Founded in 1982 by German-born Jrg Rupf, St. George Spirits is one of the oldest craft distilleries in the United States. The distillery, housed in an old World War II airplane hangar on a former naval base on the edge of San Francisco, is home to Lance Winters, mad scientist and St. George's master distiller. Winters, who is widely-known for experimenting with different types of spirits, has a laboratory dominated by a 10-liter test still in addition to the glass beakers and graduated cylinders that cover every inch of counterspace. Next to the dusty chalkboards caked with equations for the conversion of sugar to alcohol and intricate diagrams of molecular structures are bottles of experimental whiskeys, vodkas and even an aging balsamic vinegar (it's 14 years old already). According to St. George Master Distiller Lance Winters, St. George Single Malt Baller Whiskey is a California take on the Japanese spin on Scotch whisky. It is crafted from 100% American barley, mostly made of two-row pale malted barley, the remainder lightly roasted. The whiskey is filtered through maple charcoal and matured for 34 years in ex-bourbon and French oak wine casks, before being finished in umeshu barrels, a Japanese style of plum liqueur crafted from 100% California-grown ume fruit. The distinctive label, which re-imagines the legend of St. George as a samurai was designed by Oakland artist Sylvia Solochek Walters, and calligraphy by Eri Takase of Takase Studios.

We guide producers through the complicated steps to export in their own names for the first time, and cover necessary expenses including local attorneys, accountants, license fees, and more.  We absorb our producers’ marketing and supply chain costs as our own. We believe in autonomy for producers, be it hiring their own workers or using their own bottling facility. We only step in if they want our help. We connect our partner producers to share knowledge and help each other in production. Revenue from every Erstwhile bottle sold creates jobs in our partner producers’ and vendors’ local communities in Mexico.  Our producers hire their own team of local men and women, on their own terms. Erstwhile is a woman-owned, women-led business.  Our team is multicultural and multilingual.  We are outspoken about elevating underrepresented voices in Mezcal and our industry. Parce 8 Year Old Straight Colombian Rum

According to a 2013 poll by WIN/Gallup International Association, Colombia is the happiest country on earth Parce founders (and brothers) Brian, Jim and Patrick Powers hypothesize that this has something to do with the rum. Upon travelling to Colombia, the three brothers were taken by the country's beauty, culture, and the warmth and hospitality of its people, and they wanted to share the time-honored Colombian tradition of celebrating quality rum with others. "In South America, they would be drinking rum much more as a sipping rum, enjoying the complexity and character Certainly sipping rums have existed here [in the United States], but I dont think there's been much awareness of them, and we thought maybe we could get the sipping rum on the map here, too." The Powers brothers were inspired to go into business together by their father, and they found the perfect partners for their venture in another family business the father-and-son duo of master blenders from Bogota, Colombia, Arthur and Brojen Fenandes Domecq. Together, Arthur and Brojen have over 50 years combined experienced working with rum, and the Domecq family boasts nearly three centuries of history crafting traditional wine, sherry and brandy in the south of Spain (Brojen's grandfather, Jose Ignacio Domecq, was known in the industry as "La Nariz" the nose for his expertise in sniffing and blending). Parce 8 Year Old Straight Colombian Rum is crafted from sugar cane carefully selected from both local (San Cristobal) and foreign (Barbados, Trinidad) sources, all of which is harvested manually every season. Under the guidance of master blenders Arthur and Brojen Fenandes Domecq, the sugar cane is processed and then fermented with natural spring water and homegrown yeast for 36 to 48 hours. Once fermented into "cane wine," the resulting spirit is distilled through a stainless steel, 4-column still each still produces a slightly different unaged spirit for use in the final aging and blending process. The spirit is then transferred to spent, charred American oak casks where it is aged for eight years before being bottled in the lush Andean mountains of Quindo, Colombia. Parce 8 Year Old Straight Colombian Rum has an exquisite aroma of cherries and candied fruit, which leads to a playful palate filled with light vanilla sweetness along with notes of almonds and toasted coconut. The finish is accented by a subtle oakiness and more hints of cherries, dark chocolate, whipped cream and baking spices. Parce 8 Year Old Straight Colombian Rum won a Gold Medal at the 2012 Ministry of Rum Tasting Competition.

Wahaka Mezcal Abocado con Gusano

Wahaka mezcal is produced by an indigenous Zapotec family, who has perfected the art of making mezcal through many generations. The owner Alberto Morales is passionate about preserving the ancient traditions, and their mezcal is handmade using simple tools. Wahaka is uncompromising when it comes to its processes. The company has strict standards for sustainable farming, and holds USDA and Mayacert organic certificates. Each Wahaka Espadn is tended up to eight years by Alberto Morales and his team. They also replant wild agave through the not-for-profit Fundacin Agaves Silvestres, so the agaves can be harvested for generations to come. During the harvest, cortadores skillfully carve out the pias, which are immediately placed in earthen pits lined with rock to cook for up to five days. The process turns the starch in the pia to sugar, and adds the delicate taste of smoke. Once the pias are cooked and reach a golden caramel color, they are moved to the mill, which is gently pulled by a horse, crushing them to a pulp ready for fermenting. The fermentation takes place in open air oak vats, and, unlike for other distilled spirits where yeast strains are added, fermentation here happens naturally as a result of yeast in the air around the palenque. The spirit is distilled using copper and clay stills, and each batch is tested by Alberto Morales until impurities have been removed. Located in the rural village of San Dionisio Ocotepec in the second poorest state in Mexico, Oaxaca, Wahaka is committed not only to tradition and sustainable farming, but also to its community. They believe they have the responsibility to improve the lives of those they can. The company pays above market wage, and shares the success by helping to provide free healthcare, delivering toys to kids, and sponsoring the high school basketball team. Wahaka Mezcal Abocado con Gusano is the only aged mezcal in the Wahaka line. The double-distilled spirit is matured for 46 months in re-charred American oak barrels with agave worms, which adds a slightly smoother and delightfully caramel complexion to the premium mezcal.

1792 Full Proof Straight Bourbon Whiskey

In 1876, John D. Willett one of Kentucky's original bourbon aristocrats transferred his interest in the Willett & Frenke Distillery to his son-in-laws, Benjamin Mattingly and Thomas Moore. Mattingly and Moore continued to operate the Willett & Frenke Distillery together until 1881, when Mattingly finally sold his stake in the company to a group of investors. Within a few years, Thomas Moore acquired complete control over the distillery and eponymously renamed it. Moore would continue to operate the distillery for another five decades, until he was ultimately forced to close his doors at the onset of Prohibition. Today, the Barton 1792 Distillery operates on the same site as the historic Tom Moore Distillery, and continues to use the same methods that Moore used over a century ago when distilling his own bourbon. 1792 Small Batch Kentucky Straight Bourbon Whiskey is made from a mash of corn, rye and malted barley. While the use of corn in the bourbon's recipe adds classic notes of buttered bread, biscuits and roasted nuts, the heavy use of rye in the bourbon's mashbill yields a more complex and full-bodied whiskey. After the grains are harvested, they are mashed and fermented before being distilled through a copper-pot still. After distillation, the bourbon is aged in new, American oak casks for a minimum of eight years in Warehouse Z on the distillery's estate in Bardstown, Kentucky. Warehouse Z is situated on the edge of a bluff and as a result, enjoys the intense heat and humidity that are ideal for maturing whiskey. "When it comes to barrel aging," says Ken Pierce, Barton 1792's master distiller, "it's just like real estate location, location, location. That's why 1792 ages in Warehouse Z up there on the bluff." In addition, during the maturation process, Pierce samples each cask of bourbon as it rests to determine when the bourbon has reached its peak of maturity. "Quality in, quality out," says Pierce, who has over two decades of experience at the distillery. 1792 Small Batch Kentucky Straight Bourbon Whiskey, is named after the year that Kentucky achieved statehood in the United States. This full proof bourbon is bottled at its original 125 entry proof, just as it was years ago when the barrels were first filled.
