Macduff Distillery was founded in 1962. Located in the Highlands, beside the River Deveron near the North Sea, the official name of the distillery has gone back and forth between names Deveron and MacDuff, but the majority of their bottlings have been released under the name Deveron. The distillery changed hands several times before being acquired by Bacardi's subsidiary John Dewar & Sons, the label that also owns Royal Brackla, Aberfeldy, Aultmore, and Craigellachie. The Macduff facility produces 2,400,000 liters of spirit a year. It has a classic design, conjured by distillery architect William Delme-Evans. The stillhouse houses one of the most interesting parts of the overall engineering. It has five stills, two wash, and three spirit. The wash stills have distinct upward-tilted lyne arms and 90-degree kinks in their design. This unusual bend in the lyne arm creates a reflux that yields a light, fruity spirit. The resultant new make also has a nutty slightly sulphury character, which is due to the quick mashing, short fermentation, and cold condensing technique. It is this process that defines the character of Deveron Whisky. In 2015 John Dewars & Sons launched their Last Great Malts Collection: a range of high profile single malt whiskies. This line up included top-shelf whiskies from Aberfeldy, Aultmore, Craigellachie, and Royal Brackla. They released several premium age statement expressions from each brand. The Deveron 18 Year Old was launched in September 2015 along with a 12-Year-Old. This rare coastal whisky harbors the tangy notes of redcurrants, alongside sturdy apple notes, dried fruits and nutty warm finish. Bottled at 40% ABV. In 1810, Madame Clicquot invented the first Vintage Champagne, in 2012 Veuve Clicquot declared the 66th vintage of the Maison. With grapes exclusively from Grands and Premiers Crus, Pinot Noir dominates the blend (51%) and provides the structure that is so typically Clicquot, followed by Chardonnay (34%) that adds finesse and elegance essential in a perfectly balanced wine, and then Meunier (15%) that rounds out the blend. The Vintage Rosé 2012 blend is elaborated with 13% red still wine, exclusively from the Pinot Noir of Bouzy. The uniqueness of the Vintage Rosé 2012 lies in the addition of 11% of wines aged in large wooden casks (foudres), bringing strength and aromatic intensity. TASTING NOTES

The palate is powerful and voluminous, with an attack that is distinct and clear. It unfolds with initial aromas of luscious red fruit, strawberry and Morello cherry. Next to arrive are dense notes of noble tannins; their velvety, silky caress is the perfect counterpoint to Vintage Rosé 2012’s spicy saffron and peppery notes.

INSPIRED BY THE OLD-WORLD TECHNIQUES OF SCOTTISH AND IRISH WHISK(E)Y DISTILLERS WHERE MUCH OF THE MAGIC LIES WITH THE ART OF BLENDING. 
We borrowed and twisted many of these techniques to produce Doc’s Alter Ego Bourbon. Our goal was to take good whiskies, blend them together and see how we could enhance these blends as well as maintain the flavor of the whiskey itself. After years of finishing whiskies in a variety of casks, we believe we have struck success using Olorosso Sherry, Pedro Ximenez Sherry, and Cognac casks from a number of curated producers. 

Whether accentuating or layering in characteristics, we believe these techniques enhance the spirit and still focuses on the bourbon. These casks allow the delicate characteristics of past occupants to mingle and marry with the smooth yet bold aspects of Doc’s Straight Bourbons. Each release is then meticulously blended and married in ex-Cognac Foeders prior to bottling. Our finishing and blending techniques impart a dry nuttiness, subtle sweetness, and an extended finish to an already great whiskey, while still allowing the bourbon to shine.
