Black Art 11 has been created using pre-renaissance casks from Bruichladdich Distillery (pre-2001) which have been safeguarded and maturing on Islay for 24 years.

An enigmatic alchemy which relies on nature, craftsmanship and the quiet passing of time, what happens inside each cask under cover of darkness in the depths of the warehouse remains a mystery. Black Art 11 is a testament to this elusive mastery. Using artisanal techniques passed down from one generation to the next; the spirit is pulled exclusively from Bruichladdich distillery pre-renaissance casks which have been patiently maturing on our island home for almost three decades. The finite single malt is created in secret by our head distiller, Adam Hannett, with the recipe only known to him. Putting our trust in Adam, he is given creative freedom to bring this incredible whisky to life. Using pre-renaissance Bruichladdich stock, Black Art 11 is unique and unrepeatable. A chance to experiment, take risks and push the boundaries of possibility; only Adam knows what has gone into creating the precious 24-year-old single malt. The barley and cask types are undisclosed, with the final recipe a mystery. TASTING NOTES

COLOUR: Rich Tawny.

NOSE: Dried fruits, leather and a hint of citrus immediately open on the nose, followed by a fresh sea breeze. Sweet fruit and floral notes come to the fore, with poached pear, delicate rose hip syrup, black cherry, and sweet mango. The complexity of the single malt is apparent as the aromas continue to open, with cedar and mellow oak complemented with butterscotch, praline, honey, and a hint of cinnamon. Warming oats are balanced with fragrant notes of rose and pear drops.

PALATE: Dried fruits, dates, raisins, barley sugar, leather and oak open on the palate, followed by butterscotch sweetness, praline and hints of coconut and fresh citrus. Sweet apple and pear are married with toasted oak, warming wood spice, dark plums and marzipan, with layers of depth opening with each sip.

FINISH: Oak and dried fruit come to the fore, with Christmas cake notes of sultanas, fig, marzipan, and lingering honey adding to the beautifully rounded finish.

TASTING NOTES

Aroma: SMOKE rises with a cloying sweetness. Intense, pungent and aromatic, a distinctive farmyard scent drifts, along with a crunchy aroma, like CREOSOTE or tarry rope. A splash of water disturbs the vapours and DARK CHOCOLATE CREAM billows, laced with a ribbon of SMOKED ARTICHOKE.

Taste: Ardbeg’s UNTAMED darker flavours and notes have risen. A burst of bittersweetness SURGES, disturbing ashy coal DUST and casting a HAZE of CARDAMOM, peppermint and COFFEE grits. CLOUDS OF dark chocolate and mentholic eucalyptus ROLL IN, OBSCURING the fruit and floral notes usually found at the heart of ARDBEG. Wisps of ANISEED twists, CINNAMON balls and antiseptic lozenges FLOAT on the palate.

In 1977, Canadian Club 45 Year Old was crafted in batches and aged in barrels. This exquisite golden amber liquor tantalizes with a fusion of cozy pear notes, baking spices, toffee, and a subtle touch of leather in its aroma. On the palate, it unveils an essence reminiscent of espresso crema, harmonized with hints of wine, gently poached pear, and the delightful nutty essence of praline. 60 ml Bulleit Rye Whiskey
5 ml Amaro Averna
7 ml St. Elizabeth's Allspice Dram
2 dashes DeGroffs Pimento Bitters

We estimate that 5-8% of all the barrels we taste are of single barrel quality.  These barrels typically have a unique and distinct flavor profile, as the wood from each barrel imparts its own characteristics into the whiskey.

Dark chocolate, honey, toasted almond, and vanilla cream create an enveloping, decadent aroma. On the palate, roasted malt, cacao, and allspice lead to lasting balance of exquisite flavor.

Yellowstone Limited Edition represents an annual exploration in top-shelf blends and finishes. Making each year a unique and sought after release. For 2023, we created a delicately balanced blend of 7-year, 13-year and 16-year bourbons, that is then finished in Tokaji casks. Available in limited quantities for those who seek it.

Nose: Honey, green grapes and freshly baked cinnamon.

In 1846, John Dewar began blending the finest whisky he could source in Scotland and bottling it with his own name on the label. Within a decade, Dewar was supplying whisky to bars and hotels throughout Scotland. By the turn of the century, the brand had expanded to become one of the best selling whiskies in the world and today remains the best-selling Scotch whisky in the United States. By the end of the 19th century, the famed Dewar's Aberfeldy Distillery became operational. Situated by the Pitilie Burn, the small river has served as a source of pure water to this day. After the malted Scottish barley is brought in, it is left to ferment for an extended period of time, before being distilled in tall pot stills. The Aberfeldy single malt that is produced here remains the heart of Dewar's blend today. The premises are open for tours and cask tasting with a whisky lounge and cafe on hand. Dewar's whisky is crafted by blending together "the rarest of rare whiskies from across Scotland." The backbone is that 27-year-old single malt whisky that is crafted at Aberfeldy Distillery. Once the 27-year-old is married together with other whiskies, the resulting blend is allowed to rest again in oak casks. This secondary maturation process "is a marriage made in heaven ensuring our whiskies are even smoother and creamier," said Dewar's retired master blender Thomas Aitken. It's this great foundation and the signature "double aging" process that have made Dewar's the most awarded blended Scotch whisky in the world. Where the "double aged" series ends, the innovative and premium Double Double picks up. Created by Dewar's Master Blender Stephanie MacLeod, this 27-year-old expression takes the matured single malt and grain whiskies and blends them, then lets each style age separately. Afterwards, both are blended together and re-casked for an additional month. In the end, the liquid is transferred to Paolo Cortado sherry casks for a round of finishing, before being bottled at 92 proof. The 4-sided bottle reflects the 4 stages of the aging process.

Maker Notes

Another distillery in the new-school 1960s whisky-boom era, Glenallachie Distillery was built in 1967 with a view to producing spirit for blending. Traditionally it has always produced a malty spirit, reasonably light in character; however a recent change in ownership has seen changes to production methods, particularly lengthened fermentation, which will see Glenallachie’s profile change in the coming year. Consequently the latter vintages, which are really quite rare as single malt bottlings, will eventually be no more.

STRAIGHT RYE WHISKEY FINISHED IN PORT WINE CASKS

Indiana Rye whiskey is brought to Texas where we batch it in our warehouse and finish it in old Port Wine Casks. The Texan sun influences the rate and strength of flavor imparted into the whiskey. Some casks take longer than others. The team tastes the whiskey finishing in the Port Wine Casks regularly until the optimal flavors are achieved. Casks are then batched together, tested regularly and proofed before bottling.

The Prisoner Cabernet Sauvignon 2018 is a rich and robust wine crafted by The Prisoner Wine Company. With deep dark fruit notes, velvety tannins, and a lingering finish, it's a well-balanced and structured Cabernet Sauvignon. Perfect for pairing with hearty dishes or enjoying on its own, this vintage reflects the winery's commitment to exceptional quality and flavor.

This ten-year-old Bottled in Bond bourbon was aged in Warehouse C, built by Col. Taylor in 1885, and the barrel warehouse he was most proud of – the final piece in his “model distillery.”  Like some of the previous releases, this one-time-only bottling of E.H. Taylor, Jr Warehouse C Bourbon is very limited.   

 The barrels in the E.H. Taylor Jr. Warehouse C release were all aged for ten years in the center of Warehouse C, with half of them coming from the 2nd floor and the other half from the 5th floor.  The second floor is an outstanding aging floor for older barrels.  The ricks are very tight, making it slow and difficult to put in new barrels.  The floor is very dry, making it ideal for 10 to 15-year-old products.  The fifth floor of Warehouse C is a well-rounded aging floor with windows all the way around, providing excellent air flow throughout the floor.  There is ample sunlight through these windows which helps heat up the warehouse and the aging process.  

The ideal aging locations for these barrels led to a wonderful flavor combination, with a nose of cherry cobbler with rum sauce and a hint of oak; a palate of cherry cola, vanilla bean and toasted oak; and a finish that is long and lingering with a hint of spearmint, coffee, raisin bread and anise. 

Barrel Strength pushes the boundaries of our signature four grain balanced flavor profile. Each batch is blended from three bourbon mash bills aged in new American oak barrels and completely uncut and non chill-filtered. Each barrel was hand selected and blended into a single batch in order to create this unique offering.
