Since opening its doors in 2017, The Block Distilling Co. has focused half of its efforts on crafting premium whiskey. Batch No. 1 of their Four Grain Straight Whiskey, aged for a minimum of two years, debuted in December 2019, earning a Silver Medal at the San Francisco World Spirits Competition in March 2020.

Developed in collaboration with Country singer/songwriter Mark Taylor, Steel String Whiskey is a unique, limited edition spirit.

Steel String Whiskey is a California Bourbon Whiskey with the soft edges of Tennessee summer evening. Steel String Whiskey aged in New American Oak, finished in lightly toasted French oak with just a hint of honey. Layering a soft honey/butterscotch finish over deep intense dark chocolate, coffee and maple syrup, Steel String is a smooth and soulful luxury sipping whiskey.

Maker Notes

John J., Abraham, Joseph, and Isaac Bowman were Virginia militia officers in the American Revolutionary War. This hand-crafted bourbon whiskey is a tribute to their heroism. Our Bowman Brothers Small Batch Bourbon is distilled three times using the finest corn, rye, and malted barley, producing distinct hints of vanilla, spice, and oak.

Van Winkle Special Reserve is the perfect combination of age and proof. This sweet, full-bodied whiskey has been described by some as “nectar.” The 12 years of aging and medium proof seem to be just right in creating a very pleasant drink of whiskey. This fine bourbon can compete with any excellent cognac as an after-dinner drink. The overall impression is rich and deep.

A tale of passion

Nestled amongst the rolling hills of the Cotswolds countryside, the Cotswolds Distillery was born from a dream to produce delicious spirits in one of the most beautiful regions in the world.

From hedgefunds to HEDGEROWS
It all started back in 2014, when our founder Dan, a native New Yorker and whisky connoisseur, had moved to the Cotswolds after working in finance in London for many years. Seeking to leave behind that world and spend more time in the picturesque countryside of the Cotswolds with his family, it eventually dawned on him that he could combine his love of whisky with his desire to start a new business. A dedicated whisky fan, Dan saw the fields of golden barley around his house in the Cotswolds and had a brainwave ‘I suddenly thought, there’s barley all over the Cotswolds and nobody’s distilling it, let’s be the first!’ Having found a derelict site near his house, he set about building a distillery and a team to run it, and the doors of the Cotswolds Distillery opened in July 2014.

Launching our WHISKY
After three years of eager anticipation, in October 2017 we released our Cotswolds Signature Single Malt Whisky, the first whisky ever to be distilled in the Cotswolds and the one which remains at the heart of our DNA. In the years since its launch, we have expanded our range of single malt whiskies to include our Cask Collection comprising four unique cask expressions, a yearly limited edition Hearts & Crafts series drawing inspiration from the Arts & Crafts movement, and hand-picked single cask releases.

Aged for full term maturation in ex-peated quarter casks, our Peated Cask Single Malt Whisky is part of our Cask Expressions Collection. A delightful and moreish cask strength single malt with subtle hints of peat smoke on the palate which complement the vanilla notes from the oak and the fruitiness of our single malt spirit. Think 'smoky vanilla ice cream', as our distillers like to describe it!

CAREFULLY SOURCED INGREDIENTS

Malt: 100% locally grown, traditionally floor malted barley from the Cotswolds.

Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavors.

Water: Village water supply - filtered, softened and demineralized before use.

Wood: Ex-peated quarter casks from Islay, Scotland.

TASTING NOTES

NOSE: Vanilla with light charring and a touch of dried fruits and spice.

PALATE: Creamy peat smoke layered with light fruits and tannin-rich wood.

FINISH: Lasting finish of smoking embers, floral honey and woody sugars.

SERVING SUGGESTIONS

Best enjoyed on it’s own, but we don’t believe in rules when it comes to drinking whisky – sip this neat, over ice, in a cocktail – however you like!

Midleton Dair Ghaelach, which means quite simply, Irish oak, is the result of a six-year exploration by the Midleton Masters into using native oak to mature Irish whiskey. Led by then Master of Maturation, Kevin O’Gorman, the two prerequisites for the project were to source Irish oak in a sustainable way, viable for the long-term, and to craft a new and outstanding style of Single Pot Still Irish Whiskey. This whiskey is a range of releases that have been matured in barrels made from virgin Irish oak from particular forests across Ireland. The oak selected for each release influences this special whiskey with the true and unique flavour of Ireland. Its provenance told in each sublime sip, this is the tale of our native oak striking harmony with the classically rich and spicy Single Pot Still Irish Whiskey character. This is a whiskey like no other. The story of each bottle of Midleton Dair Ghaelach can be traced right back to the very oak trees that helped to create its refined and unmistakable taste. Midleton Dair Ghaelach is non-chill filtered, cask strength and natural colour. Distilled, matured and bottled by Midleton Distillery, Co. Cork, Ireland.

On the banks of the Salt River, nestled in the quiet Kentucky countryside near Lawrenceburg, Four Roses Distillery is a testament to American ingenuity and perseverance. Built in 1910 to resemble the architecture of California wineries, the distillery now listed on the National Register of Historic Places was one of six distilleries that were granted permission to operate during Prohibition. Following Prohibition, Four Roses Kentucky Straight Bourbon became the top-selling bourbon in the United States.In 1943, Seagram's bought the distillery and a decade later, discontinued the sale of Four Roses Kentucky Straight Bourbon. In 2002, the distillery changed hands again, and the new owner brought a renewed sense of purpose and vigor to Four Roses. Bottled at a solid at 104 proof, Four Roses Small Batch Select marks the first permanent addition to their portfolio of premium Bourbons since 2006. This extra proof and non-chill filtered Small Batch Select has a richer profile more robust profile than the signature Four Roses. Made from six of the ten: OBSV, OBSK, OBSF, OESV, OESK, OESF, each of the bourbons in this small batch selection are six to seven years old.

Our flagship bourbon is a balanced and delicate grain-forward whiskey made with sustainably grown corn, rye and lots of malted barley.

The whiskey is aged in new American oak barrels at char 3, allowing the flavors from the high malt content— honey, maple and nut— to complement the caramel, toffee and vanilla notes typical of bourbons. Try our staple offering neat or over ice to get to know it, then mix it into warm or cold cocktails to learn its many nuances.
