks on an Adventure

This story began 1875 when Alfredo Francisco Pellas Canessa, a young adventurer from Genoa, Italy, risked everything by leaving behind his family and the comforts of the old continent to travel to the exotic country of Nicaragua.

A Steamboat Route to Unite the Oceans

Initially, he invested in a shorter and safer steam boat route through Nicaragua to transport passengers and goods from the East Coast of the US to the West Coast during the height of the California Gold Rush. The route was a huge success, but when news broke about the construction of the Panama Canal and the U.S. coast-to-coast railroad, Alfredo Francisco knew it was time to set out on a new adventure.

The Flor de Caña Story begins in 1890

In 1890, he found the perfect setting for the Flor de Caña distillery at the base of the San Cristóbal volcano, the tallest and most active volcano in Nicaragua. The fertility of its surrounding lands, the enriched water and the hot volcanic climate proved to be instrumental in forging the rum’s unique and smooth flavor.

Through its 130-year history, the brand, the company and the family have lived through a plane crash, a civil war, nationalizations, hyperinflation, fires, hurricanes, earthquakes and volcanic eruptions.
