In college, Cameron would take frequent trips to the feisty Southwest Texas river, the tributary of the Del Rio that would inspire the name of his new whiskey label as well as provide a pure foundation for the whiskey. Devils River whiskey is distilled using a signature method, in traditional copper pot stills designed for distilling complex, flavorful, dark spirits. Devils River Barrel Strength Texas Bourbon Whiskey is the barrel strength, 117-proof entry in their lineup of whiskey. It's Devils River bringing you bourbon the way it was drunk originally, just like the pioneers would have it uncut and straight from the barrel. Its mash bill of 75% corn, 21% rye, and 4% barley makes for a bold, yet smooth sipper. There's pepper, rye, and oak on the nose, balanced by fruity and vanilla overtones, followed by sweet caramel, as well as more oak and spice on the palate.

AROMA: Sharp and sweet, with a strong floral character that swirls with hints of mint, rich tobacco leaf and vanilla. A touch of oak and pine provide a strong underpinning.

TASTE: Sharp at first, but softens quickly, with hints of oak, sweet corn and rye grain character. Spicy, with soft vanilla and light orange notes.

FINISH: Long, warm and slightly drying. Nice level of sweetness.

TASTING NOTES

ON THE NOSE, Cataleja is bright yet earthy with notes of brandied figs dusted with smoked paprika that build to sautéed apricots served on an olive wood spoon. Deeper breaths reveal sophisticated savory notes of sobrasada garnished with orange zest, mossy cherry cavendish, and venison jerky in browned butter.

ON THE PALATE, it is sticky with brooding notes of medjool dates stuffed with cashew butter, cacao nib, and ground clove which transitions to vibrant notes of eucalyptus oil and burnt lemon peel. Pineapple kebabs on matchstick and cinnamon skewers fade to a bittersweet finish of licor de hierbas and affogato made with cherry ice cream.

Barrell Bourbon Batch 034 is a blend of 6, 8, 10, and 15-year-old barrels. 8-year-old barrels driven by strong hazelnut and dark cherry notes lay a foundation enhanced by high-corn barrels showing browned butter and apricot. We mingled this first step for months before adding high-rye barrels carrying cinnamon and allspice. Finally, a vatting of 10 and 15-year-old barrels was added for earthiness and light tannin. The result is a robust and sophisticated bourbon.

Flavor Notes

The nose is deftly balanced between the exuberant fresh fruit of youth and the oxidized, dried fruit of maturity. This dynamic tension carries over to the palate where rich port notes are supported by bright Seville orange and cola.

Appearance: Copper with rose gold highlights

Nose: Eggnog and madeleines set the stage. Dry, hard cider integrates a range of florals such as elderflower and violet. Over time, the fruit transitions to a more cooked character, displaying dried apricot, candied orange peel, and mulled cider.

Palate: Blackcurrant jam and grape soda start the palate off with focus and depth. More classic notes of cinnamon donut, warm cola, and pecan pie emerge. Fresh notes of green grape and Seville orange are followed by umami, and salt.

Finish: A modest amount of sandy tannin sustains notes of shiso, licorice root, and fudgy peanut butter cup through a lengthy finish. There is an additional pop of iron and slate.

For the Willett family, distilling craft whiskey is a family tradition. During Reconstruction, John David Willett the family patriarch began distilling whiskey at the Moore, Willett & Frenke Distillery, which was situated just outside of Louisville, Kentucky. In 1898, his son, A. Lambert Willett who was 15 years old at the time began following in his father's footsteps. Three decades later, Lambert, together with his son, Thompson, purchased a farm on the outskirts of Bardstown, Kentucky, and began construction of the Willett Distilling Company. While the Willett Distilling Company eventually changed its name to Kentucky Bourbon Distillers, the family tradition lives on Even Kulsveen, the current owner of KBD, is Thompson Willett's son-in-law. Situated along the banks of the East River, Kings County Distillery is New York City's oldest operating whiskey distillery and the first distillery in New York City since Prohibition. Wedged between Williamsburg and Vinegar Hill, Colin Spoelman and David Haskell, the master distillers at Kings County, make hand-crafted bourbon and moonshine out of the 113-year old Paymaster Building at the Brooklyn Navy Yard. A typewriter the two distillers found on the sidewalk in Williamsburg is used to make the labels that adorn their clear, flask-like bottles, while a hairdryer (made by Revlon) is used to afix each bottle seal. Handwritten scrawls on a chalkboard keep track of different batches, and mesh laundry bags are used as strainers. Kings County Distillery's Moonshine is a corn whiskey made from 80% New York State organic corn and 20% malted barley. It is double distilled and reduced to a smooth, drinkable 80 proof. Bright with a sweet slap of corn, this is a very respectable take on a classic American whiskey.

THE STORY BEHIND THE NAME

“Dancing Daughters” was the nickname given to the fierce and unapologetic women of the 1920's who challenged societal norms.
