The GlenAllachie Speyside 2011 Single Cask Scotch Whisky is a fine expression from one of Speyside's esteemed distilleries. Crafted under the guidance of master distiller Billy Walker, it offers a rich aroma of honey, vanilla, and ripe fruits, with a hint of oak and spice. On the palate, flavors of honey, caramel, orchard fruits, and citrus zest intertwine, leading to a satisfying finish. This whisky showcases the depth and complexity of Speyside malt, making it a delightful choice for both seasoned enthusiasts and newcomers to Scotch whisky.

Set in the foothills of the Cairngorm Mountains, Fettercairn is a traditional distillery producing a full-bodied single malt. The picturesque distillery is one of the few active stills in the eastern Highlands of Scotland. This classic malt has been guided through a series of bourbon barrels.

After seventeen years maturing in a refill American oak cask, Fettercairn was selected by Murray McDavid's Whisky Creations Team for finishing in a fresh bourbon cask. The highly active American oak has given the Fettercairn spirit sweet vanilla and spicy notes. This showcases the unique character of the Fettercairn spirit, as well as the quality of the casks available at Murray McDavid's traditional Victorian dunnage warehouse a the Coleburn Distillery in Speyside.

The barrels chosen for this small batch have been though a rigorous selection process and match the depth and flavor profile needed to craft this highly rated bourbon.

Detailed Description

Bottled from hand selected barrels, Calumet has a customary mash bill of corn, rye and malted barley that offers a sweet, flawless finish. Glowing with butterscotch and soft oak, Calumet's harmonious perfection of wood and caramel is admirably balanced with complex flavors of light brown sugar and soft white pepper.

Tasting Notes

Nose: Vanilla with aged oak and light spice.

Palate: Elaborate layers of caramel, spice and smoky wood.

Finish: Deep, satisfying and engaging.

This expression showcases an evolution of the brand's portfolio. A way to educate the consumer as to what is possible when only one variable is changed. Staves to Casks to specialty finishes. Oak is the only factor. Our most recent addition is aged for 8 years in charred new American Oak barrels before it is finalized by the distillers at Clear Creek in their own apple brandy barrels, creating a bridge between our brand and theirs.

TASTE: Oaky and herbal, like barley tea sweetened with manuka honey. Tastes of pipe tobacco and red ale on the mid palate finish in a ghostly bitterness imparted by the barrel’s waning char.

AROMAS: Warm September sweetness on the opening. Reminiscent of pie crust, maraschino cherries, flat cola, and late Summer petrichor.

Buffalo Trace Distillery began experimenting with recipes and barrel treatments more than two decades ago. Currently there are more than 30,000 experimental barrels of whiskey aging in its warehouses. Each of the barrels has unique characteristics and experimental changes in the mash bill, types of wood, barrel toasts and more. Periodically, an experimental whiskey is bottled and sold on a limited basis.

The taste profile for each experiment is uniquely its own depending on the mash bill, wood type, barrel treatment, warehouse environment and age.

In the early 1800’s, New York produced more than half the young nation’s Barley and Rye and the Hudson Valley was the country’s breadbasket. With abundant high quality grain, local craft spirits flourished and over 1000 farm distilleries produced Whiskey and Gin reflecting the unique terroir of the region. In the 1930’s, Prohibition forced these distilleries to shut their doors and this wellspring of American spirits was left dry.

Hillrock Estate Distillery is changing this. Our mission is to produce the finest hand-crafted spirits made with our own grain, floor malted, craft distilled in our copper pot still, aged in fine oak and hand bottled at our estate in the Hudson Valley Highlands. Crowned by a fine 1806 Georgian house built by a successful grain merchant and Revolutionary War Captain and meticulously restored to its original beauty, Hillrock Distillery overlooks our rolling barley fields and the distant Berkshire Mountains. Floor malted, small batch distilled, and aged in charred American Oak, ex-Bourbon and Sherry Casks, this outstanding whiskey is made from Estate grown barley that is traditionally floor-malted & smoked in our on-site Malthouse with imported peat from Scotland for approximately 16 hours prior to distillation, creating a uniquely delicate and complex whiskey. Notes of crème brûlée and shortbread with caramelized orange and heather on the nose open to a balanced and smooth palate faint with citrus notes, but rounded with toffee, dried fruit, cinnamon and clove. The very long and slightly dry finish has a delicate, smokiness which lingers in this bright, honey amber whiskey.

James A. Miller, the founder of Chicken Cock Whiskey, took so much pride in his beloved chickens and his exceptional whiskey it led him to name his whiskey "Chicken Cock.” To this day we continue to take pride in the beautiful roosters that adorn our exceptional whiskey. As such, the fourth edition of Chicken Cock’s limited annual tin release is guided by a like-minded pride in roosters and good whiskey. The Onagadori rooster and Mizunara Oak from Japan inspired this year’s release.
The Onagadori rooster is not only stunning but also incredibly rare, with its distinctive long tail. Similarly, Mizunara oak is renowned for its rarity and difficulty coopering, taking up to two centuries to mature before it can be used to make whiskey barrels. It’s likely the Mizunara oak trees used in this batch were already growing when Miller began making whiskey in the 1800s.

Chicken Cock Whiskey’s Mizunara is our award-winning Kentucky Straight Bourbon Whiskey, enhanced by the unique character of first use Mizunara Japanese Oak finishing. Limited to only 10 barrels of total production.

Knob Creek Smoked Maple takes our original Kentucky Straight Bourbon Whiskey and blends in natural flavors creating a full-bodied taste with inviting maple notes that lift to smoke, complemented with rich vanilla and caramel. Inspired by Booker Noe's quest for big flavor, Smoked Maple is best enjoyed neat or on the rocks.

Alexander Bonthrone (1798-1890) established the distillery in 1829, when he was 31 years old and worked the stills for the next six decades, almost until his death in 1890 – making him one of Scotland’s oldest distillers. He held several civic titles: a Baillie to burgh magistrate, Justice of the Peace and Municipal Councillor. A committed Liberal, he advised Herbert Asquith, the local MP on whisky matters. Asquith later became Prime Minister 1908 – 1916 and stood against Lloyd George’s proposal of Prohibition in Britain.

Alexander’s younger brother, John Bonthrone (1799-1881), was described as “pioneer of the malt trade” one of Scotland’s first commercial maltsters. He was instrumental in the construction of Fife & Kinross Railway, with the station opening at Auchtermuchty in 1857.

During its stay in Singapore, the bourbon undergoes an intricate dance with the environment. The humid tropical air prompts the whiskey to expand and contract within the barrel, encouraging it to draw out additional flavors from the wood. This release takes us to Kilranelagh Estate near Baltinglass, County Wicklow. Situated amid rolling hills and picturesque features, the native Irish woodland on the estate has been managed carefully and in tune with nature by one family, the Westerholt for many years. When their great Irish oak had reached the end of their life cycle and were ready to be felled so the new oak could grow in their place, they knew they wanted their legacy to live on—and Midleton Very Rare Master Distiller Kevin O’Gorman knew that he had the perfect whiskey which would bring new life to these relics of a time gone by through finishing in this Irish oak.

Tasting Notes

Nose: Forest notes of fresh pine accompanied by floral honey and ground pepper at first, while sweet and tropical fruits can be detected amongst the herbal green tea and freshly mown hay. The use of the native Irish oak lends itself to creating distinctive aromas of smoked almonds with sweet vanilla and cinnamon that are complimented by the pot still savoury spices.

Taste: Robust and lively at first with notes of dried chilli flakes and red bell peppers which quickly soften, allowing notes of candied orange and crisp red apple to shine through. The oak continues to deliver sweet vanilla and cinnamon spice throughout, while the pot still spices add a hearty and full-bodied nature to this complex and intricate whiskey.

Finish: Wonderfully long finish which sees the pot still spices and oak linger, almost effortlessly, for an age.

Maker Notes: 

We create our Stronachie 10 Year Old with spirit from Benrinnes Distillery that we fill into bourbon casks and leave to mature for a minimum of 10 years. A small batch of around 20 matured casks are selected to be brought together and bottled at 43%, creating this perfectly balanced and seductive dram.

OUR PHILOSOPHY

In 1974, when A. H. HIRSCH first imagined his now legendary bourbon, he set the gold standard for thoughtful American whiskey. Today, HIRSCH continues to pursue whiskey as an explorer might consider uncharted territory. We believe the world is full of possibility, there’s always room for discovery, and craft is best balanced with experimentation. The Bivouac, pronounced “be∙voo∙ak,” refers to a temporary camp without a tent or cover. It alludes to a way of travel only meant for those who want to truly immerse themselves in nature. HIRSCH The Bivouac honors those adventurous spirits who are brave enough to take the road less traveled. 

The Bivouac combines two straight bourbons distilled in Bardstown, Kentucky - the world capital of Bourbon. Our custom mashbill is inspired by A.H. Hirsch Reserve 16-year-old legendary whiskey, providing balance to our make. 95% of the blend is distilled from mashbill of 74% corn, 18% rye, 8% malted barley, aged a minimum of 3 years. The remaining 5% is distilled from a high malted barley mash 72% corn, 13% rye, 15% malted barley, aged for a least 6 years, for added complexity. Bottled at 100 proof with approximately 160 barrels bottled with every batch. Enjoyed neat, on the rocks, or in your favorite cocktail.

Enjoy the following cocktail recipe:

1 L Wild Turkey 101
20 g cardamom seeds
150 g dried, unsweetened cranberries
3 sticks cinnamon

In a wide-mouthed glass infusion jar, place the Wild lurkey 101 and the cardamom seeds. Close and leave in a cool dark place for 1 day. Strain out cardamom and add the cranberries and cinnamon. Close and leave for another 2 days, agitating once per day. Strain solids and store in the original Wild Turkey bottle with proper labeling.

During the late 19th century, an overwhelming number of distilleries throughout the United States were still not aging their whiskey. As a result, some retailers would add juices and syrups to sweeten the whiskey, while others would add acid and tobacco to give their whiskey its signature, amber hue. In 1870, George Garvin Brown a young pharmaceuticals salesman from Kentucky saw the need for a consistently high-quality whiskey that would remain unadulterated after distillation. After saving $5,500, Brown and his brother opened the doors to J.T.S. Brown & Bro. Distillery and began distilling bourbon. Unlike other distilleries at the time, Brown aged his bourbon, which was named Old Forester, in oak casks and bottled it in a sealed glass bottle to ensure authenticity and quality. Since its introduction in 1870, Old Forester has been on the market continuously, even during Prohibition, when it continued to be sold for medicinal purposes. It is the only bourbon continuously distilled and marketed by the founding family before, during and after Prohibition. This historic recipe was acquired in 1940 by Owsley Brown I, Old Forester Rye features a mash bill of 65% Rye, 20% Malted Barley, and 15% Corn. This high proportion of barley yields a natural fermentation process, and a unique floral character, balancing the sharp, brisk spice of the rye grain. At 100 proof, Old Forester Rye plays beautifully in a cocktail but also stands up boldly on its own. Pick up your bottle today!
