Vermouth di Torino is a collective heritage of Piedmont, which sees in the royal Savoy court as first big promoter of a product which, mainly starting from the late XVIII century, generated a flourishing industry which led Piedmont to become the Kingdom of Vermouth. Storico Vermouth di Torino is still produced according to the original recipe of Giulio Cocchi. This vermouth belongs to the category of the sweet vermouths, or Italian vermouths, sweet and amber as indicated in the manuals of the late XIX century. Storico Vermouth di Torino Cocchi has been the protagonist of the international rebirth of the top-of-the-range vermouths and the renovated interest of the great barmen for the denomination Vermouth di Torino so that it is also familiarly denominated “Cocchi Torino”.

CHARACTERISTICS
The original recipe of Giulio Cocchi calls for the use of herbs such as Cinchona and rhubarb which lightly colour of brown the beautiful clear wine. In order to emphasize its amber tone, the addition of sugar browned on fire emphasizes its amber tone, giving together with colour also a special note to the taste: crunchy and cotton candy able to round all the bitter tastes without using vanilla. A thrilling vermouth, rich in sensations: among the herbs and the aromatizing spices, Artemisia and citrus are the protagonists with their balanced bitter and citrusy notes which characterize Cocchi style. A rich taste with vibrant notes of cocoa and bitter orange. From the infusion of some noble and balsamic woods, we have in the end light aromas of camphor and rosemary notes. Among the minor ingredients, herbs and woods with unique perfumes such as sandal, musk, myrrh and nutmeg.

About the Brand

It all started in 1790 when the 25-year-old son of a Scottish prosperous cabinetmaker asked for a 300£ loan from his father to set up as a wine merchant in London. This ambitious young man was George Sandeman, the founder of Sandeman, who ended up establishing one of the world’s leading Port and Sherry wine businesses. From early on Sandeman specialized in these two great Iberian fortified wines and, following a usual practice in those days, began trading not from own offices but from Tom’s Coffee house, on Birchin Lane, London. Business was agreed on a ‘gentleman’s word’ and George soon gained an impeccable reputation, characteristic of The House of Sandeman to today.

Tasting Notes

Deep colour, almost opaque. Aroma of excellent complexity, with wild bush and spicy notes like curry, pepper and ginger, red berries and black fruits mixed with a light cacao touch, the result of a good maturation, along with a slightly stony finish. On the palate, it has a powerful attack, with a lively acidity, firm and well present tannins, wild bush and red berry notes, with an extremely long finish and great concentration.

There’s something a bit magical in the way spirits are made.  Sure, most of it’s science, different boiling points allowing ethanol to be separated from water. But the flavors and nuances of a spirit come from the inexact melding of flavors on the molecular level, influenced by the design of the copper pot still, water chemistry and the hands that coax the liquor to life.
Warfield has three copper pot stills—one 215 gallon copper gin still made in Washington State and two 1000 gallon whiskey stills made by Forsyth in Scotland.  These stills are the backbone of the distillery and help produce the unique and award-winning flavors of our organic gin, organic American Whiskey, and organic brandy.

Warfield Distillery spirits are handcrafted in the mountains of Ketchum, Idaho.

A gin that’s been satisfying aficionados and converting sworn gin enemies for the last three years, our gin captures the essence of the Idaho wilderness in a bottle. Drogheda is one of the oldest Irish towns where the first written records of whiskey production date back to 1556. The town has a rich history of whiskey distilling and had 18 operating distilleries in 1774. As we know, Irish whiskey was in decline in the 20th century, due to the civil war, trade dispute with the UK, and Prohibition in the US with only a handful distilleries remaining operational, none of those in Drogheda. Boann Distillery joined the resurgence of Irish whiskey in 2019, producing the first spirit in the town in more than 160 years. The company was launched by Patrick "The Whistler" Cooney and his wife Marie with several other family members. Backed by 40 years of experience in the industry, the family has the know-how, skill, and passion to create premium Irish whiskey. On one hand, they honor the rich tradition of Irish whiskey, on the other they take innovative approaches using cutting-edge technology which includes their state-of-the-art brewhouse and unique 3 copper-pot stills that use nanotechnology all with the goal of creating some of the finest whiskey and craft gin. All the ingredients are 100% natural, including locally-grown barley from native farmers and water from the Boyne Valley well. The operation is overseen by Michael Walsh. Ireland's youngest head distiller has accumulated a vast amount of knowledge during his Chemical Engineering studies and when getting his Certificate in Distilling in 2012, quickly rising through the ranks. They recycle their water and harness the heat that is generated during distillation, which then helps run their packaging lines and heat their restaurant, visitor center, and offices. Distillation byproducts are used as animal feed. The Whistler Blenders Select Irish Cream is a whiskey liqueur the first in the world to feature a single-pot-still Irish whiskey in its blend, combined with fresh Irish cream from grass-fed cows. This results in a depth and delicious richness with the whiskey shining through beautifully.

Dad's Hat Pennsylvania Rye Whiskey

In March 1791, at the behest of Treasury Secretary Alexander Hamilton, President George Washington signed into the law the Whiskey Excise Act. The law levied taxes on spirits distilled within the United States and was the first tax ever levied by the federal government on a domestically-produced product. Farmers living west of the Appalachian Mountains the western frontier at the time were vehemently opposed to the tax. These farmers often operated small stills and distilled the excess grains they harvested from their farms into whiskey, which was easier to transport over the Appalachian Mountains as compared to cumbersome grains. When agents of the Treasury Department were forcibly prevented from collecting the whiskey tax by the farmers turned distillers, George Washington led a federalized militia of nearly 13,000 soldiers into western Pennsylvania in order to suppress the "Whiskey Rebellion." Without firing a shot, the rebellion collapsed, although many Pennsylvanian farmers continued to evade the tax. "Dad's Hat Pennsylvania Rye Whiskies pay homage to our state's rich tradition of making small-batch whiskey," says Herman Mihalich, master distiller at Mountain Laurel Spirits. Raised in Monessen (a small city situated in southwest Pennsylvania) and armed with a Bachelor's degree in Chemical Engineering from the University of Pennsylvania and an MBA from Wharton, Mihalich has spent most of his life in Pennsylvania. "I really wanted to revive that entrepreneurial spirit and rich rye heritage we have here,"he says. Dad's Hat Rye is made from a mash of 80% rye, 15% malted barley and 5% malted rye. After Mihalich sources all of the grains from local farmers in Pennsylvania, he slowly ferments the mash for approximately seven days before distilling it though a 500-gallon Christian Carl copper-pot still imported from Germany. The still, which is augmented by a side-column, allows Mihalich to remove any impurities in the whiskey, while simultaneously refining its flavor and texture. After distillation, Dad's Hat Pennsylvania Rye is aged in charred, white oak quarter casks (15-gallon casks) for just under one year in a temperature-controlled warehouse. The small casks and climate-controlled aging give the whiskey hints of cinnamon, dried fruits, nuts and candied apple, which nicely balance out the flavor of the spicy rye. After maturing, each cask of Dad's Hat Rye Whiskey is brought to proof and bottled by hand. Inspired by the old-fashioned fedora hats his father used to purchase in Philadelphia, Mihalich's goal was to recreate the sentiment that these hats represented with Dad's Hat Whiskey: quality, tradition and integrity.

Glenallachie is situated in Banffshire, at the foot of Ben Rinnes, neighboring several other distilleries. Founded in 1967 by Mackinlay McPherson Ltd Glenallachie is one of the youngest distilleries in Scotland. In 1989 Campbell Distillers acquired The GlenAllachie Distillery, starting production run that lasted for nearly 30 years. In 2017 Billy Walker, Trisha Savage and Graham Stevenson came together to acquire the GlenAllachie facility reincarnating the distillery as The GlenAllachie Distillers Company Limited. The highly anticipated core range of the GlenAllachie distillery from Speyside was finally launched in July 2018. The water for the distillery comes from the dam heads over 2 miles from the distillery. Henshead and Blackstank flow into Beachshach Burn, which supplies the water directly to the distillery, and sits on the North East of BenRinnes. The distillery was designed to be gravity fed, created with horizontal condensers that maintain a consistent temperature, or increase/decrease to alter the character of the spirit. Master Distiller Billy Walker uses a vast amount of aged stock that was obtained along with the distillery, dating back as far as the 1970s. This stock has been slowly distilled from Scottish barley, using 120-hour fermentation. As blender for over 40 years, Walker worked meticulously across 16 warehouses to hand-select a limited number of casks to be released as GlenAllachie 18yo. With its rich, robust spirit in harmony with the heather and butterscotch notes this signature GlenAllachie earned a Double Gold San Francisco World Spirits Competition in 2019.
