TASTING NOTES

The sherry casks deliver warm, inviting dried fruit and spice notes, adding richness to a toasted vanilla base; smooth at first with a satisfying warmth on the finish.

On February 12, 1830, Edmund Haynes Taylor Jr. widely considered the father of modern bourbon was born in Columbus, Kentucky. Orphaned as a baby, Taylor was adopted by Edmund Haynes Taylor Sr. and was raised in Louisiana by his great-uncle, Zachary Taylor (who would later become the twelfth President of the United States). After attending the Boyer's French School in New Orleans, Taylor moved back to Kentucky and matriculated from the B. B. Sayer's Academy. Following in the footsteps of his adopted father, Taylor became involved in banking and came to the aid of several Kentucky distilleries that were suffering from Reconstruction. In 1869, Taylor purchased a small distillery situated on the banks of the Kentucky River. Christened the distillery OFC (OFC was an abbreviation for Old Fire Copper) Distillery, Taylor began renovating and modernizing the plant he purchased copper fermentation tanks, new grain grinding equipment and unique, columnar stills. During his tenure, Taylor also implemented several innovative distilling techniques, including aging whiskey in climate-controlled rickhouses. At the time, an overwhelming number of distilleries were still not aging their bourbon. In order to make their spirits palatable, some distillers and retailers added juices and syrups to sweeten their bourbon, while others added acid and tobacco to give their bourbon its signature amber hue. Armed with distilling experience and a political pedigree, Taylor, together with Treasury Secretary John G. Carlisle, was instrumental in passing the Bottled-In-Bond Act of 1897 (27 C.F.R. 5.21). The act required that any spirit labeled as "Bonded" or "Bottled-in-Bond" be the product of one distiller at one distillery during one distillation season. In addition, the Act required that bonded spirits be aged in a federally bonded warehouse under U.S. government supervision for at least four years and bottled at 100 proof. Crafted from hand-selected barrels, this bourbon is bottled uncut, straight from the barrel; unfiltered and unadulterated at over 125 proof. This technique is reminiscent of the way whiskey was produced in the days before Prohibition, when Edmund Haynes Taylor, Jr. was the owner of Buffalo Trace Distillery. Drawn from barrels aged in rickhouses constructed by Taylor over a century ago, the spirit is incredibly smooth. This outstanding bourbon won a Gold medal at the San Francisco World Spirits Competition.

Ardbeg Corryvreckan takes its name from the famous whirlpool that lies to the north of Islay, where only the bravest souls dare to venture. Swirling aromas and torrents of deep, peaty, peppery taste lurk beneath the surface of this beautifully balanced dram. Like the whirlpool itself, Corryvreckan is not for the faint-hearted! Awarded The World’s Best Single Malt in 2010 by the World Whiskies Awards.

Non chill-filtered at 57.1% ABV

Color: Rich Amber. 

Aroma: Heady, intense and powerful. Swirl the glass and dip your nose into the torrents of tarry ropes, creosote and linseed oil rising from deep within the vortex. A collision of waxy dark chocolate, warm blackcurrants and muscovado sugar pulls you under its spell with a burst of plump cherries and earthy pine needles leaping from its depths. From salty seasoning comes a briny character with tangy crisp seaweed and smoky bacon swirling on the surface with hints of sweet vanilla, spicy cloves and blueberries. Surrender to its dangerous depths with the heady force of menthol, treacle and chilli sauce.

Taste: Plunge into the whirlpool and torrents of taste well up on the palate; deep, peppery and chewy, bombarding the tongue. The first plunge brings forth chewy peppered steak soaked in pepper sauce with the tang of crispy seaweed. As you descend deeper, encounter a mouthful of black tarry espresso coffee that coats the palate with rich melted dark fruits (blackcurrants, blueberries and cherries) and bitter almonds. As the taste soaks in deeper, star anise and hickory dry out the palate before a surprise of chalky effervescent violets fizz to the surface.

Finish: Long, deep and remaining powerful into the finish with black tarry coffee, chocolate coated cherries and hot pepper sauce, the lingering memories of your mysterious and daring journey into Corryvreckan.

Inspired by the memories, feelings and flavours of his many visits to Tokyo and a desire to experiment with rare Japanese Mizunara oak casks for the first time, Dr Bill has created a limited edition expression characterised by enchanting opposites.

Dr Bill united Glenmorangie part-aged in Mizunara oak with whisky that had spent time in both sherry and bourbon casks, for a unique limited-edition that’s perfectly balanced with Glenmorangie’s house-style. The Featherbone Factory built by E.K. Warren in the 19th century to manufacture women's corsets sits on the banks of Lake Michigan just across the Indiana border in Three Oaks, Michigan. As the factory changed hands in the twentieth century, it became a production site for everything from buggy whips to pickles. Today, it's home to Journeyman Distillery and Bill Welter, Journeyman's master distiller. Welter, who was formerly a banker in Indiana, began his Journey when his family business was sold in 2006. He moved to Scotland, where he began to learn the art of craft distillation from Greg Ramsay (master distiller at Nant Distillery) and Bill Lark (master distiller at Lark Distillery). After returning to the United States, Welter spent time producing and resting whiskey using a prominent organic & kosher distiller's facility in Chicago before opening the doors of his own distillery in Three Oaks with the intention to offer grain-to-glass spirits from day one/drop one. Featherbone Bourbon is made by distilling a mash of 70 percent organic corn, 25 percent organic wheat and 5 perfect organic rye through a 5000-liter, copper pot still imported from Germany. Welter sources the corn and rye from a farmer in Illinois, and the wheat from a local farmer in Michigan. The grains are produced without the use of synthetic fertilizers, artificial pesticides, herbicides, antibiotics, growth hormones, feed additives, or genetically modified organisms and enable Journeyman Distillery and all of its products to be certified organic by the Midwest Organic Services Association. Following distillation, the bourbon ages to profile in newly charred American oak casks. Using multiple size barrels, each distillation is tailored to the barrel it will age in and bottled once it has reached the desired taste profile. Journeyman Featherbone Bourbon is bold, assertive and youthful, with earthy flavors, nutty notes, spirituous, cereal notes, peanut butter, sweet, caramel, vegetal qualities - warming on the palate.

Distilled from local rice from Gyeonggi province, Sulseam Mir 22 is crafted using just three simple ingredients: rice, nuruk (fermentation starter), and water.
