Maker notes

Our rotating barrel-rested gin. For our current batch, we rested our London Dry Gin in single malt whiskey barrels for 60 days.

TASTING NOTES: London Dry Gin, aged for a little over two months in used domestic Single Malt Whiskey barrels. Your perfect nightcap.

Ingredients: Grapes, Juniper, Pink Peppercorn, Cloves, Orris Root, Spruce Tips, and Blood Orange.

Cuvèe Homére Rhum Vieux is distilled from sugarcane juice as is typical in Martinique and proudly wears the “AOC Martinique” designation signifying an exemplary degree of expertise in every stage of production.

TASTING NOTES

Color: Mahogany

Maturation: An expert blend of the best ex-Bourbon barrels from 7-15 years old as chosen by cellar master Robert Peronet.

Nose: Warm biscuits and almond butter evolve into baking spice.

Palate: Very soft and balanced. Overwhelming notes of woody vanilla and toasted coconut.

Maker Notes

Like Sloe gin, our Damson is handmade in the traditional way; in small batches, using hand-picked British damsons and a moderate amount of sugar. We slowly mature an abundance of damsons in our London Dry. The fruits combine with the smoothness of the gin to give an intense fruity dryness.

Fantastically Fruity, our Damson gin is definitely something special. Masses of luscious, hand-picked British damsons are left to steep for six months or more in our strikingly smooth London Dry. We add sugar, but not too much, just enough to balance the natural tartness of the fruit.

Slowly matured, the resulting rich, ruby-red gin is velvety and smooth with an intense depth of flavour and fruity dryness; unlike many fruit gins, it delivers quite a kick – bottled with an alcohol content of 40%.

TASTING NOTES: Aromas of damsons and marzipan waft out of the glass. Deliciously fruity plum and date flavours are followed up with a flash of citrus and spice, then subtle tannins on the finish to refresh and balance out the sweetness.

For Mixing: Plenty of ice and a healthy splash of tonic water pulls back the gin’s sweetness a notch, adding a balancing quinine bitterness but keeping the gin’s distinctive plummy damson flavours.

St. George Spiced Pear Liqueur balances decadence with restraint, achieving incredible depth of flavor with just a few impeccable ingredients of Bartlett pears, cinnamon, clove, organic cane sugar, and malic acid—but its flavor is anything but basic.

The Experience
Our Spiced Pear Liqueur shows crisp pear perfume on the nose with pear butter and warm spice on the palate. Its rich mouthfeel yields to a long, lush finish. Sip it alongside a cheese plate or pair it with rich meats like pork or duck. For a decadent treat, try it drizzled over ice cream.

Caramel Apple Pie

Ingredients: 2 oz. Carolans Salted Caramel, 1 oz. Apple Vodka

Instructions: Rim chilled glass with cinnamon and sugar mix. Add Carolans and apple vodka in a shaker with ice, strain into glass. Garnish with an apple slice.

Tasting Notes
Deep, dark red in color with lush flavors of cherries, blackcurrants, blackberries, cedar, and a bit of black tar. It shows a tremendous concentration of flavors and a smooth, almost silky texture framed by a firm tannic structure that truly stands out at the beginning of the long finish.

Aging: 16 months in French oak barrels

World’s Best Single Malt Whisky.
To create this whisky, we traveled all the way to Spain, and had Oloroso and Pedro Ximenez sherry made especially for us. The casks, once filled with quality sherry and seasoned for one year in Spain, were brought to the distillery to mature our New-Make spirit for a wonderful complex whisky. The M&H Elements Sherry is the first and only kosher single malt whisky in the world, aged in Sherry casks. This single malt reveals robust flavors of red fruit, dark chocolate, and oaky notes.

TASTING NOTES

AROMA: Dominant rich red fruit notes, covered by gentle oak, caramel scent and lemon freshness.

PALATE: Medium bodied. Light fruity sherry sweetness, rich fruits and dark chocolate, followed by gentle oaky notes.

FINISH: Long. The dark chocolate notes linger in the palate for a while, followed by tobacco and oak notes.

BACKGROUND

Boulard Calvados is the first name in super-premium Calvados, the celebrated apple-based spirit unique to the Normandy region of France. Boulard was founded in the late 1820's by Pierre-August Boulard.

Boulard's time-honored reputation begins in the firm's 150 acres of orchards and 35,000 apple trees in the Pays d'Auge district, the officially designated source of the finest apples in Normandy. Over 120 varieties of apple, from 800 varieties grown in Boulard's orchards, are selected for production of Boulard Calvados (over twice the number of varieties stipulated by the governing body regulating Calvados production).

Calvados Boulard VSOP is the culmination of blending different Calvados Pays d'Auge from 4 to 10 years old.

NOSE: Rich, fruity notes with light wood and toasted nut aromas.

Our tequila is meticulously fashioned using age-old techniques, such as utilizing stone ovens for agave roasting and pot stills for a meticulous double distillation process. The entire collection embodies an exquisitely balanced spirit with a velvety agave essence that permeates every sip.

Southern Alps of New Zealand

New Zealand water is unique because our geography is unique.

The rain that hits New Zealand is the same as the rain that hit New Zealand a thousand years ago. None of it comes through clouds passing over land masses belching out car fumes and agricultural enhancers. The first thing it hits is a huge, jagged mountain range that runs the length of the South Island. This mountain range then holds this water for 80 years. That’s how long it takes to travel through the layers of sediment until it’s finally released in to the depths of one of the world’s last natural aquifers. Think about that. The water in this gin has actually been filtering through rock since before your grandfather was the age you are now.

The reason that Scapegrace tastes clean is because it is.

The Bottle

The bottle is deliberate. It’s a modern take on the original Genever bottles from 200 years ago.

If gin-makers from then were making gin today we know they would make it like we do, because we make it like they did.

4 Grain & Maple is the intersection between four grain bourbon and maple syrup. We begin the process with a four grain bourbon made from 55% corn, 18% rye, 22% wheat, 5% malted barley, then aged in charred American White Oak barrels. After aging, we add a twist – an American Oak spire, seasoned, toasted, and infused with maple syrup, imparting sweet, rich flavors, and notes of maple syrup, butterscotch and cinnamon.

We distill and age all of our whiskeys true to tradition and at a minimum of three years.

True Blue 100 is made from the same select barrels of our blue corn whisky that have always gone into our True Blue Cask Strength, diluted down to 100 proof. As such, many Bourbon drinkers, in particular, may gravitate to this powerfully subtle dram.  Since the Bottled-in-Bond Act of 1897, ‘100 proof’ has long stood for quality and authenticity. True Blue 100 carries on that tradition. 100% of the whisky in this bottle was born, raised, and bottled at Balcones–from mash to glass. More approachable than full cask-strength whisky, True Blue 100 retains the depth and complexity of over-proof spirits with the softer edges, supple textures and fuller fruitiness that slight dilution can bring.
