Kaiyo is a Japanese Mizunara oak aged whisky. What makes this spirit so special is the bespoke oak barrel selection. Mizunara oak is some of the most expensive wood available. The impeccable character of the wood imparts distinctive notes onto every spirit. However, its delicate wood grain nature makes it quite challenging to cooper. Kaiyo whisky is aged in handmade, bespoke Mizunara oak casks. These barrels are crafted from slow growth, air-seasoned wood from hand-selected trees. After the whisky is aged, it is finished at sea, imparting even more distinctive character to the spirit. This unique sea voyage departs from Osaka Japan, and the journey can take up to 3 months. This whisky gets its exquisite character first and foremost from the Mizunara oak. The oak's lactones ratio and vanilla impart sweet, spicy, exotic notes of incense, sandalwood, and coconut. Other notes like ripe dried fruits, and subtle hints of cherry appear all throughout the nose and palate.

TASTING NOTES

NOSE: Dominant notes of vanilla due to longer ageing in French Limousine oak barrels. Followed by ripe apricot, baked apple and elegant floral notes.

TASTE: A perfect harmony between the strength of ripe fruit and subtle notes of liquorice; offering a great complexity of elegant and powerful aromas.

BODY: Well-balanced, structured and multi-layered. Combines the roundness of ripe fruit with a pleasant mouthfeel and silky texture.

Maker Notes

Spicy vanilla fruit, ripe apples and a rich, luxurious mouthfeel. This is the result of 18 long years and a generous proportion of first-fill sherry casks. And of the patience we take over the slowest distillation in Scotland.

TASTING NOTES

COLOUR: Medium gold with a rich glow.

NOSE: Awash with red apple, ripe melon and fresh banana. Heavenly and well rounded, it drifts into hot porridge topped with brown sugar.

PALATE: Full bodied, round and rich. At first macerated fruits, marzipan and walnuts; then warm spices, dry cocoa and lingering Seville marmalade.

This exceptional tequila starts as 100% weber blue agave which is triple-distilled for exceptional smoothness. It is then rested in American white oak barrels for at least 12 months to enhance its character – adding an array of subtle flavors, and a unique smoky finish. Finally, this aged liquid is filtered through diatomaceous earth to gently extract the color, rounding out the flavor profile.

Hoosier Gameday Lager is a Vienna-style beer brewed by Upland Brewing Company and Indiana University. It has 4.7% alcohol by volume (ABV) and is available in limited drafts at Upland Brewing Company locations, as well as at grocery stores, liquor stores, and convenience stores. 

The beer is made with malted Vienna malt from Sugar Creek Malt in Lebanon, Indiana, and has a balance of malty flavor and refreshing drinkability. Some say it has a crisp semi-sweet malt base, grain, and bold finish hop presence.

Upland Brewing Company partnered with Indiana University Licensing and Trademarks to create the beer, which was based on feedback from fans and the Bloomington community. The beer has a cream and crimson candy color, and some of the sales will go toward IU student scholarships.

The Pratt Standard Cocktail Company was founded in November 2014 by Tory Pratt. At first, it was called TRUE Syrups & Garnishes and the name was later changed to reflect their goal of connecting people via mixology. Based in Washington, D.C. they specialize in cocktail syrups that are focused on authenticity and flavor and take their inspiration from the pre-Prohibition era. They spread their passion and dedication via the quality of their products as well as through cocktail classes. Pratt comes from a family that has worked in the food industry since she can remember. It wasn't until she bought a high-quality craft gin that she realized a cheap run-of-the-mill tonic simply wouldn't cut it. After much research and experimentation she ended up with the True Tonic Syrup, the first in the growing lineup of syrups that now include the Ginger Syrup, Grenadine Syrup, Kola Syrup, and Rich Simple Syrup. Now there's even the seasonal Spring Syrups series with Blackberry Mint, Rosemary Grapefruit, and Bitter Lemon variations. The name of the game is super-high quality and versatility, eschewing artificial additives, and creating syrups that complement rather than overpower the spirits they are mixed with. A lot of research goes into the creation of each hand-crafted syrup. The True Rich Simple Syrup is crafted with the finest-quality raw demerara sugar, which is closer to what was used in the late 19th-century cocktail boom. DOS PASIONES TOBALÁ

Our Tobalá is one of the most exclusive variants in the world of mezcal. These wild agaves take 7 to 12 years to age. However, due to its small size, Tobalá agaves require a considerable batch to produce a successful harvest.

Yuu Baal Tepeztate features delightful herbal nuances derived from wild plants and cooked flowers. DEMI-SEC

With its equilibrium that tends towards sweet and fruit flavors, Veuve Clicquot Demi-Sec is an indulgent treat for champagne lovers – and perfectly suited for dessert.

THE BLEND

No fewer than 50 individual wines make up this cuvée. The traditional proportions for Demi Sec are: 40 to 45% Pinot Noir, 30 to 35% Meunier, 20 to 25 % Chardonnay.

As with all Veuve Clicquot blends, Demi-Sec is predominantly Pinot Noir (40-45%), which gives the champagne its fundamental structure. The pursuit of very distinct fruit flavors means that there is a higher level of Meunier (30-35%) in the blend than would typically be found in Yellow Label, for example, and Chardonnay completes the blend (20-25%). The inclusion of 30-45% reserve wines ensures the consistency of the Veuve Clicquot style. The long aging in our Crayères (3 years minimum for Demi-Sec) gives silkiness to the Champagne. Finally, a dosage of 45 g/L gives Demi-Sec a sweeter balance of flavors while preserving the wine’s inherent freshness.

TASTING NOTES

After additional cellaring (two to three years, or even more in the right conditions), Demi Sec develops even richer notes of praline or toasts. It is then ideal with caramel or praline based desserts: Paris-Brest, tarte Tatin, pears with caramel, etc…
