Internationally renowned British bartenders Henry Besant and Dre Masso were on a quest to create a tequila diverse enough for bartenders to use in cocktails, and excellent enough to compete with (and surpass!) high-end bottles when drinking neat. They teamed up with Jalisco native Jess Hernandez, who has spent seventeen years perfecting the art of tequila as Maestro at the Destilera Colonial de Jalisco in Los Altos. Hernandez manages every level of production, starting with 100% blue agave planted in ideal growing conditions at 2,100 meters above sea level in mineral-rich volcanic soil. After seven to eight years, the plants are finally ready to be hand-harvested by jimadors. Unlike grapes or wheat, agave plants take nearly a decade to mature, so the soil and growing conditions have a strong impact on the final product. Destilera Colonial de Jalisco employs an entirely full-time, multi-generational, team of jimadors who have passed down the art of agave harvesting for decades. After selecting only the best plants for processing, the agave is roasted in the distillery's own brick ovens for up to three days, before resting in order to retain as much juice as possible for the tequila. After relaxing for a bit, half of the agave is shredded and pressed via a roller mill, while the rest is crushed using a two-ton Tahona Stone. Tahona rolling is a 500-year old method used almost exclusively for the finest tequila. The agave juice ferments for 36 hours and is then distilled in small batches using copper stills. Olmeca Altos Tequila Aejo blends the vibrancy of tequila with the bourbon craft. After maturing in oak barrels for 18 months, the Aejo has a softer aroma, with notes of dried fruit and almonds. With woody notes, vanilla and chocolate flavors, it's a great cross over bottle for bourbon lovers that are looking to explore a bit more.

John Emerald Distilling Company is a family-run small batch craft distillery from Opelika, Alabama that has been operational since 2014. It is the first legal distillery that opened in the state since the end of the Prohibition era, a year short of a hundred years later. It all started when John and his son Jimmy Sharp, both homebrewers, started looking into opening a brewery. Finding the market to be oversaturated, they turned to craft distilling instead and started rigorous training and education. They came upon an old cotton warehouse in Opelika, a small and business-friendly town where the mayor welcomed them with open arms. The distillery now operates on 8 thousand square feet and has a tasting room that is open for visitors. They produce several spirits using their 350-gallon hybrid pot, each product named after one of John's and Jimmy's ancestors their (grand) father John Emerald Sharp, a successful businessman, being the distillery's namesake. The spirits include award-winning gin, vodka, rum, and single malt. At the very core of their lineup is the John Emerald Alabama Single Malt Whiskey, the only one to share the name with the distillery itself. The style is between bourbon and Scotch whisky, or as they like to call it American single malt. A part of the 100% malted barley grain recipe is smoked with peach and pecan wood, and Alabama wine barrel staves are added for a touch of smoke and added complexity. The spirit then matures in Missouri Ozark charred oak barrels in a room that simulates the changing of seasons with variable temperature.

High n’ Wicked is an importer and specialty bottler of exceptional whiskies. It was founded in 2019 by two former Brown-Forman senior executives, W. L. Lyons Brown, III and Kevin E. Sachs. Brown and Sachs worked together in the International Division in the 1990’s and were instrumental in building Jack Daniel’s and Southern Comfort in Europe and Asia.

The company features five year old Kentucky Straight Bourbon and Kentucky Straight Rye available year round. It will also offer unique, small production expressions of each annually, including cask strength, single barrel and double wood finishes. Some will carry greater age as the brands evolve.

For our second Single Barrel release, we have hand-selected casks from an extremely limited number of Boxergrail Kentucky Straight Rye Whiskey barrels. Each is a study in patience and creativity. To complement this one-of-a-kind whiskey, the packaging for each season of barrel releases will be unique and feature a different series of six original Limited Edition illustrations commissioned by our Founder, Kaveh Zamanian. The result is a true work of art inside and out that could only be bottled at cask strength.

Sue Todd

The bottles from all 10 barrels of Rabbit Hole’s Boxergrail Single Barrel release will feature the illustrations of the award-winning scratchboard illustrator Sue Todd. Kaveh commissioned Sue to create linocut prints of the classic Lewis Carroll characters and the result is six, vibrant illustrations featuring Alice, The White Rabbit, The Hatter, The Queen, The Catepillar and The Footman. Each six-bottle case will contain a bottle with each label design and features special glass and cork sourced exclusively for the Single Barrel program.

Don Felipe Camarena's family has been distilling tequila in Jalisco since the early 19th century. After his ancestor's original distillery was destroyed and abandoned during the Mexican Revolution, Don Felipe switched gears, selling his prized blue agave to other distilleries. In 1937, he was finally able to open his own distillery, La Altea, which he passed down to his grandson, Felipe J. Camarena. The younger Felilpe was trained as a civil engineer, and many years later in 2007, Felipe followed in his father's footsteps by opening a distillery of his own: El Pandillo. At El Pandillo, Felipe has constructed a series of original machines to optimize energy use and perfect the art of tequila-making. After harvest, Felipe roasts his agaves in a stone oven equipped with steam jets the jets ensure that the agaves are cooked as evenly as possible, cutting down on cooking time and increasing yields. Next, the roasted agaves are ground and pressed in two different machines (once again of Felipe's design) which extract sugars from the plants fibers, making everything more easily fermented into alcohol. Once distilled, the tequila is proofed with rainwater that is collected using a rooftop funnel which Felipe (unsurprisingly) installed himself. Handcrafted by Felip J. Camarena at El Pandillo, Pasote Tequilas pay tribute to the first agave distillers: the Aztecs. The Aztecs were some of the most ferocious fighters in history, and they often celebrated their victories by drinking the sacred agave plant. Pasote Blanco Tequila is bottled immediately after distillation. The tequila is marked by an herbaceous aroma of perfectly roasted agave, similar to celery root and lime. With an exquisitely soft mouthfeel, the palate opens with zesty citrus leading to a combination of salt, jicama, and taro root. The finish is long, clean, and ever so slightly prickly with white pepper. A minerality derived from the rainwater used during distillation anchors the overall taste of this tequila.

Blanco
An authentic 100% Blue Weber Agave tequila made in the Traditional Method. Produced with fully mature 7-10 year agave from 50% Highlands and 50% Lowlands of Jalisco, slow-roasted in brick ovens, slow-fermented, never diffused, roller press extraction, double distilled, and additive free.

Tasting Notes

Aroma: Its opening bouquet is snappy, fresh, ashy and a touch smoky; pleasant agave notes emerge upon air contact. I nice bouquet of flowery aromas such as jasmine and rose which turn into rosemary, thyme and a hint of mint.

Palate: On the palate, the taste is fresh, pleasing, appropriately zesty, peppery and vegetal, with a hint of sugary sweetness at mid-palate. You have some solid minerality with some peppery yet subtle floral notes.
