Whisky Advocate’s Artisan Whiskey of the Year – The whis- key that put us on the map.

We use three individually smoked malts (cherrywood from Wisconsin, beechwood from Germany, and peat from Scotland) to craft this deep and complex whiskey. Using 3 distinct smokes provides consistent and balanced smoke from nose to the pallet and throughout the finish.

Corsair never uses artificial flavors or colors, achieving superior flavor and color through quality malted barley, innovative distillation and small barrel maturation.

 Tasting Notes

Smoke and notes of cherry pervade the palate, finished by a slight brininess from the mossy peat. Pot distilled then aged in new American charred oak, Triple Smoke has the sweetness of an American whiskey with the rich smoke of an Islay single malt scotch.

FIRE Edition follows the release of ICE Edition which was awarded 99/100 and the Chairman's Trophy in the Ultimate Spirits Challenge 2016. It completes the two part limited edition series inspired by the stories of the Ice and Fire Giants and their battles against the Gods to rule the world.

Maker Notes

This vermouth was inspired by our desire to make a vermouth enhanced with the Mediterranean citrus aromas that are so intrinsic to the area around our winery.

VINIFICATION
We blend an infusion of aromatic herbs with the peel of several different citrus fruits. After several months of maceration, we add an aged white mistela (sweet wine) that we keep especially for this vermouth.

TASTING NOTES

Nose: Aromatically intense and very pleasant. Memories of sweet herbs such as star anise, lemon verbena, quina and angelica. Both well-balanced and complex.

Mouth: An elegant, smooth, refined and well-rounded palate with a slight sweetness, and also a certain bitterness. An elegant and citrus fruit finish ensures freshness and a superb aftertaste giving this vermouth a gourmet touch.

About the Wine
The 2021 Apothic White is a vibrant blend of four varietals grown from California and Washington state. Chardonnay leads the blend while Pinot Gris, Riesling and Viognier add fragrant aromas and complexity. Layers of green apple, lemon zest and tree-ripened apricot open to a palate layered with notes of white peach and vanilla undertones. The finish is bright and crisp.

Viticulture Notes
Ongoing drought conditions throughout California caused a slight reduction in crop size in 2021. Mild summer conditions allowed the fruit to take its time ripening and developing optimal flavor concentration. Washington state experienced some prolonged heat spells, which also caused a slight drop in crop size. Harvest in both viticultural regions produced yields of high-quality grapes with excellent quality.

Winemaking Notes
To retain the natural characteristics of each varietal, we fermented the blend at cool temperatures. The Pinot Grigio, Viognier and Riesling were fermented 100% in stainless steel tanks to preserve delicate fruit aromas. Select lots of Chardonnay were fermented and aged on oak to add a touch of vanilla before undergoing malolactic fermentation to enhance fruit character.

The un-official fruit of the South is making a statement in our Bird Dog Peach Whiskey. Lush, fragrant fruit salutes your senses at the front of this golden amber infusion. Vanilla and oak undertones roll into the soft familiar warmth of rich bourbon for a well-rounded libation experience. It doesn’t get more southern than our Southern Peach Tea, your favorite front porch refresher with a kick.

Paniolo Whiskey is named after Mexican vaqueros, or cattle drivers, who were brought to Hawaii after Captain George Vancouver gave cattle to King Kamehameha the First. Named after Bob Dylan's famous Bootleg Series of albums, the line-up invites people to experience the art of craft whiskey on a new level and will feature unique and unreleased whiskeys, including special blends, barrel finishes and rare stocks. The southernmost of the Inner Hebridean Scottish Isles, the island of Islay (pronounced EYE-lah) is just 240 square miles and home to only 3,457 people. Still, the island is one of just five distilling regions in Scotland whose identity is protected by law. Islay's unique climate and geography impart signature characteristics to Scotch distilled and matured on the island. Despite its small size, the island boasts 130 miles of coastline, and the warm Gulf Stream from the Atlantic Ocean provides for cool winters and mild summers. In addition, the island is largely composed of peat, a phenolic compound that emits smoky aromas when burned. The salty winds and peat bogs of Islay result in Scotch that has a signature salinity and is balanced by a touch of smoke. The Big Smoke Islay Blended Malt Scotch Whisky was crafted by blending together whiskies from some of the island's most iconic distilleries. As a result, the whisky has an aroma of salted caramel, buttered biscuits and bonfire that gives way to chewy notes of caramel, vanilla, mint, smoke, charcoal, cinnamon buns and honey on the palate. The finish is clean and crisp, with touches of saltines, leather, wood and tobacco. The whisky earned a score of 90-95 points from Wine Enthusiast.

Eagle Rare Kentucky Straight Bourbon Whiskey is masterfully crafted and carefully aged for no less than ten years. The rareness of this great breed of bourbon is evident in its complex aroma, as well as the smooth and lingering taste. Eagle Rare is a bourbon that lives up to its name with its lofty, distinctive taste experience.

In fact, except during the thirteen years during which distillation was outlawed in the United States, a member of the Medley family has been operating a distillery continuously since 1812. Today, Ezra Brooks Straight Rye Whiskey continues to be handcrafted in the heart of Kentucky. Bottled and aged in the old fashioned way for an unmistakable, unforgettable mellow flavor. This bourbon liqueur has sweet floral notes with undertones of vanilla, cinnamon, and fine wood. The palate is subtle, with notes of vanilla, floral tones and a warm, lengthy, buttery finish.
