In the early 1800’s, New York produced more than half the young nation’s Barley and Rye and the Hudson Valley was the country’s breadbasket. With abundant high quality grain, local craft spirits flourished and over 1000 farm distilleries produced Whiskey and Gin reflecting the unique terroir of the region. In the 1930’s, Prohibition forced these distilleries to shut their doors and this wellspring of American spirits was left dry.

Hillrock Estate Distillery is changing this. Our mission is to produce the finest hand-crafted spirits made with our own grain, floor malted, craft distilled in our copper pot still, aged in fine oak and hand bottled at our estate in the Hudson Valley Highlands. Crowned by a fine 1806 Georgian house built by a successful grain merchant and Revolutionary War Captain and meticulously restored to its original beauty, Hillrock Distillery overlooks our rolling barley fields and the distant Berkshire Mountains. Like our premier spirits, every detail refined, no expense spared, quality steeped in the tradition of 200 years of rich history.

Hillrock is proud to be one of the few “field-to-glass” whiskey producers in the world and the first USA distillery since before Prohibition to floor malt and hand craft whiskey on site from estate grown grain. Hillrock’s commitment to quality embodies the rich history of artisanal distilling in the Hudson Valley. By controlling every aspect of production from planting & harvesting heirloom grains, to smoking our malt, to crafting whiskies in our copper pot still, to aging in small oak barrels and hand bottling, we are able to create the highest quality whiskies reflecting the unique local terroir.

Floor malted, small batch distilled, and aged in charred American Oak, ex-Bourbon and Sherry Casks, this outstanding whiskey is made from Estate grown barley that is traditionally floor-malted & smoked in our on-site Malthouse with imported peat from Scotland for approximately 16 hours prior to distillation, creating a uniquely delicate and complex whiskey. Notes of crème brûlée and shortbread with caramelized orange and heather on the nose open to a balanced and smooth palate faint with citrus notes, but rounded with toffee, dried fruit, cinnamon and clove. The very long and slightly dry finish has a delicate, smokiness which lingers in this bright, honey amber whiskey.

This release takes us to Kilranelagh Estate near Baltinglass, County Wicklow. Situated amid rolling hills and picturesque features, the native Irish woodland on the estate has been managed carefully and in tune with nature by one family, the Westerholt for many years. When their great Irish oak had reached the end of their life cycle and were ready to be felled so the new oak could grow in their place, they knew they wanted their legacy to live on—and Midleton Very Rare Master Distiller Kevin O’Gorman knew that he had the perfect whiskey which would bring new life to these relics of a time gone by through finishing in this Irish oak.

Tasting Notes

Nose: Forest notes of fresh pine accompanied by floral honey and ground pepper at first, while sweet and tropical fruits can be detected amongst the herbal green tea and freshly mown hay. The use of the native Irish oak lends itself to creating distinctive aromas of smoked almonds with sweet vanilla and cinnamon that are complimented by the pot still savoury spices.

Taste: Robust and lively at first with notes of dried chilli flakes and red bell peppers which quickly soften, allowing notes of candied orange and crisp red apple to shine through. The oak continues to deliver sweet vanilla and cinnamon spice throughout, while the pot still spices add a hearty and full-bodied nature to this complex and intricate whiskey.

Finish: Wonderfully long finish which sees the pot still spices and oak linger, almost effortlessly, for an age.

During the late 19th century, an overwhelming number of distilleries throughout the United States were still not aging their whiskey. As a result, some retailers would add juices and syrups to sweeten the whiskey, while others would add acid and tobacco to give their whiskey its signature, amber hue. In 1870, George Garvin Brown a young pharmaceuticals salesman from Kentucky saw the need for a consistently high-quality whiskey that would remain unadulterated after distillation. After saving $5,500, Brown and his brother opened the doors to J.T.S. Brown & Bro. Distillery and began distilling bourbon. Unlike other distilleries at the time, Brown aged his bourbon, which was named Old Forester, in oak casks and bottled it in a sealed glass bottle to ensure authenticity and quality. Since its introduction in 1870, Old Forester has been on the market continuously, even during Prohibition, when it continued to be sold for medicinal purposes. It is the only bourbon continuously distilled and marketed by the founding family before, during and after Prohibition. This historic recipe was acquired in 1940 by Owsley Brown I, Old Forester Rye features a mash bill of 65% Rye, 20% Malted Barley, and 15% Corn. This high proportion of barley yields a natural fermentation process, and a unique floral character, balancing the sharp, brisk spice of the rye grain. At 100 proof, Old Forester Rye plays beautifully in a cocktail but also stands up boldly on its own. Pick up your bottle today!
