Papalome Ixcateco Spirits Distilled From Agave Mezcal

Ixcateco represents the local traditions, customs and ancestral techniques that have been preserved for centuries as part of the production of this spirit. Ixcateco seeks to become a medium for the development of social and cultural projects, to promote environmental responsibility for producers and consumers, and to dignify one of the most important economic activities in the village of Santa María Ixcatlán, in the Cañada region of Oaxaca.

Ixcateco is produced and owned by Amando Alvarado Alvarez, who has been distilling agave spirits since the age of fifteen. Mainly utilizing wild Papalomé (agave potatorum), Amando is one of a dwindling number of mezcaleros who maintain the centuries-old, ancestral practices of fermenting in rawhide and distilling in clay. Ixcatec is the native ethnic group of Santa María Ixcatlán, where fewer than 10 people still speak the 1,300+ year
old language known locally as Xwja

Ixcateco mezcalero Amando Alvarado Alvarez typically harvests his maguey in the dry season. This is the time of year when greater yield is achieved because the sugar content of the agave is greater. Papalomé (agave potatorum) is traditionally the only maguey used by in
Ixcatlan to make agave spirit, although there are many other maguey species around including rabo de leon, cimarrón, maguey blanco, and pulquero. These are used for construction, textiles, and pulque. The agave's fructans are transformed into fermentable sugar by slowly cooking the heart of the maguey in an underground oven covered by palm leaves for three nights. The roasted agave is then milled into smaller pieces first with a machete, then by pounding those pieces with large wooden mallets. The milled agave is placed into rawhide vessels with spring water where natural fermentation takes place. Distillation takes place on clay pots made in nearby
Oaxaca City. The spirit is distilled twice over direct fire and adjusted to proof with colas, or tails.

Our single cask, cask strength release is a wonderfully balanced whisky that has been described as “pretty perfect, with a fantastic tightness at the ripe old age of 30” by Serge Valentin of WhiskyFun.com.

A truly Speyside whisky, this release embodies all of the luxurious, sweet rich fruitiness which has made it the number one whisky in France. A slow distillation process, in a classic design of pot still, results in a calm, sweet and warming character.

TASTING NOTES

Nose: A meandering elegance and surprising degree of weight, too, with the most charming and gentle smokiness drifting around in very old-fashioned Speyside style. A classic exhibition of oak and barley interplay: perfect balance and respect for the other. There is even a surprise fruit note of sharp passion fruit: where the hell did that come from..? Could nose this all day, if I had the time.

Taste: Right: so, does this complexity on the nose transfer across to the palate...? Oh, my word it certainly does! The delivery is seemingly choreographed, the malt of varied intensities - sometimes a little sharp (that passion fruit, again?), sometimes almost gristy sweet; sometimes ethereal, sometimes weightier as that minor phenol makes the most subtle of impacts - dancing across the palate without an off-note in the world.
 
Finish: Light butterscotch, lighter barley but still tan peek-a-boo smoke adding the telling late weight and gently fizzing spices for good measure. Oh, and some very late heather-honey, too, which is pretty unusual at this very late stage.
 
Balance: This malt really has pure star quality. Elegant doesn't do it justice. If you find this in a shop, snap their bloody hands off: this is Scotch malt whisky at its very best!
 
Region: SPEYSIDE
The region of Speyside is regarded as the Napa Valley of Scottish whisky, with the highest concentration of whisky distilleries in Scotland. Among those distilleries, clustered around the River Spey which runs through the heart of this region, are among the most regarded whisky makers in the world. Speyside first started showing signs of its dominance in the 19th century, the result of its ready access to expansive barley fields, strong train network, and an excellent water source: tributaries to the Spey River.  The Speyside region shows huge diversity in its produce, covering the spectrum from light, heather-rich ‘breakfast’ whiskies to the rich and fruity ‘sherry bombs’ characteristic of some of the region’s most exalted names.
 
Distillery: ABERLOUR
The Aberlour distillery story is one beset with challenges, through which the distillery has not just endured, but thrived. Though distilling on the site dates back as far as 1825, the Aberlour distillery was founded in 1879 by the son of a local tenant farmer James Fleming. After 10 years developing his craft at nearby Dailuaine distillery, Fleming opened his own distillery at the confluence of the rivers Lour and Spey near Ben Rinnes, Moray. A tragic fire not long after Fleming’s death destroyed most of the buildings and a large portion of the whisky in stock on the premises. The distillery survived the crisis and rebuilt from the ashes with the latest equipment and a modern outlook. In 1973, the distillery expanded its production to four pot stills, though its production levels remain relatively small.

Situated in the foothills of the Serra do Mar mountains in eastern Brazil, the quaint town of Morretes is home to approximately 15,000 residents, including Agenor Macarri Jr., the master distiller at Agroecolgica Marumbi. Macarri, who received a graduate degree in Cachaa Agronomy from Universidade Federal do Parana in Curitiba, is often referred to as Dr. Cachaa. Macarri has studied every component of cachaa production, from the genetics of sugar cane to the exposure of cachaa to different types of wood. Novo Fogo Organic Gold Cachaa is made from 100% estate-grown, organic sugarcane grown without the use of chemicals or preservatives. While many sugarcane farmers burn their fields prior to harvesting their plants (burning enables faster cultivation), Novo Fogo refuses to use flame-harvesting due to the detrimental effects it has on the sugars residing in the base of the cane stalk. Rather, when the sugarcane reaches its peak of maturity, expert farmers at the Novo Fogo estate tenderly harvest the crops by hand. After the sugarcane is harvested, it is pressed to extract the sugar cane juice. The juice is then mixed with with organic corn, rice and lime juice and is fermented for approximately 24 hours. After fermentation, the wash is distilled in one pass through Macarri's 1,200-liter copper-pot still (the bagasse the dry, fibrous residue remaining after the sugarcane stalks are pressed is used to heat the still). "We use pure sugar cane, grown organically and processed manually, with no chemicals, so why should we distill it twice"asks Macarri. "There are no impurities in it to remove through multiple distillation." After distillation, the heads and tails of the distillate are cut, and the remaining cachaa is matured in steel tanks for over a year a unique process which mellows and adds further character to the spirit. Novo Fogo Organic Silver Cachaa has a nose of lime, banana and coconut, which gives way to notes of sea salt, sweet peppers and more tropical fruits. The finish is smooth, and defined by bold notes of pure sugar cane. The cachaa is brought to proof and each hand-blown bottle is then filled and labeled by hand. Novo Fogo, which means "new fire" in Portuguese, wont burn you, and is now available in a cocktail kit complete with all the tools you need including a wooden muddler and two mason jars to make the perfect Caipirinha, the world's most popular cocktail!

Corti Brothers 7 Year Old Exquisite Whiskey

The Corti Brothers grocery, which was started by Frank and Gino Corti in Sacramento, CA 1947, has long been at the forefront of the artisan food movement. The store's mission was to do more than just hand people products, but to talk food and wine with them, and this mantra was embodied in Frank's son Darrell, who developed an encyclopedic knowledge of products from around the world. Continuing his father's legacy, Darrell grew Corti Brothers to such acclaim that the LA Times credited the grocery with starting the gourmet-food revolution. In addition to his expertise in food and wine, Darrell Corti has quite a history with whiskey as well. In 1974, he traveled to Kentucky to bottle a special bourbon for Corti Brothers bicentennial, and on two separate occasions in the mid-80s he worked with the Van Winkle family to bottle private selections of Van Winkle Reserve. Now, in the spirit of the burgeoning craft distilling movement, Darrell Corti has partnered with Amador Distillery to create his very own private label whiskey, Corti Brothers Exquisite Whiskey. Corti Brothers Exquisite Whiskey is crafted from just 13 casks of seven year old, Kentucky bourbon whiskey that has been made with a mashbill of 70% corn, 25% rye and 5% malted barley. After seven years of maturation in these new, American oak casks, the whisky is then finished in barrels which previously housed Harbor Winery's Mission del Sole. This practice of double-barreling is common for Scotch whiskies, but relatively unusual for a bourbon whiskey. Afterwards, the whiskey is un-chill filtered and bottled at 90.5 proof. Corti Brothers Exquisite Whiskey has a nose of port and caramelized brown sugar, which leads to a palate filled with bright fruits, port, sherry and oak. The finish is rich and sweet, with more oak and a nice earthy character that lingers.
