Our Rosa has rested just long enough in our fine Cabernet barrels to enrich the natural agave juice, without overpowering its delicate botanical balance.

We source only the finest Napa Cabernet French White Oak barrels to age our Rosa.

We leave our Rosa barrels uncharred, allowing the Cabernet to interact directly with the tequila, imparting a subtle pink hue and light floral finish.

TASTING NOTES

Vuelo del Aviador crafts artisanal tequila of the highest quality in Jalisco, Mexico. Their lineup of luxury spirits consists of the Plata, Reposado, Aejo, and Extra Aejo. The finest blue weber agaves used are fully-matured, meaning they have been growing on the estate for 7 to 9 years. They are then cooked slowly in clay ovens for 72 hours before the pulp is fermented and distilled using copper-pot stills. The different juices then get aged for varying amounts of time, from the Plata which takes 4 months, to the Extra Aejo which takes 5 to 7 years. Different casks are used for maturation. These include French and American oak, Napa Valley red wine barrels, as well as whiskey casks. The Plata has won a Double Gold Medal at the 2020 edition of the San Francisco World Spirits Competition. The Vuelo del Aviador Gran Reserva Extra Aejo is based on the same award-winning spirit as their Plata expression. This one is the crown jewel in their stellar lineup of tequila and their ultra-premium masterpiece. It's a blend of tequila that has spent 5 years in whiskey barrels and tequila that was aged for 7 years in red wine barrels, making for a luxurious drinking experience with a presentation to match. Bottled at 80 proof, the handcrafted spirit has enticing sherry notes on the nose, along with a palate that invokes XO cognac with plenty of dried fruit and oak notes.

The Tyrconnell is an elevated, yet approachable single malt whiskey, best enjoyed neat or on the rocks. This version of The Tyrconnell is aged 10 years, then is finished in casks previously used to age Madeira, a fortified wine hailing from a group of islands off the coast of Portugal. Bottled at 92 proof to bring out the flavour nuances of its casks, The Tyrconnell Madeira Cask Finish begins with a salty, red fruit flavour-filled nose before finishing dry, with prominent notes of cocoa, caramel, and allspice.

It was the realization of a long-held dream when we acquired Benromach Distillery in 1993. Five years of meticulous refitting of the distillery followed before HRH Prince Charles officially reopened our doors in 1998.

Time well spent creating a style of single malt reminiscent of the days before commercial maltings. A time when Speyside distilleries malted their own barley using peat to fuel the fires and impart a distinctive touch of smoke to their whiskies. The resurrection of Benromach Distillery signaled the rediscovery of a lost style of Speyside single malt.

Terroir Notes: Our Cypress fermentation tanks within our palenque are surrounded by tropical fruit trees endemic to Ejutla. These trees shed their yeast and pollen with add nuance and yeast strains into the fermentation process.

Situated on a ridge above the banks of the River Spey, the Easter Elchies House has been the spiritual home of The Macallan for over three centuries. In 1820, Alexander Reid began renting the home from Sir Lewis Grant of Grant. Reid was a farmer, and soon after he sowed the fields surrounding the home with barley, Reid established the first licensed distillery on the estate, which he named Macallan after an ancient church that had been destroyed by fire during the 15th century. In the winter when there was little activity on the farm Reid would ferment and distill his excess grains into whisky, which was often drunk straight from the still or sold to travelers passing through the town. Today, the Macallan Estate encompasses 370 acres, 95 of which are devoted to the production of the Macallan Estate's Minstrel barley (a single acre produces about 2.5 tons of barley each year, enough to yield 1,800 bottles of The Macallan). In addition, the distillery contracts with farmers to purchase barley that is low in nitrogen and high in starch, resulting in a rich and oily whisky. After the barley is harvested in late August and early September, it is malted before being mashed in one of The Macallan's two mash tuns, a process that takes between four and eight hours. Then, the barley is fermented with a specially cultured yeast before being distilled twice through The Macallan's copper-pot stills. The copper comprising the stills acts as a catalyst, and enhances the formation of sweet esters while minimizing impurities such as sulphur. In addition, the curiously small stills some of "the smallest stills within the Scotch whisky industry,"according to production manager Alexander Tweedie produce a whisky with a heavy, oily flavor. Following distillation, The Macallan distillers remove the heads and tails of the whisky and collect approximately 16% of the spirit to fill into casks for maturation. This cut," which is among the highest of any Scottish distillery, results in a more full-bodied and and rich whisky. This Double Cask Gold was released in 2018. He hand-selects the botanicals used in our gin and builds personal relationships with each grower. A Self-Made Man
Buchanan’s is named after the late James Buchanan, a driven whisky entrepreneur who crafted a Scotch that redefined greatness. Instead of creating a Scotch to be revered, he created a uniquely smooth blend that could be shared and enjoyed by all. In fact, the original Buchanan’s bottle design was inspired by the selfless act of sharing water canteens between British soldiers during times of conflict.

Buchanan launched his whisky company in 1884 and quickly shared it with the world, traveling from Scotland to London to Latin America. Today, the bottle’s Red Lion crest proudly wears its origin, “Buchanan’s Scotland,” but continues to spread its smoothness around the globe from Bogota to Los Angeles to Mexico City. The refined, rich taste of Beluga Noble Russian Vodka results from its unique composition, mainly due to the malt spirit and the purest water of the Siberian artesian wells. These carefully selected natural components pass through a triple filtering system. Afterwards, Beluga Noble is left to «rest» for thirty days. Such method helps to neutralize the harsh smell of the spirit and to enhance the rich taste and soft flavor of Beluga Russian Noble Vodka.

This rare whiskey was bottled under the strict tenents of the Bottled-in-Bond Act of 1897. Inspiration
Xicaru, the Zapotec word for beautiful, reflects Fernando Santibañez’s desire to share a traditionally produced mezcal that is approachable and distinct. Using his grandmother’s recipe, we make small batches of Xicaru Mezcal with time-honored methods at a palenque in Matatlán, Oaxaca.

Production
This mezcal showcases the 100% Maguey espadin from which it’s made. Its natural smoky flavor is derived by cooking the maguey in a conical stone oven on mesquite and ocote, woods native to Oaxaca.

Tasting Notes
The pure appearance and substantial body result from age old methods used in the production process. The finished aroma is natural and robust; a combination of maguey, mesquite and ocote. Earthy characteristics on the front palate give way to citrus and rich vegetal maguey notes that finish distinctively clean. A tinge of smoke complements these qualities without overwhelming the delicate balance found in Xicaru.

Jaguar Symbol
In ancient Zapotec culture the jaguar symbolized great strength and agility. The Santibañez family home of Tehuantepec, Oaxaca, derives its name from this revered creature. We utilize the jaguar to reflect the tradition and heritage used in crafting Xicaru Mezcal.

In 1886, William Grant, along with the help of his nine children and a single stone mason, began construction of the Glenfiddich Distillery, situated in the Speyside region of Scotland. After a year of hard labor, the first drop of whisky fell from the distillery's copper-pot stills on Christmas Day 1887. Today, Grant's passion, determination and pioneering spirit continue to guide Glenfiddich Distillery, which is stewarded by the fifth generation of the Grant family. Glenfiddich Single Malt Scotch is made exclusively from malted barley, which is milled and mashed with water sourced from Robbie Dhu spring. The crystal clear spring water, which is bottled directly at the source, is incredibly pure the distillery purchased 1,200 acres around the spring decades ago in order to protect its unique water supply. After the barley has been mashed, it is fermented in wooden fermentation tanks made of Douglas Fir. While wooden fermentation tanks are more expensive and difficult to maintain as compared to stainless steel tanks, they absorb a portion of the heat generated during fermentation, and thus, enable a slower and longer fermentation process. Following fermentation, the wash is twice-distilled through Glenfiddich's copper-pot stills (the distillery employs a craftsman onsite to tend to the stills, which are unique in shape and size) before the heart of the distillate is cut and prepared for maturation. Glenfiddich Bourbon Barrel Reserve 14 Year Old Single Malt Scotch Whisky is aged carefully in ex-bourbon barrels for 14 years. After this initial aging, Glenfiddich's Malt Master, Brian Kinsman, finishes the whisky in deeply charred new American Oak barrels supplied by The Kelvin Cooperage in Louisville, Kentucky. As a result, Glenfiddich Bourbon Barrel Reserve 14 Year Old Single Malt Scotch Whisky has a distinctly sweet aroma, reminiscent of bourbon flavors such as cracked corn, ripe summer fruits and caramel. The palate is spicy, with intense woody influences shining through, and leads to a clean finish accented by vanilla, almonds, raisins and faint wisps of smoke. Bottled at 86 proof, this whisky which pays tribute to the American bourbon industry is only available in the United States.

On the steep precarious hillsides of Oaxaca, Guerrero and Durango varieties of agave, indigenous to the region, grow wild and are heavily sought after by the local mezcaleros. These varietals produce flavors that are exotically intense, with rich earth tones and savory smokiness. From the heart of the maguey these flavors are traditionally extracted to produce mezcal that is wildly refined. Because we at bozal believe that something wild produces a far richer spirit.

Agave

This thick-foliaged, wild agave, often used as fencing to divide land in Oaxaca, intensifies the complexity of this mezcal. As citrus and floral notes arise, hints of green peppers compliment the nose. The palate is a delightful balance of citrus and creamy banana.

Taste

The aromatics are herbaceous and spicy with notes of forest grass and anise flower. A slight sweetness is evident on the unctuous palate with flavors of agave, honey and river stone, finishing with a floral aftertaste.
