Founded in 1982 by German-born Jrg Rupf, St. George Spirits is one of the oldest craft distilleries in the United States. The distillery, housed in an old World War II airplane hangar on a former naval base on the edge of San Francisco, is home to Lance Winters, mad scientist and St. George's master distiller. Winters, who is widely-known for experimenting with different types of spirits, has a laboratory dominated by a 10-liter test still in addition to the glass beakers and graduated cylinders that cover every inch of counterspace. Next to the dusty chalkboards caked with equations for the conversion of sugar to alcohol and intricate diagrams of molecular structures are bottles of experimental whiskeys, vodkas and even an aging balsamic vinegar (it's 14 years old already). According to St. George Master Distiller Lance Winters, St. George Single Malt Baller Whiskey is a California take on the Japanese spin on Scotch whisky. It is crafted from 100% American barley, mostly made of two-row pale malted barley, the remainder lightly roasted. The whiskey is filtered through maple charcoal and matured for 34 years in ex-bourbon and French oak wine casks, before being finished in umeshu barrels, a Japanese style of plum liqueur crafted from 100% California-grown ume fruit. The distinctive label, which re-imagines the legend of St. George as a samurai was designed by Oakland artist Sylvia Solochek Walters, and calligraphy by Eri Takase of Takase Studios.

Jos. A. Magnus & Co. distillery was re-established in 2015, but the legacy of Joseph Magnus Bourbon dates back to the 1890s. After Magnus' great-grandson rediscovered an old bottle of his ancestor's whiskey amongst family heirlooms, the idea was hatched to revive the art of finished bourbon. Samples were taken from that 122-year-old bottle and the liquid was reverse-engineered. Joseph Magnus Bourbon is comprised of 12-year-old bourbon from MGP in Indiana and triple-cask finished over several months in Oloroso sherry, Pedro Ximenez sherry, and cognac casks at the Jos. A. Magnus & Co. distillery in Washington, D.C. The art of finishing and blending bourbon across the three casks imparts distinctive notes to the finished spirit. This inspired bourbon has rich and deep notes of vanilla, citrus, dark chocolate, brown sugar, and dark stone fruits which deliver a lingering, warm finish. Joseph Magnus Bourbon has received numerous accolades at the highest levels of competition: Double Gold in 2016 and 2017 in both San Francisco World Spirits Competition and New York World Wine & Spirits Competition and Gold Medal, Best in Class Whiskey 2016 at ADI, to name a few. The Joseph Magnus Murray Hill Club expression is a recreation of Magnus' pre-Prohibition spirit that employs the same techniques as he would have used more than a century ago. It's a blend of 18 and 11-year-old bourbon with 9-year-old light whiskey that was aged in used barrels. Bottled at 103 proof, this expression has won the coveted Double Gold Medal at the San Francisco World Spirits Competition in 2019.

In 1876, John D. Willett one of Kentucky's original bourbon aristocrats transferred his interest in the Willett & Frenke Distillery to his sons-in-law, Benjamin Mattingly, and Thomas Moore. Mattingly and Moore continued to operate the Willett & Frenke Distillery together until 1881 when Mattingly finally sold his stake in the company to a group of investors. Within a few years, Thomas Moore acquired complete control over the distillery and eponymously renamed it. Moore would continue to operate the distillery for another five decades until he was ultimately forced to close his doors at the onset of Prohibition. Today, the Barton 1792 Distillery operates on the same site as the historic Tom Moore Distillery and continues to use the same methods that Moore used over a century ago when distilling his own bourbon. 1792 Small Batch Kentucky Straight Bourbon Whiskey is made from a mash of corn, rye, and malted barley. While the use of corn in the bourbon's recipe adds classic notes of buttered bread, biscuits and roasted nuts, the heavy use of rye in the bourbon's mashbill yields a more complex and full-bodied whiskey. After the grains are harvested, they are mashed and fermented before being distilled through a copper-pot still. In 1897, the Bottled-in-Bond Act revolutionized the quality of American whiskey. Carrying on that tradition, this well-aged bourbon from barrels all filled during the same season was bottled at exactly 100 proof for a bold taste and lingering finish - a testament to the Bottled-in-Bond Act established over a century ago.

"When it comes to barrel aging," says Ken Pierce, Barton 1792's master distiller, "it's just like real estate location, location, location. That's why 1792 ages in Warehouse Z up there on the bluff." In addition, during the maturation process, Pierce samples each cask of bourbon as it rests to determine when the bourbon has reached its peak of maturity. "Quality in, quality out," says Pierce, who has over two decades of experience at the distillery. 1792 Small Batch Kentucky Straight Bourbon Whiskey, is named after the year that Kentucky achieved statehood in the United States. John Emerald Distilling Company is a family-run small-batch craft distillery from Opelika, Alabama that has been operational since 2014. It is the first legal distillery that opened in the state since the end of the Prohibition era, a year short of a hundred years later. It all started when John and his son Jimmy Sharp, both homebrewers, started looking into opening a brewery. Finding the market to be oversaturated, they turned to craft distilling instead and started rigorous training and education. They came upon an old cotton warehouse in Opelika, a small and business-friendly town where the mayor welcomed them with open arms. The distillery now operates on 8 thousand square feet and has a tasting room that is open for visitors. They produce several spirits using their 350-gallon hybrid pot, each product named after one of John's and Jimmy's ancestors their (grand) father John Emerald Sharp, a successful businessman, being the distillery's namesake. The spirits include award-winning gin, vodka, rum, and a single malt. The latter John Emerald Alabama Single Malt Whiskey is at the very core of their lineup and is the only one to share the name with the distillery itself. Then there's Hugh Wesley's Gin, Elizabeth Vodka, Spurgeon's Barrel Aged Rum, and Gene's Spiced Rum. This expression in John Emerald's Purveyor's Series Double Wood is a bourbon whiskey that is aged in new American oak barrels. But there's a twist, the barrels are filled with wood chips. In this case, toasted American white oak chips are used. The unique way of finishing the whiskey ensures that an extraordinary amount of liquid comes into contact with the wood, imparting the nicely-balanced sweet bourbon with an extra layer of oakiness.
