Filey Bay is the first single malt whisky made in, and of, Yorkshire. Why 'of Yorkshire'? Because it's created by us from field to bottle, here on the coast.

In June 2016, we ran the stills for the first time and filled our first casks. Filey Bay First Release was bottled in September 2019 and since then Filey Bay has grown and prospered. Tasting Notes: Rich and Complex | Flavours of black treacle, cranberry, cocoa and cola sweets

The Agave notes are neatly complemented with aromas obtained from its 18 month aging process in white oak barrels: caramel, butter-scotch, honey, tobacco and even leather. No predominance of any note, this is a very rich and complex tequila with a smooth and luscious finish.

Our Aejo mixes great and can be consumed on the rocks, but it is best enjoyed in a snifter.

This autumn we unveil the latest chapter in The Boss Hog odyssey, a journey through parts previously unknown in the world of whiskey. It begins with some of the oldest Rye on our Farm. Then, a double finish in barrels formerly belonging to Greek fig nectar and scratch made Tentura – a Greek style liqueur inspired by Ancient Patras.

Siren’s Song is the result… an adventure for the ages, befitting its own ode. It beckons you with refrains of supple sweetness and exotic spice. Honoring our five promises for every edition of The Boss Hog, you are guaranteed a stupendous and powerfully complex whiskey; single barrel in origin, bottled at proof and unique from anything you’ve ever before tasted. And for the first time ever, the cask finishes for this particular edition were crafted by our own whiskey makers: Liz Rhoades and Meghan Ireland.

The dynamic duo were inspired by the Muses of Greek Mythology – each of whom is depicted on one of nine bespoke pewter toppers: Calliope, Clio, Erato, Euterpe, Melpomene, Polyhymnia, Terpsichore, Thalia, and Urania. Amass them all if you dare; these others of creation also birthed the mischievous and mysterious sirens.

Another first for the collection – the back label of The Boss Hog IX comes equipped with NFC technology, enabling collectors to authenticate and register their treasure with one tap of a smartphone.

This rare and outstandingly complex whiskey is barrel strength, bottled between 102.5 – 106.2 proof.

TASTING NOTES

NOSE: Orange blossom followed by floral notes, dried fruit & a hint of brown sugar

PALATE: Notes of cinnamon and clove fading into black cherry

Vuelo del Aviador crafts artisanal tequila of the highest quality in Jalisco, Mexico. Their lineup of luxury spirits consists of the Plata, Reposado, Aejo, and Extra Aejo. The finest blue weber agaves used are fully-matured, meaning they have been growing on the estate for 7 to 9 years. They are then cooked slowly in clay ovens for 72 hours before the pulp is fermented and distilled using copper-pot stills. The different juices then get aged for varying amounts of time, from the Plata which takes 4 months, to the Extra Aejo which takes 5 to 7 years. Different casks are used for maturation. These include French and American oak, Napa Valley red wine barrels, as well as whiskey casks. The Plata has won a Double Gold Medal at the 2020 edition of the San Francisco World Spirits Competition. The Vuelo del Aviador Gran Reserva Reposado spends 9 months in Napa Valley red wine barrels. Employing a combination of American and French oak, it is blended and bottled at 80 proof. "Vuelo del Aviador" is Spanish for "flight of the pilot", hence the wings in the design of the bottle. The handcrafted tequila is rich and complex with notes of toasted agave, oak, fruit, and honey, as well as prominent brandy notes.

Riazul Reposado made its debut into the family in September of 2009 and stands out from others in its age category. The wonderful taste of agave remains strong and is complimented by flavors brought out during the fermentation, distillation and aging process. Our Reposado is aged 9 months in French and American oak barrels, honoring the refinement of traditional Reposado, while adding a unique touch to its subtle complexity.

THE BACKBONE OF THE SERIES

The backbone of the 14th annual Octomore series, the character of the 14.1 offers a necessary comparison from which the other expressions alternate and evolve. The base for this latest series showcases the delicate and intricate balance between smoke, malt, cask and maturation – resulting in an all-encompassing drinking experience. Matured for five years in first-fill ex-American whiskey casks, the 14.1 shows the power and potential of its essential raw ingredients. Sweet caramel and vanilla open on the nose, with bright citrus cutting through Octomore’s signature smoke - elevated with roasted coffee and subtle spice.

Distilled from 100% Scottish mainland barley and peated to 128.9 PPM, Octomore 14.1 is as youthful and dynamic as its predecessors.

TASTING NOTES

COLOUR: Light Amber

NOSE: Smoked vanilla, sweet caramel, and toffee notes open on the nose, with sooty smoke balanced with delicate coconut and flaked almonds. There is an unmistakable earthy smokiness and a hint of citrus, with lemon meringue pie cutting through rich barbeque pork.

PALATE: Bright citrus, smoke and a distinct minerality come through on the palate, followed by charred oak and beach bonfire embers. Toffee and creamy vanilla are balanced with the earthy smoke, with bright notes of pear, gooseberry fool and green apple simultaneously adding brightness and depth. Roasted coffee, hints of clove and nutmeg begin to come to the fore, with a gentle hint of heather honey.

FINISH: Butterscotch and vanilla are balanced with Octomore’s signature earthy peat smoke and a hint of salt spray, with burnt heather and gorse flowers settling on the finish.

Inspired after a visit to Bordeaux, Dan Duckhorn produced the first vintage of Duckhorn Vineyards Napa Valley Merlot in 1978. Highlighting Estate vineyards and top sites, our renown Merlot reflects the diversity of the valley’s many appellations. Winemaker Notes

Embodying the alluring beauty of great Napa Valley Merlot, this wine reveals vibrant aromas of red currant, ripe plum, black raspberry, cherry and sweet baking spices, with hints of tea leaves and cocoa. The palate is rich and luxurious, with silky tannins and flavors of ripe red berries, pie crust and fig compote gliding to a bright, elegant finish.

Production

In terms of overall weather, most of the 2020 growing season was excellent. Following a relatively dry winter, budbreak started early, and the temperatures throughout spring and summer were mild and temperate. This allowed the grapes to ripen slowly, developing pure, vibrant flavors and supple, fleshy textures. In late September, harvest was impacted by the outbreak of wildfires and the arrival of hot weather. The elevated temperatures gave many vineyards a final push to ripeness as we worked to bring in the grapes. During this period, we did extensive testing to ensure quality, excluding any fruit that did not meet our standards. While our meticulous selection process resulted in a smaller 2020 crop, the wines we produced live up to the Duckhorn name, displaying beautiful aromas, soft elegant textures, lively complexity and lush flavors.

Gun Fighter American Bourbon undergoes an initial six-month aging process in American Oak barrels, followed by a finishing period in previously utilized French port barrels.

Appearance: The bourbon whiskey displays an appealing caramel hue accompanied by a subtle touch of reddish tones.

Nose: The presence of the French Port Barrel finish is noticeable, contributing to a gentle infusion of port essence, complemented by delicate floral notes.

Palate: The spirit exhibits a pronounced and robust spice profile, delivering a distinctively flavorful experience.

The 2021 Vintage Micro-Cuvée No. 5 is a sparkling, organic cider distinguished by its light golden color.  It is fermented for at least 4 months in a cuve before being bottled. The fermentation continues after bottling for several more months.  This special Micro-Cuvée is composed of 50% Réné-Martin apples   (a tart/acidic variety typically used in Maison Herout’s organic apple juice). The remaining 50% is a blend of bitter and bitter-sweet apples that are typical to the Cotentin peninsula, where Maison Herout is located. Less than 3grams of residual sugar.

Tart, extra-dry, tannic with fine effervescence.  Drinks like a Basque or Spanish cider but not quite as dry. The unusual proportions of tart, bitter and bitter-sweet apples give this cider a freshness with subtle aromas of fresh apples.

Maison Hérout follows the cider-making tradition of their ancestors – their ciders are all organic and fermented naturally with indigenous yeast.  The bubbles are the result of a natural effervescence with fermentation continuing to occur in the bottle.  Maison Hérout ciders are not pasteurized or carbonated.  Gluten – Free and vegan.

The Orchards
Maison Herout has 25 acres of apple orchards. The average age of the apple trees varies according to the parcels (10 to 65 years old). More than 25 varieties of apples are grown including Rouge de Cantepie, one of the original apples grown in the orchards.  The soil is maintained by being completely covered with grass.

The Terroir
The orchards are situated on the Armorican Massive which is composed of schist and sandstone sediment as well as granite from the primary eras.  With a silty coating, the soils are slightly sandy and pebbly sandy and drain very quickly.

The Production
After grating the apples to obtain the “marc de pommes”, the grated apples are then crushed into a pulp, then pressed.  The resulting pressed juice rests for 3 to 5 days to become naturally clear. This clear juice is then fermented for at least 4 months in After bottling, the cider then continues fermenting for at least another 2 months so that the natural bubbles can form – leading to a rich, thick robe of foamy bubbles that are the hallmark of Maison Hérout.

The Balvenie's 15 year old Single Barrel Sherry Cask has been matured exclusively in a single European oak sherry butt for at least 15 years. The 15-year maturation in a cask that has previously held Oloroso sherry creates a single malt characterized by dried fruit richness, nuttiness and spice. No more than 650 hand-numbered bottles are drawn from each sherry butt and each bottle carries the number of the cask in which it was matured.

Nose: Rich with elegant oak and subtle spice.

Taste: Dried fruits are overlaid with a gentle nuttiness.

Finish: Long and sherried.
