Maker Notes

This elegant and complex whisky was initially created from more than fifty different Scotch whiskies, as a superb example of the blender’s art. Initially blended as an ultra-premium 30 year old for the burgeoning market in the Far East, once the initial bottling had been completed, a precious remnant was transferred into seven Spanish Hogshead casks that had previously held Oloroso sherry, and returned to a traditional warehouse in the Lowlands of Scotland. There it began its second maturation, which lasted a further 20 years until we bottled it in late 2015.

Over the course of this slow process of ageing, the whisky developed extraordinary richness and depth of flavour, taking on character traits from both woods – stone-fruit and honey from the Bourbon wood, and a rich, spicy quality from the Sherry wood – for an effect we call ‘double matured.’ It is an exceptional 50 year old whisky, complex, multi-layered and truly delicious.

MARTIN EBER’S (TIME FOR WHISKY) TASTING NOTES

Spice. Passionfruit and pineapple. Coke bottle lollies again. The oak is still in perfect balance, and the whisky feels like it could have many years still to go. A few drops of water amps up the sherry (adding mocha/milk chocolate notes, and some leather), and tones down the fruitier notes. There’s the tiniest hint of smoke too. The finish is long, with milk chocolate, coffee and leather.

Rating: 95/100. Just incredible. I love a well-aged ex-Bourbon whisky, for the big tropical fruit notes, and I love a well-aged, heavily sherried whisky for the “Christmas cake” notes. This has both. In spades. A stunning achievement and yet still such a vibrant whisky. It’s only February but I suspect this will be one of the highlight tastings of the year for us.

The Balvenie 14 Year Old Peat Week Single Malt Scotch Whisky 2002

The Balvenie Distillery is just up the road from Glenfiddich on the north side of Dufftown smack dab in the middle of Speyside. Dufftown is also the home town of the Mortlach Distillery. And a young William Grant worked there at Mortlach for more than twenty years learning the distilling business. When he was ready to start out on his own, he bought the empty field and laid the foundation stone for The Balvenie in 1886. Still owned by William Grand & Sons, The Balvenie has long been a favorite of Speyside Whisky lovers. It's famous for producing Single Malts in the classic styles of the region light, fruit-forward, sweet, and clean without a trace of peat smoke. Balvenie took it a bit further, being one of the first to innovate with various double and triple-wood combinations to add complexity. All that adds to a large range of Single Malt agings and wood combinations to entertain the taste buds of fans all over the world. Balvenie Peat Week 2002 is the first vintage of a really interesting idea. It started as the brainchild of David Stewart Balvenie's malt master and whisky specialist Ian Miller. For one week each year they would distill peated Single Malt and thus turn the entire distillery on its head. Everything else stays the same, and the spirits is then aged in ex-Bourbon casks for a full fourteen years and bottled at 48.3% ABV. You can still taste the signature Balvenie Single Malt style notes of tropical fruits, honey, peaches, and vanilla. But now it also has a warm, earthy smoke flavor and aroma. It's Balvenie as youve never had it before, and still very different from the famous Islay peated spirits on the other side of Scotland. It's should be on the "must have" list of every Speyside and Balvenie fan.

Founded by Daniel Barnes, Treaty Oak whiskeys are a fusion of scientific method and innovation.Their modern approach to traditional distilling and aging processes coupled with meticulously selected local ingredients yield a high-quality spirit using custom-made stills. Treaty Oak whiskeys are made using pure Hill Country limestone spring water.They source organic, heirloom corn varietals from Panhandle farmers and mill them at James Brown's bespoke Barton Springs Mill. Treaty Oak Distillery is named after the famous 500-year old tree in Austin, under which Stephen F. Austin signed agreements defining the borders of Texas.Their ginsare called Waterloo, after the original name of Austin. They moved to Dripping Springs, a place with a rich history of gatherings and shared perspectives. All of their Char 3 barrels are sourced from Kelvin Cooperage in Louisville, Kentucky. One of the defining points of their process is that they toast the barrel before they char creating a better caramelization of the oak. Central Texas has a very different climate than Kentucky and other areas producing bourbon. The wide swings of temperature and humidity allow for a maturation that is specific to the weather of the hill country.Their non climate controlled rickhouse was designed to showcase the dynamic climate. Named after their 28-acre ranch home in Dripping Springs, Texas, Ghost Hill Bourbon is a unique whiskey made with local heirloom grains from Barton Springs Mill. A genuine grain to glass bourbon, it is mashed, fermented, distilled, barreled, aged 2 years and bottled on-site at our Treaty Oak Distillery. Ghost Hill is a Bourbon born of years of purposeful experimentation.

The Glenlivet Spectra 3 X 200ML

During the early 19th century, illegal distilleries were commonplace throughout the Speyside region of Scotland. In 1823, however, Alexander Gordon pushed the Excise Act of 1823 through Parliament. The Excise Act allowed illegal distillers throughout Scotland to apply for and obtain licenses to legally distill spirits. In 1824, a businessman named George Smith applied for one of the first licenses in the Speyside region of Scotland and opened the doors to The Glenlivet Distillery. For nearly two centuries, The Glenlivet Distillery has been producing the "single malt whisky that started it all." The Glenlivet Single Malt Scotch Whisky is made using barley sourced from Crisp Maltings, Portgordon (Portgordon is a village in Moray, Scotland). After the barley has been malted and mashed, it is fermented in wooden washbacks for approximately two days. The wooden washbacks used by The Glenlivet are more difficult and expensive to maintain as compared to the stainless steel washbacks used by most Scottish distilleries, but impart a distinctive, floral quality to the whisky. After the barley has been fermented, it is distilled twice first through Glenlivet's wash still, and then again through Glenlivet's spirits still. Originally designed by George Smith, the copper-pot stills have a unique, lantern-like shape, which encourages contact between the whisky and the copper (the copper strips the whisky of any impurities it may have, and provides for a lighter and more pure flavor profile). In addition, the height of the stills ensures only the lightest vapors are condensed, and makes for a more delicate and elegant whisky. Recently, folks at The Glenlivet have been experimenting with mysterious releases without tasting notes and cask information. Spectra is one such limited-edition box set that contains a selection of 3 distinct 200ml single malt bottles. The first hints at a fruity expression, the second promises a smoky and briny experience, and the last holds a creamy sweetness. Each expression showcases The Glenlivet's signature style and presents a tasting challenge in the form of a digital experience a journey that starts by scanning the provided QR code. After completing the guided digital tour and receiving a grade based on your performance, you get to compare your findings with the thoughts of Master Blender and Distiller Alan Winchester.
