WHISKY MAKER'S NOTES

Color: Natural, light and golden.

Nose: Complex yet balanced. Buttery pastries and brioche develop into aromas of toasted malts and sweet baking spices.

Palate: Structured with a full body. Brioche quickly transitions into grassy notes. A slight woodiness balanced perfectly with vanilla and nutmeg. Refined and well-rounded.

Finish: Sophisticated and subtle. The soft spices and nutty malts balance beautifully leading to slightly sweet notes from the extra old cognac casks.

Created by the marriage of meticulously selected casks, both Bourbon and Port, this single malt Irish whiskey is a small piece of history, unique and rare. Batch No. 3 is a limited release of 13,000 bottles at 46.5%. It is a marriage of Bourbon and Port casks. A burst of blue/black fruits on the nose forms a tart almost jam like sweetness on the palate with some subtle notes of citrus peels, the liquid coats the mouth like warm honey, mixed berries and marmalade linger on the tongue.

In the early 1800’s, New York produced more than half the young nation’s Barley and Rye and the Hudson Valley was the country’s breadbasket. With abundant high quality grain, local craft spirits flourished and over 1000 farm distilleries produced Whiskey and Gin reflecting the unique terroir of the region. In the 1930’s, Prohibition forced these distilleries to shut their doors and this wellspring of American spirits was left dry.

Hillrock Estate Distillery is changing this. Situated on the north coast of Islay, facing the island of Jura less than 1/2 mile away on the other side of the Sound of Islay, Port Askaig is a small town. Port Askaig whiskies are Islay single malts, named after the idyllic town. Created by London-based Specialty Drinks, the company began selecting casks from some of the largest and most reputable single malt distilleries on the island and producing a series of independent single malt bottlings. Port Askaig is a compelling range of Islay single malt Whiskies that encapsulate the unique character of Islay and its people. With a signature robust smokiness and soft fruit, this Port Askaig range was created to entice even to the most zealous and discerning of Whisky connoisseurs while also appealing to the novice Whisky drinker. Port Askaig 110 Proof is aged in American oak barrels and bottled at 55% ABV. Since 1989, the Federation of Quebec Maple Syrup Producers has regulated the supply of Canadian maple syrup in order to ensure that prices remain stable. Maple trees need optimal climate conditions cold nights and temperate days in order to produce sap, which in turn, is used to produce maple syrup. In order to keep prices stable, the FQMSP purchases and warehouses maple syrup in years where trees produce abundant sap, and sells maple syrup in years where production is lacking. It may seem bizarre, but Quebec produces 77% of the world's maple syrup. Tap Port Finished Canadian Rye Whisky is matured for up to eight years in a combination of traditional North American oak casks and casks that were previously used to mature port wine. Once the whisky has matured, it is finished with an aliquot of port wine. "Because Canadian distillers are dealing with a severe shortage of aged rye whisky, Tap Rye Port Finished has been made in a finite, limited quantity," says Michel Marcil. "There will not be another bottling once this small batch is sold out." Tap Rye Port Finished Canadian Rye Whisky has an aroma of red fruits, berries and plums. The aroma gives way to notes of honey, milk chocolate, dates, figs and nougat that are balanced against a spicy backbone. For over four generations Gonzlez family has been perfecting the tequila-making craft. To this day, they incorporate age-old processes and values handed down for generations. El Mayor represents a legacy of Tequila. Rodolfo Gonzlez is a very hands-on Master Distiller. Passionately overseeing the entire process from field to bottle, and ensuring every drop that leaves his distillery is nothing short of perfection. Rodolfo's son Paul and daughter Graciela represent the fourth generation of Gonzlez distillers and continuation of the family legacy. El Mayor tequilas are handcrafted in the fertile, rocky soils of Jalisco Mexico using Weber Blue Agave. Once harvested their hand-selected agave is chopped stacked and cooked in autoclaves, before the cooked agave is shredded and gently pressed to extract the full agave flavor. After being fermented with a proprietary, family-owned yeast strain, the agave juice is double distilled in copper lined pots. El Mayor Extra Aejo Tequila is the epitome of aging gracefully. A 100% agave tequila is meticulously aged in American white oak barrels for a minimum of three and a half years. This stunning Aejo earned Platinum at the 2017 SIP Awards and Master in the 2017 Tequila Masters Super Premium Category.

AS PROOF OF MY IMPECCABLE TASTE, my Old Tom Gin is imported from a two-centuries-old London distiller. And, in keeping with my reputation for creating distinctive cocktails with exotic fruit, my gin is delicately infused with the peel of a curious Chinese citrus called “Sweet Lime.”

So, making my SIGNATURE COCKTAIL could not BE SIMPLER.  All you need is a dash of sugar and a squeeze of lime.

The innovative finishing process they use for their whiskeys involves putting a spiral of wood in their bottles of bourbon and rye. The tight five-inch spirals are crafted from American white oak, allowing a maximum surface area for the whiskey to interact with the wood. Currently, the company offers four different products: A straight bourbon, a rye whiskey, a wheated bourbon, and a bourbon finished with red wine-steeped oak. All aged two years, these high-rye mash whiskeys are masterfully distilled and aged in charred new American oak barrels, delivering a distinctive whiskey full of spice and fruit. A 5 long spiral cut piece of French Oak is rested in cabernet sauvignon before resting in this bottle of bourbon. The combination of American bourbon whiskey, finished with a French red wine seasoned Oak spire delivers an incredibly distinctive sweet, and fruity flavor profile. To create this expression Oak & Eden partnered with Marker Cellars winery to infuse their cabernet sauvignon into this award-winning bourbon: a remarkably smooth combination of corn, rye and barley.

Situated along the banks of the East River in the Brooklyn Navy Yard, Kings County Distillery is New York City's oldest operating whiskey distillery and the first distillery in New York City since Prohibition. There, the distillery's founders Colin Spoelman and David Haskell hand-craft moonshine and chocolate whiskey. A typewriter that Spoelman and Haskell found on a sidewalk in Williamsburg is used to make the labels that adorn their clear, flask-shaped bottles, while a hairdryer (made by Revlon) is used to afix each bottle seal. Handwritten scrawls on a chalkboard keep track of different batches, and mesh laundry bags are used as strainers. Kings County Chocolate Whiskey is made by steeping Kings County Moonshine in artisan cacao husks sourced from the Mast Brothers Chocolate Factory in Brooklyn. The chocolate and moonshine rest together for just over a month, giving the moonshine a deep mahogany color and an aroma of dark chocolate. "It's good for someone who either likes whiskey or chocolate which includes most people, I guess," says Spoelman. "There's not a whole lot else like it out there." The initial flavors of sweet corn are nicely balanced by the subtle notes of rich, bitter chocolate and give way to a smooth and slightly sweet finish. "We make enough to supply some of Brooklyn, some of Manhattan and that's about it," Spoelman says. After visiting their distillery, we bamboozled them into sharing some of their juice with the rest of the country. 

Born in 1952, Old Bardstown was an American Thoroughbred racehorse named after the city of Bardstown, Kentucky. Bred and raced by Calumet Farms, the horse twice won Florida's Tropical Handicap at the Tropical Park Race Track as well as the Widener Handicap at the Hialeah Park Race Track. In 31 career starts, Bardstown had 18 first place finishes, 7 second place finishes and 1 third place finish. By the time he retired at the age of 8, Old Bardstown was one of the top racing horses of his time. Old Bardstown Estate Bottled Kentucky Straight Bourbon Whiskey pays homage to the legacy of the American Thoroughbred. The bourbon is made from a mash of primarily corn, which is milled and mashed before being fermented with Kentucky limestone water. Following fermentation, the wash is distilled before the bourbon is matured for ten years in new, American oak casks. Then, the bourbon is brought to 101 proof before being bottled. Old Bardstown Estate Bottled Kentucky Straight Bourbon Whiskey has an auburn-red color, along with an intense aroma of sherry, mint, eucalyptus and copper, somewhat reminiscent of single malt scotch. Notes of nutmeg, caramel, tobacco and chewy leather dominate the palate, and are complemented by hints of malted barley, cherry, and earthy minerals. The finish is medium-long, with touches of fresh herbs, oak and spice. The bourbon earned a score of 95 points from Jim Murray's Whisky Bible, and the Silver Medal at the San Francisco World Spirits Competition in 2012.

From time to time, our Master Distiller hand selects a few exceptional barrels from our 10 Bourbon recipes for these special releases. Each is non-chill filtered and barrel strength, so you get to savor them exactly as they come out of the barrel. Some of the best Bourbons we’ve ever put in a bottle, our Limited Edition bottlings are just that – limited. So, be sure to ask your favorite bar or liquor store when they are released. Find them.
