Espanita Anejo is aged for 18 months in small American oak casks previously used in Bourbon production. The result is the luxuriously smooth liquor rich in vanilla and caramel notes, which still retains its charming, honeyed flavors of slowly roasted Agave.

Espanita Anejo is designed to be sipped and savored. We recommend to use either a Glencairn whiskey glass or a stemmed brandy glass. Narrowed, tulip- shaped brim of the snifter allows you to immerse yourself in tequila’s delectable aromas in order to better appreciate the complex character of Espanita Anejo.

COLOR: Pale amber color, superb purity.

AROMA: Succulent, wafting bouquet with whiffs of aromatic honey oak that gives way to a rich nuanced roasted agave aroma with traces of citrus tree wood, almond nougat and caraway.

FLAVOR: Luscious and velvety entry. A slightly chewy, fruity, sweet medium-to-full body redolent of thick honey and fresh grass, vanilla, toasted marshmallow with notes of sassafras and apple.

FINISH: Smooth and long finish with rich flavors of honey, black tea, coconut flesh, banana and candy corn with apple and peppermint accents.

COCKTAILS: Excellent in Tequila Old Fashioned, Tequila Manhattan, Tequila Sour and Tequila Sidecar.

TEQUILA BLANCO - JALISCO - Tequila Blanco is a unique recipe where under-cooking the agave and extensive oxygenation takes place in a secret engineered process in order to find the perfect balance of smoothness and crisp notes of fruit. Puntagave Artisanal is bottled at a 82 proof and it took 52 different tweaks by Maestro Tequilero Gillermo Barroso to yield this unique profile for the most demanding palates.

Tasting Notes: Utterly clean and clear, with exquisite green fruit aromas , the first impression of this fresh balanced agave tequila is crisp and clean, green apple, fruit with zesty citrus that dominates the foreground. A surprisingly long finish that’s decidedly clean. The distinctive fresh agave taste deliciously lingers on, flecked with hints of white pepper.

Gerardo Ruelas, the fourth generation of his family as sotol producers, presents our Vivorá label, which embodies our interpretation of a long-standing tradition passed down through generations as a medicinal remedy. This unique concoction combines avocado infused with micro-doses of viper venom and is aged alongside cooked sotol pineapples.

Tasting Notes

Appearance: The Vivorá label exhibits a pale gold color with clean and bright characteristics, accompanied by greenish reflections.

Aroma: It boasts a pronounced aromatic intensity with prominent notes of green tea, lemon grass, prickly pear, and papalo quelite, complemented by a subtle smokiness.

Palate: On the palate, it presents a refined and elegant entry, offering a silky texture and a well-integrated alcohol presence. A slight spicy sensation lingers on the tip of the tongue.

Pairing: This sotol pairs excellently with dishes such as meatballs in tomato broth, maguey worms tacos, and is best enjoyed alongside fresh guacamole and quelite papalo leaves. Additionally, roasted chapulines with lime make for a delightful accompaniment.

INSPIRED BY THE OLD-WORLD TECHNIQUES OF SCOTTISH AND IRISH WHISK(E)Y DISTILLERS WHERE MUCH OF THE MAGIC LIES WITH THE ART OF BLENDING. 
We borrowed and twisted many of these techniques to produce Doc’s Alter Ego Bourbon. Our goal was to take good whiskies, blend them together and see how we could enhance these blends as well as maintain the flavor of the whiskey itself. After years of finishing whiskies in a variety of casks, we believe we have struck success using Olorosso Sherry, Pedro Ximenez Sherry, and Cognac casks from a number of curated producers. 

Whether accentuating or layering in characteristics, we believe these techniques enhance the spirit and still focuses on the bourbon. These casks allow the delicate characteristics of past occupants to mingle and marry with the smooth yet bold aspects of Doc’s Straight Bourbons. Each release is then meticulously blended and married in ex-Cognac Foeders prior to bottling. Our finishing and blending techniques impart a dry nuttiness, subtle sweetness, and an extended finish to an already great whiskey, while still allowing the bourbon to shine.

The violet (Viola odorata) is a species of flowering plant with purple or white flowers, native to Europe, Asia and North Africa, which belongs to the Violaceae family. It is known for its medicinal properties and many benefits, including expectorant and anti-inflammatory. In the language of flowers, the violet symbolizes shy and secret love. The violet is often used in confectionery, and sometimes in pastry, for syrups, liqueurs and in perfumery. Created in the 19th century, crème de violette peaked at the end of the century. Today, popular cocktails made with crème de violette include Aviation and Blue Moon.

A fresh, modern approach to the spirit of Sweden. Characteristically earthy caraway, woodsy rosemary, and sun-soaked lemon peel are highlighted with lighter-handed touches of fennel and Seville orange, resulting in a clean-tasting, versatile spirit. Try Åhus  Akvavit instead of gin in a Negroni for a Swedish twist on an old favorite. Vodka your thing? Swap it out into a Moscow Mule, adding new levels of flavor to the easy refresher.

Central to the flavor profiles created at El Pandillo is the source of water used and in the case of Terralta, it all comes from a deep well, 150 meters down in the earth. What does this mean for flavor? To answer this question, we will first have to talk about the two other water sources at the distillery for contrast.

First, there is the harvested rain water, and secondly, a fresh spring. These two sources are used in a close to 50/50 ratio for 3 of the 4 other brands made at El Pandillo - Pasote, G4, and ArteNOM. The flavors here are clean and crisp, as one would expect from rain water, backed by floral and herbal notes. Volans, the 4th brand produced at 1579 is a blend of spring and well water, and it’s here where the minerality of the earth encasing the deep well begins to come through. But in Terralta, as it’s only source for water, the soil and earth are king.

Where the other profiles are lofty and light, you’ll find Terralta firmly secured in the ground from which the agave grow. The soils of Los Altos are rich in iron, giving them a red coloring, and softness compared to the rockier soils of the Valley of Tequila.

Tequila Gran Dovejo is a small-batch, traditionally crafted, tequila made from 100%  of the finest, estate grown blue agaves that are exclusively grown and produced in the highlands of Jalisco by the Feliciano Vivanco Family. The acidic, iron rich soil in this region known as the golden triangle of the highlands, is ideal for growing large agaves with high sugar content. At peak maturity the agave is harvested, the heart of the agave (pina) is hand selected, then slowly cooked in traditional brick ovens for a minimum of 36 hours at a temperature of 194 degrees Fahrenheit. Once roasted, they are milled in order to extract the sweet juices. The juices are isolated and then fermented with the use of “Prise de Mousse”, champagne yeast, and wild yeast strands pulled from the estate agaves themselves.

Anejo: Aged an average of 2 years in used bourbon barrels, bottled at 80 Proof.

DISTILLER'S NOTES:
Germain-Robin is met with a nose of oak spice and fruit. The fruit forward notes of apple and pear are lightly accented with honeysuckle and cherry blossom, giving way to a rich apricot and peach flavor. Well integrated toasted oak gives light accents of cinnamon and brown sugar. The rich full mouthfeel lingers after finish in this balanced blend.
