OLOROSO SHERRY CASKS

Loch Gorm is exclusively matured in oloroso sherry casks from the renowned bodega, Jose Miguel Martin. It is common for distilleries to use a variety of sherry producers but for our consistent quality and character, it is vital that we source them all from just one bodega. We select a combination of sherry butts and hogsheads from Jose Miguel Martin that provides two separate styles of maturation.

These ex-oloroso sherry casks impart a combination of heavy sherry notes, spicy dark chocolate, rich fruits and burnt sugar. This balances beautifully with the Kilchoman peat smoke and citrus fruits found within our farm crafted spirit.

Doña Vega is founded and produced by Mexican women who set out to make mezcal more accessible and approachable. For two years, through 73 recipes, 22 farms, and too many tastings to count, the Doña Vega team accomplished their goal of creating two exquisite varieties of mezcal. 

Doña Vega is produced in a small town outside Oaxaca – Santiago Matatlán by a family who has passed down the tradition for five generations.

Espadín is chosen for the large majority of all mezcal production in Mexico, however, Espadin Capon is quite rare. Doña Vega harvests the agave plant several years after it has ripened giving the final distillate a natural sweetness which is incomparable to other mezcals.

The majority of the fruit for the Sonoma County Chardonnay was sourced from the Russian River Valley, renowned for its excellent Chardonnay. The 2016 vintage had an early dry spring, followed by a long mild summer which gave the vineyards time to slowly mature the fruit to the peak of flavor, allowing our Chardonnay to develop excellent structure and crisp acidity.

In the central valleys of Oaxaca, Mexico, Maestro Alberto Morales a fifth-generation jomezcalero is hard at work managing his family's five stills. The village of San Dionisio, which the Morales' have called home for nearly 150 years, was founded in 1610 and has sat at the epicenter of mezcal country throughout the spirit's existence. Morales, who uses sustainable farming techniques (Wahaka Mezcal is certified organic by the USDA) and traditional production methods, describes his palenque as "a place of respect and harmony, where no arguments or even bad words can be uttered." The Morales' take great pride in the craft of mezcal production, and oversee the entire process from harvest to market.After expert jimadors select espadn agave at the peak of ripeness, the Morales' roast them in earthen pits, which gives the mezcal its signature, smoky flavor. The agave is then crushed using a traditional millstone and distilled by Morales himself. Rustic and refined, Don Amado Arroqueño is made from an enormous maguey species that requires 18 years to mature but is cultivatable, so ecologically sustainable while simultaneously wildly exotic and delicious.

Bright floral aromatics of caramelized maguey, leather and soft smoke lend structure to ripe, cooked yam fruit flavors. A supple mouthfeel delivers quince, persimmon, lemon verbena and kaffir, juxtaposed with layered chocolate, espresso and savory spice with balanced minerality and savory roast characteristics.

• Made 100% from Arroqueño maguey grown at 4,800' in the town of San Pablo Apostol, Oaxaca
• Halved & quartered (cogollo removed) agave earthen roasted for four days using mix of guamúchil and mesquite wood

• Fermented together with bagaso in 1,400L pine wood vats using airborne yeast strains
• Double distilled in ceramic pot stills to approx. 53% ABV and reduced with triple distilled demineralized water, no tails
