The story of this San Francisco gin begins in New York in 1870, when William Scheffler purchased a patent for rights to a new design of a pot still. He journeyed westward and in 1882, registered a distillery in St. Helena, California and was given distillery license number 209 by the federal government. The restoration of Distillery 209 began in the 20th century and the distillery was ultimately moved from St. Helena to San Francisco. Today, 130 years after Scheffler proudly painted his license number over the doors of his stone and brick distillery, Distillery 209 is situated in the shadow of AT&T Park at Pier 50, and is the only distillery in the world that is built over water. Whether you enjoy drinking gin straight, sipping a proper martini, or want to welcome summer with a sublime gin and tonic, Distillery 209 makes a unique artisanal spirit that is truly outstanding. Born in a 25-foot tall copper alembic pot still, No. 209 Gin is the child of Arne Hillesland, the master distiller at Distillery 209. After apprenticing with a Master Distiller from Scotland, Arne developed both the No. 209 Gin recipe as well as some of the innovative techniques that give No. 209 Gin its unique flavor profile. The gin's secret recipe calls for somewhere between eight and eleven different botanicals the distillery is intentionally vague on the exact number. In addition to juniper berries (the staple of every gin) from Tuscany, the recipe calls for cardamom from Guatemala, cassia bark from Indonesia, coriander seeds from Romania, bergamot orange from Calabria and lemon peel from Spain. The lemon peel and bergamot orange give the gin a citric fragrance and citrusy flavor profile. To say that No. 209 Gin is handcrafted is an understatement. Arne uses only pure snow melt water from the Sierra Nevada mountains and he hand-sorts the cardamom seeds used in the fermentation process by length, choosing only the shorter seeds for a sweeter taste and tossing the long seeds to avoid a bitter aftertaste. In addition, Distillery 209 prides itself on limiting the number of congeners, or hang-over producing substances, used in the production of the gin. After distilling the gin four times over, Arne lets the botanicals macerate overnight in the pot still, gently coaxing out the natural, citrus flavors. The height of the pot still reflects the profile of the gin because the still is so tall, it creates a lighter flavored gin. After maceration, the gin is distilled a fifth time. Then, Arne discards the heads (beginning) and tails (end) of the distillation and bottles the heart (middle) into No. 209 Gin.

Raymond Thomas—grandfather of founders Guillaume and Amaury Thomas—was a true entrepreneur; relentless, brave and undeterred by risks and setbacks. Martingale is a tribute to Raymond’s legacy and his belief in doubling down rather than backing down.  The Thomas family has been making Cognac for over a century, supplying the most prestigious brands with outstanding quality products, and in doing so has built one of the largest vineyards and distilleries throughout the famed appellation. Their products have, until now, been enjoyed anonymously. 

The 2023 release of Martingale Cognac marks a very important milestone for this proud and determined family. The uniqueness of the liquid and packaging are testament to Raymond’s vision and entrepreneurial spirit, which lives on in his grandsons

We work closely with our partner producers and set them up for success.  No haggling.  No exclusivity contracts.  We guide producers through the complicated steps to export in their own names for the first time and cover necessary expenses including local attorneys, accountants, license fees, and more.  We absorb our producers’ marketing and supply chain costs as our own.  We believe in autonomy for producers, be it hiring their own workers or using their own bottling facility. We only step in if they want our help. We connect with our partner producers to share knowledge and help each other in production. Revenue from every Erstwhile bottle sold creates jobs in our partner producers’ and vendors’ local communities in Mexico.  Our producers hire their own team of local men and women, on their own terms. Erstwhile is a woman-owned, women-led business.  Our team is multicultural and multilingual.  We are outspoken about elevating underrepresented voices in Mezcal and our industry.

For our second Single Barrel release, we have hand-selected casks from an extremely limited number of Boxergrail Kentucky Straight Rye Whiskey barrels. Each is a study in patience and creativity. To complement this one-of-a-kind whiskey, the packaging for each season of barrel releases will be unique and feature a different series of six original Limited Edition illustrations commissioned by our Founder, Kaveh Zamanian. The result is a true work of art inside and out that could only be bottled at cask strength.

Six different label designs featuring artwork commissioned by our Founder, Kaveh Zamanian, from renown artist Sue Todd. Each 6-bottle case will contain a bottle with each label design.

Cask Strength

Boxergrail Kentucky Straight Rye Whiskey with a sour mash rye mash bill bottled at full cask strength. Proof will vary by bottle - but will generally fall between 100 and 125.

Kaveh commissioned Sue to create linocut prints of the classic Lewis Carroll characters and the result is six, vibrant illustrations featuring Alice, The White Rabbit, The Hatter, The Queen, The Catepillar and The Footman. Each six-bottle case will contain a bottle with each label design and features special glass and cork sourced exclusively for the Single Barrel program.

New Riff Distilling’s core Rye whiskey is full-bodied, offering hugely spicy character. Building upon America’s 1897 Bottled-in-Bond Act - already the highest quality standard for aged spirits in the world - New Riff Rye is Bottled In Bond Without Chill Filtration. Featuring a unique mashbill of 95% rye and 5% malted rye, it represents a new riff on our hallowed local Rye whiskey traditions. Aged four years in full-size 53-gallon toasted and charred new oak barrels, there are no shortcuts taken in its traditional production. All New Riff whiskeys are made with the full sour mash Kentucky Regimen; all carry an age statement and are always bottled without chill filtration.

Our distillers learned the black arts of the hardest whiskey in the world to make - the famed 95% Rye - under the direct tutelage of the distiller who mastered it in Indiana, Larry Ebersold of Seagram’s. Taking Master Larry’s instruction in hand, we put a riff on it to the tune of adding 5% malted rye, a unique twist that aids in pulling additional flavors out of the rye and adds a touch of the elegance of malted rye. New Riff Rye is splendid with a splash of water, and of course folds magnificently into classic Rye Manhattan and .

TASTING NOTES

Appearance: Extra rich, unfiltered deep amber color.

Nose: Spicy and detailed, showing mint, black pepper, and vanilla with hints of orange and oak.

Taste: Cinnamon spice, vanilla and sweet toffee moving into a bold mouth feel with rich Rye spice, caramel and toasted oak. Complex flavors drink older than four-year-old.

Finish: Bold Rye spice with vanilla buttercream and lingering brown sugar, plus a mineral-grassy Rye tone that fades slowly.
