Barrell Bourbon Batch 034 is a blend of 6, 8, 10, and 15-year-old barrels. 8-year-old barrels driven by strong hazelnut and dark cherry notes lay a foundation enhanced by high-corn barrels showing browned butter and apricot. We mingled this first step for months before adding high-rye barrels carrying cinnamon and allspice. Finally, a vatting of 10 and 15-year-old barrels was added for earthiness and light tannin. The result is a robust and sophisticated bourbon.

Flavor Notes

The nose is deftly balanced between the exuberant fresh fruit of youth and the oxidized, dried fruit of maturity. This dynamic tension carries over to the palate where rich port notes are supported by bright Seville orange and cola.

Appearance: Copper with rose gold highlights

Nose: Eggnog and madeleines set the stage. Dry, hard cider integrates a range of florals such as elderflower and violet. Over time, the fruit transitions to a more cooked character, displaying dried apricot, candied orange peel, and mulled cider.

Palate: Blackcurrant jam and grape soda start the palate off with focus and depth. More classic notes of cinnamon donut, warm cola, and pecan pie emerge. Fresh notes of green grape and Seville orange are followed by umami, and salt.

Finish: A modest amount of sandy tannin sustains notes of shiso, licorice root, and fudgy peanut butter cup through a lengthy finish. There is an additional pop of iron and slate.

During Reconstruction, John David Willett the family patriarch began distilling whiskey at the Moore, Willett & Frenke Distillery, which was situated just outside of Louisville, Kentucky. In 1898, his son, A. Lambert Willett who was 15 years old at the time began following in his father's footsteps. Three decades later, Lambert, together with his son, Thompson, purchased a farm on the outskirts of Bardstown, Kentucky, and began construction of the Willett Distilling Company. While the Willett Distilling Company eventually changed its name to Kentucky Bourbon Distillers, the family tradition lives on Even Kulsveen, the current owner of KBD, is Thompson Willett's son-in-law. In keeping with family tradition, Pure Kentucky XO Small Batch Straight Bourbon Whiskey is an authentic Kentucky straight bourbon. Aged for about twelve years ("XO" meaning "extra old"), Pure Kentucky is bottled at an unusually robust proof of 107, yet is remarkably smooth and drinkable. Based out of Frisco, Texas, Devils River Whiskey was founded by Mike Cameron, co-founder of Rebecca Creek Whiskey, and president of the Texas Distilled Spirits Association. Their 90-proof bourbon is crafted from the pure Devils River spring waters. Texas Ranger John Coffee Hays named this great waterway the "Devils River" in 1840. The naturally-filtered limestone spring water is considered the purest water in Texas. In college, Cameron would take frequent trips to the feisty Southwest Texas river, the tributary of the Del Rio that would inspire the name of his new whiskey label. Devil's River whiskey is distilled using a signature method, in traditional copper pot stills designed for distilling complex, flavorful, dark spirits. The Bourbon is crafted from a high-rye proprietary blend of meticulously selected grains, giving the spirit its warm, golden notes. The grains are distilled with proprietary yeast strains designed to boost its bold flavors. The mash is then distilled in traditional copper pot stills and combined with the pure, iron-filtered, limestone-filtered spring water of the whiskey's namesake, before being aged in dark #4 charred oak barrels. This dark char enhance the bourbon's deep amber colors and bolster its sweet flavors. Chill filtered and bottled at 45% ABV you can expect smooth sweet flavors of oak, honey, and caramel.
