In the early 1800’s, New York produced more than half the young nation’s Barley and Rye and the Hudson Valley was the country’s breadbasket. With abundant high quality grain, local craft spirits flourished and over 1000 farm distilleries produced Whiskey and Gin reflecting the unique terroir of the region. In the 1930’s, Prohibition forced these distilleries to shut their doors and this wellspring of American spirits was left dry.

Hillrock Estate Distillery is changing this. Our mission is to produce the finest hand-crafted spirits made with our own grain, floor malted, craft distilled in our copper pot still, aged in fine oak and hand bottled at our estate in the Hudson Valley Highlands. Crowned by a fine 1806 Georgian house built by a successful grain merchant and Revolutionary War Captain and meticulously restored to its original beauty, Hillrock Distillery overlooks our rolling barley fields and the distant Berkshire Mountains. Like our premier spirits, every detail refined, no expense spared, quality steeped in the tradition of 200 years of rich history.

Hillrock is proud to be one of the few “field-to-glass” whiskey producers in the world and the first USA distillery since before Prohibition to floor malt and hand craft whiskey on site from estate grown grain. Azulejos Classic Collection, with its hand-blown glass bottles have been part of Azulejos since the beginning. Cobalt-Blue hand-blown glass is one of the most difficult, intricate, and beautiful of glass colors to achieve. The minor bubbles and imperfections in the glass give it character and show its authenticity. This glass is made from recycled glass therefore environmentally sustainable.

The label is made of ceramic and is an Azulejo tile. This beautiful combination of glass and ceramic make the bottles completely unique and disruptive in the business. In comparison to major competitive brands in boring, traditional glass bottles, Azulejos Classic Collection overdelivers in value and quality. This product has stood the test of time as one of the 1st decanter bottles in the tequila industry 30 years ago.

Blanco
An authentic 100% Blue Weber Agave tequila made in the Traditional Method. Produced with fully mature 7-10 year agave from 50% Highlands and 50% Lowlands of Jalisco, slow-roasted in brick ovens, slow-fermented, never diffused, roller press extraction, double distilled, and additive free.

Tasting Notes

Aroma: Its opening bouquet is snappy, fresh, ashy and a touch smoky; pleasant agave notes emerge upon air contact. I nice bouquet of flowery aromas such as jasmine and rose which turn into rosemary, thyme and a hint of mint.

Palate: On the palate, the taste is fresh, pleasing, appropriately zesty, peppery and vegetal, with a hint of sugary sweetness at mid-palate. You have some solid minerality with some peppery yet subtle floral notes.

Finish: The aftertaste is long, pleasant, laced with honey & pepper. Crisp and notably refreshing

This is the most special production is made with the most ancient, painstaking methods common to early distillers, and is more akin to traditional mezcal than present-day tequila.

100% Agave Tequilana Weber Azul

Also called “Blue Agave.” Known for high sugar content, relatively fast maturity, easy cloning, and beautiful blueish spikes. Due to restrictive legislation, this is the only agave allowed in tequila production.

The Innkeeper’s Blend is the second small batch blend in the brand’s Icon Series.
