Some years ago, Master Distiller Harlen Davis Wheatley decided to embark on a project to craft the perfect vodka. Through the commitment and meticulous craftsmanship of a dedicated team, HDW CLIX came to fruition. CLIX, or 159 in Roman numerals, represents the 159 separate distillations that were required to produce this ultra-fine vodka.

Obtained from the original Montanaro recipe, which uses the addition of sweet and bitter orange instead of lemon or other citrus botanicals USED , this makes it sweet and soft in the mouth, following the trend of today’s consumer. You can perceive the balsamic notes of Aloe and Myrh and the spicy notes of Licorice that balance with the herbaceous-bitter notes given by botanicals including Rhubarb and Gentian. In combination with Absinthe, ‘Achillea Moscata’ it cleanses the palate and creates an interesting contrast between sour and sweet.

The alcohol content is 16° and the sugar content of 160 grams/litre which is the minimum to be regulated to enhance the possibility of mixing without appearing too sweet.

Other than the classic White Spritz it goes well ON ITS OWN on the rocks as it was drunk in the seventies.

Situated in the Midlands region of Ireland, the city of Tullamore was ruled for centuries by Clan O'Molloy. On May 10, 1785, a hot air balloon crashed into the city and began a fire that destroyed over 100 homes, making Tullamore the site of the world's first known aviation disaster. Following the accident, the city adopted a phoenix (a phoenix is a mythological Greek bird that is reborn after it dies) rising from the ashes as its coat of arms, a symbol of its resilience and recovery. Tullamore DEW Distillery was founded within 50 years of the accident, and is situated at the very site where the hot air balloon struck a smoking chimney, which started the fire. Tullamore DEW Irish Whiskey is made from three different grains, including malted barley, unmalted barley and corn. Once the grains are harvested, they are milled and mashed with hot water before being fermented in wooden washbacks. During fermentation, the grains' sugars are converted into alcohol, creating a strong yet sour beer called wash. The wash is then triple distilled through three copper-pot stills: a wash still, a low wines still and a pot still. Through each distillation process, the alcohol content and flavors of the whiskey are intensified. Following distillation, Tullamore DEW Trilogy Irish Whiskey is aged for 15 years in a combination of ex-bourbon, ex-Oloroso Sherry and special ex-rum casks, making this both the oldest whiskey ever released by Tullamore DEW and the first time the distillery has used rum casks in such a way. As a result, Tullamore DEW Trilogy has a rich aroma filled with tropical fruits, mixed nuts, tannins and oak. The palate transitions to flavors of chocolate fudge and whipped cream, and leads to an incredibly long and intense finish. Tullamore DEW Trilogy Irish Whiskey shows the power of three in many ways three generations of the Williams family, three types of Irish whiskey (malted barley, unmalted barley and grain), the distinctly Irish process of triple-distillation, the unique crafts of distillation, blending and maturation, and aging in three different types of casks.

The maguey Papalometl is named in Nahuatl for the butterfly (papalotl), Scientific name: agave Cupreata and looks like a giant Tobala. Distillation takes place in a stainless pot with a clay condensor and Carrizo (Mexican bamboo) tube. Earthy, dark and delicious. The nose is like sinking into a rich leather chair. A palate of leather, slate, a hint of black olive and meatiness. A medium long finish starting with slightly sweet notes of dark dried black cherries that gives way to an earthy, savory mushroom.

Situated adjacent to the Burn of Rothes in the Speyside region of Scotland, The Glenrothes Distillery was founded by in 1879 by James Stuart, who had previously been employed at The Macallan Distillery. The distillery's history is marred by tragedy in 1897, construction workers who were attempting to expand its capacity started a fire that consumed much of the distillery's equipment and infrastructure. Twenty-five years later, a fire in the distillery's original warehouse caused the loss of 200,000 gallons of maturing whisky. Despite having lost ten copper-pot stills in various accidents since its founding, the Glenrothes Distillery is now a picture of tranquility. The Glenrothes Single Malt Scotch Whisky is made from plump, ripe Scottish barley, which is malted and fermented using water sourced from the Ardcanny and Brauchhill springs (the springs are situated adjacent to the distillery). Following fermentation, the grains are twice distilled through the Glenrothes' copper-pot stills. The stills, which were designed and fashioned to be exact replicas of the original stills installed in 1879, are incredibly tall and uniquely shaped, which contributes to the overall light and sweet flavor of the whisky. After distillation, The Glenrothes' stillmen remove the heads and tails of the distillate and preserve only the "hearts" for maturation (the hearts comprise less than 20% of the entire distillate). The Glenrothes Sherry Cask Reserve Single Malt Scotch Whisky is a blend of rare and limited vintages produced at The Glenrothes Distillery, each aged exclusively in first-fill ex-Oloroso Sherry casks custom-made in Jerez, Spain. These casks cost as much as five times their American ex-bourbon equivalents The Glenrothes Distillery's Malt Master, Gordon Motion, who hand-selects the casks for the Sherry Cask Reserve, believes they are worth it. The whisky has a complex aroma of lemon cake, Christmas cookies, fresh pear and vanilla, which leads to an equally bold palate filled with notes of gingerbread, oak, flan and baking spices. The finish, which is bitter and nutty, is complete with memorable notes of orange zest.

Lismore was founded by William Lundie & Co., a brand which prospered under the guidance of John and William Lundie. This range of Speyside single malts and blends was originally named after the Inner Hebridean island between Mull and the mainland. Today Lismore is bottled by Glenfarclas owner J&G Grant using the same traditional recipes handed down by the Lundie family. Lismore currently has several releases in their range, from NAS single malts and blended Scotch to this 21-year-old single malt matured in Sherry hogsheads. Though most information about this single malt remains undisclosed, this mysterious whisky has signature rich, complex Speyside notes of rich orchard fruit, warm baking spice, and oak. Bottled at a rather inviting 43% ABV.

Rabbit Hole Distilling, founded by Kaveh Zamanian, produces a beautiful range of award-winning spirits. While their bespoke 24 ft Vendome Copper & Brass still, is being custom-built only a few blocks from their distillery, their Bourbon and Rye whiskeys are 100% Kentucky made, crafted to create a unique drinking experience. This London Dry Gin is part of Rabbit Hole's Fingerprint Edition, a set of limited edition small batch, experimental finishes. Made using gin imported from London this distinctive spirit has uncharacteristically soft juniper notes, overlaying a floral wave of geranium and rosewater. This incredibly gin carries an exclusive distinction: it is the only gin to be finished in #3 Kentucky rye whiskey barrels. The effect is sublime. Layers of white pepper and coriander and the faintest touch of wood leading to a citrus finish, and a nearly irresistible desire to take another sip.

Created in 1840, this yellow liqueur is inspired by the Elixir Végétal recipe. It was so popular that Father Garnier, attorney and responsible for liqueurs at the time, subsequently decided to officially name it Chartreuse Jaune and registered the “Chartreuse” mark in 1852. It was a liqueur with a 43 ° content, produced and still made today by the Chartreux Fathers.

In Great Britain, kinship communities as 'clans' were very authoritative and influential in upper-class society in the Middle Ages. They spread their power and expansion during the time of Celts domination in this area. In Scotland, every clan had its own kilt with specific and individual pattern on it. Immortal clan - is a classic Scotch whiskey of "blended' category that is produced by mixing of malt and grain base. Whiskey bottling took place in its historical homeland in Glasgow, Scotland. The main symbol and central element is a clan blazon, which is stylized with two Scottish swords on a shield background. Two-handed sword is characterized as having a cross hilt of forward-sloping quillons with quarterfoil terminations. In this interpretation, blazon symbolizes the valor and courage of Scottish people, which certainly emphasizes its national identity.

Founded by Daniel Barnes, Treaty Oak whiskeys are a fusion of scientific method and innovation.Their modern approach to traditional distilling and aging processes coupled with meticulously selected local ingredients yield a high-quality spirit using custom-made stills. Treaty Oak whiskeys are made using pure Hill Country limestone spring water.They source organic, heirloom corn varietals from Panhandle farmers and mill them at James Brown's bespoke Barton Springs Mill. Treaty Oak Distillery is named after the famous 500-year old tree in Austin, under which Stephen F. Austin signed agreements defining the borders of Texas.Their ginsare called Waterloo, after the original name of Austin. They moved to Dripping Springs, a place with a rich history of gatherings and shared perspectives. All of their Char 3 barrels are sourced from Kelvin Cooperage in Louisville, Kentucky. One of the defining points of their process is that they toast the barrel before they char creating a better caramelization of the oak. Central Texas has a very different climate than Kentucky and other areas producing bourbon. The wide swings of temperature and humidity allow for a maturation that is specific to the weather of the hill country.Their non climate controlled rickhouse was designed to showcase the dynamic climate. Red Handed is thoughtfully curated from Heaven Hill Distillery in Bardstown, Kentucky. Aged 2 years, this beautiful straight bourbon presents a pleasant honey nose with kettle corn and cool earthy notes leading into a mild spice with waves of caramel and butter. This bourbon can be enjoyed neat or mixed into a classic cocktail.

When the gin's namesake Ginny settled down in the Napa Valley with her husband, they worked as winemakers in their thriving winery. After several years they felt a new challenge was due. When a couple of their friends invited them to help them with a wine-country gin, they gladly agreed, the spirit having been Ginny's passion for several years. They went about it in a special way, insisting on a hands-on approach and using their expertise as winemakers. The humble beginnings had Ginny driving around the wine country with a trunk full of boxes of gin, selling each bottle by hand, soon becoming known locally as "Ginny with the gin". The business took off and the rest, as they say, is history. What's special about Ginny's Gin is how their winemaking background is reflected in the spirit. It's distilled in small batches from grains as well as grapes. The juniper and coriander are macerated in the grape spirit for one day, while the rest of the botanicals are added during distillation using a vapor infusion: lemongrass, lemon zest, sage, orris root, grains of paradise, angelica root, cubeb berries, and licorice root have all found their way into the recipe. Their wine-tasting expertise comes in handy when tasting the blend and ensuring the complexity, balance, and consistency is always up to par. The extra-smooth gin is bottled at 90 proof and fittingly sold in wine bottles.

Maker Notes

Hand harvested single estate grapes, gently pressed a single time, naturally fermented into wine, Copper Pot distilled once to proof by varietal, rested & blended according to family tradition. Capurro Pisco is made 100% of grapes, undiluted, unfiltered, and with no additives of any kind at any step of the production process.
