THE VOYAGE

A boat is a singularly uncommon place to age bourbon, but inspiration struck Trey on the deck of his friend Chris Fischer’s research ship. While watching Jefferson’s bourbon rock gently in its bottle, they wondered what would happen to bourbon aged on the bow of a ship. The rest, as they say, is history. The constant movement of the ocean and extreme temperature fluctuations as the ship traversed the globe completely transformed the whiskey. The result is a hyper-aged, darker, richer and caramelized bourbon with incredible depth and complexity.

CAPTAIN’S LOG

The driving force behind OCEAN Voyage 24 was to introduce a New Experiment to the Jefferson’s OCEAN franchise. On all other voyages, the bourbon traveled across the equator several times, experienced hot and cold weather in the North Atlantic and South Pacific and seas that ranged from calm to violent. The OCEAN Voyage 24 Experiment would test the effect of high heat, all the time. OCEAN Voyage 24 spent all of its time at sea in the Caribbean where the air temperatures were always hot. The containers on board served as “Heat Ovens” as the bourbon visited exotic ports of call throughout the Caribbean and Central America. Throughout the voyage, the humidity was tropical and the average temperature inside the containers was 93.82° F, reaching a maximum of 124.52° F.

Storm activity in the Caribbean started earlier than normal, went dormant for a while then came back strong with eight named tropical depressions thus far. Storm Elsa crossed our path but all other activity passed to the north or west of the course. The waters surrounding Voyage 24 were for the most part quiet but, the sea is never still. The constant motion of the water, tropical humidity and high heat encountered during the Voyage 24 experiment has resulted in a bourbon that is both unique and exotic. Caramelization and enhanced tones of vanilla extracted from the wood give it a sweet taste, mellow pallet and laid back finish. Cabernet Cask Select
VDC Cabernet Cask Select is an American Single Malt whisky made from 100% malted barley. Aged for several years in first-fill bourbon barrels, prior to finishing in various Cabernet casks, including premium Cabernet Sauvignon barrels from France and California. Aromas of black cherry, cedar, apricot, and soft smoke meet flavors of blackberry, plum, candied ginger, and rich chocolate.

The Bond and Lillard brand has a long and storied history dating back to 1820, when brothers John and David Bond founded their distillery in what is now the city of Lawrenceburg, Kentucky. The distillery quickly gained a reputation for producing high-quality bourbon, and in 1869, the Bond family sold the business to Colonel C. C. Lillard, a prominent local businessman.

Today, Bond and Lillard Batch 2 Limited Edition Kentucky Straight Bourbon pays homage to the brand's heritage with a blend of carefully selected barrels of whiskey, each aged for at least 10 years. The whiskey is made from a mash bill of corn, rye, and malted barley, which gives it a complex and well-rounded flavor profile.

Chicken Cock Whiskey's newest limited release Chanticleer is fine Kentucky Straight Bourbon finished in premium French Cognac Barrels. Limited to only 32 barrels, Chanticleer celebrates the long time French-American friendship dating back to the 1700s and to Paris, Kentucky where Chicken Cock was founded in 1856. With vibrant notes of ripened peaches and delicate sweet cream the flavor bursts of vanilla and cherry with compliments of softened plums and candied dates. This is the second edition in a collectible series of limited holiday releases.

Founded in 1982 by German-born Jrg Rupf, St. George Spirits is one of the oldest craft distilleries in the United States. The distillery, housed in an old World War II airplane hangar on a former naval base on the edge of San Francisco, is home to Lance Winters, mad scientist and St. George's master distiller. Winters, who is widely-known for experimenting with different types of spirits, has a laboratory dominated by a 10-liter test still in addition to the glass beakers and graduated cylinders that cover every inch of counterspace. Next to the dusty chalkboards caked with equations for the conversion of sugar to alcohol and intricate diagrams of molecular structures are bottles of experimental whiskeys, vodkas and even an aging balsamic vinegar (it's 14 years old already). According to St. George Master Distiller Lance Winters, St. George Single Malt Baller Whiskey is a California take on the Japanese spin on Scotch whisky. It is crafted from 100% American barley, mostly made of two-row pale malted barley, the remainder lightly roasted. The whiskey is filtered through maple charcoal and matured for 34 years in ex-bourbon and French oak wine casks, before being finished in umeshu barrels, a Japanese style of plum liqueur crafted from 100% California-grown ume fruit. The distinctive label, which re-imagines the legend of St. George as a samurai was designed by Oakland artist Sylvia Solochek Walters, and calligraphy by Eri Takase of Takase Studios.

Introducing Conor McGregor's highly anticipated Irish Whiskey, Proper No. Twelve. The whiskey is produced by the mixed martial artist's company Eire Born Spirits at the oldest whiskey distillery in Ireland. McGregor and his Master Distiller Elder, previously of Guinness, took painstaking measures to bring the whiskey to fruition. Proper No. Twelve is triple-distilled blend of fine golden grain and single malt. It is aged in ex-Bourbon casks and bottled at 40% ABV. "I come from a place called Crumlin, in Dublin 12. It's a place dear to my heart. It's where I learned how to fight; it made me who I am today. It's a place I'm still very much a part of every single day of my life. So, that's where the name came from. It's proper Irish whiskey and twelve is my hometown," said McGregor. Launched September of 2018, McGregor's dreams of having his own Irish whiskey have been brought to life. "Growing up on the streets of Dublin 12, I learned the values of loyalty and hard work. I respect other Irish whiskeys, but I am coming in strong, with passion and with purpose. I am the founder of this company and I am going to give it my all." The brand will be donating $5 of every case sold to first responders around the world up to $1million annually as part of their "One For All" initiative.
