Full of sweet, fruity character, DOOCOT is light, intensely fruity, floral and complemented by a rich colour coming from the high quality bourbon casks it has matured in. Comprising of the same liquid as our first release Dream to Dram, but undisturbed for a longer oak maturation allowing complexity to develop while maintaining balance, we hope you find the core Kingsbarns spirit still remains firmly within.

Master Blender Isabella Wemyss has carefully selected a combination of Ex-Bourbon and STR (shaved, toasted and re-charred) ex-Portuguese red wine casks to mature DOOCOT.

About Doocot

Inspiration for the name of our new Single Malt came from the heart of our distillery at Kingsbarns. During the renovations of the old farmstead that began in 2013, efforts were made to restore, not replace, many parts of the historic building. One of these was its oldest space: The Doocot.

Scottish for Dovecot, the Doocot sits at the centre of our Fife distillery and holds our first fill cask from March 2015. As a space that once acted as home for doves and pigeons, it has now transitioned to a home for our story, but with its history still very much intact. Our new flagship single malt has enjoyed a longer maturation in cask, maintaining balance and developing complexity. Purchase a bottle today and become a part of that story.

VIRGIL KAINE GINGER INFUSED BOURBON

Our original spirit has its own original spirit. This small batch creation puts a fresh twist on classic Southern bourbon. Starting with our full-bodied Lowcountry libation, we add a touch of heirloom ginger harvested just thirty miles from where it’s bottled. A single sip reveals a hint of vanilla with an ultra-smooth, well-balanced taste and sweet finish only found south of the Mason-Dixon Line.

TASTING NOTES

Aroma: SMOKE rises with a cloying sweetness. Intense, pungent and aromatic, a distinctive farmyard scent drifts, along with a crunchy aroma, like CREOSOTE or tarry rope. A splash of water disturbs the vapours and DARK CHOCOLATE CREAM billows, laced with a ribbon of SMOKED ARTICHOKE.

Taste: Ardbeg’s UNTAMED darker flavours and notes have risen. A burst of bittersweetness SURGES, disturbing ashy coal DUST and casting a HAZE of CARDAMOM, peppermint and COFFEE grits. CLOUDS OF dark chocolate and mentholic eucalyptus ROLL IN, OBSCURING the fruit and floral notes usually found at the heart of ARDBEG. Wisps of ANISEED twists, CINNAMON balls and antiseptic lozenges FLOAT on the palate.

Finish: The aftertaste lingers LONG and BOLD, with an almost anaesthetising sensation.

Bruichladdich Black Art 11.1 Islay Single Malt Scotch Whisky 2023

Black Art 11 has been created using pre-renaissance casks from Bruichladdich Distillery (pre-2001) which have been safeguarded and maturing on Islay for 24 years.

An enigmatic alchemy which relies on nature, craftsmanship and the quiet passing of time, what happens inside each cask under cover of darkness in the depths of the warehouse remains a mystery. Black Art 11 is a testament to this elusive mastery. Using artisanal techniques passed down from one generation to the next; the spirit is pulled exclusively from Bruichladdich distillery pre-renaissance casks which have been patiently maturing on our island home for almost three decades. The finite single malt is created in secret by our head distiller, Adam Hannett, with the recipe only known to him. Putting our trust in Adam, he is given creative freedom to bring this incredible whisky to life. Using pre-renaissance Bruichladdich stock, Black Art 11 is unique and unrepeatable. A chance to experiment, take risks and push the boundaries of possibility; only Adam knows what has gone into creating the precious 24-year-old single malt. The barley and cask types are undisclosed, with the final recipe a mystery. Matured in the finest oak, this eleventh edition of Black Art showcases the captivating marriage of faith and ingenuity and we invite you to put your trust in us.

TASTING NOTES

COLOUR: Rich Tawny.

NOSE: Dried fruits, leather and a hint of citrus immediately open on the nose, followed by a fresh sea breeze. Sweet fruit and floral notes come to the fore, with poached pear, delicate rose hip syrup, black cherry, and sweet mango. The complexity of the single malt is apparent as the aromas continue to open, with cedar and mellow oak complemented with butterscotch, praline, honey, and a hint of cinnamon. Warming oats are balanced with fragrant notes of rose and pear drops.

PALATE: Dried fruits, dates, raisins, barley sugar, leather and oak open on the palate, followed by butterscotch sweetness, praline and hints of coconut and fresh citrus. Sweet apple and pear are married with toasted oak, warming wood spice, dark plums and marzipan, with layers of depth opening with each sip.

FINISH: Oak and dried fruit come to the fore, with Christmas cake notes of sultanas, fig, marzipan, and lingering honey adding to the beautifully rounded finish.

Dewar's Double Double 27 Year Old Blended Scotch Whisky 375 ml

In 1846, John Dewar began blending the finest whisky he could source in Scotland and bottling it with his own name on the label. Within a decade, Dewar was supplying whisky to bars and hotels throughout Scotland. By the turn of the century, the brand had expanded to become one of the best selling whiskies in the world and today remains the best-selling Scotch whisky in the United States. By the end of the 19th century, the famed Dewar's Aberfeldy Distillery became operational. Situated by the Pitilie Burn, the small river has served as a source of pure water to this day. After the malted Scottish barley is brought in, it is left to ferment for an extended period of time, before being distilled in tall pot stills. The Aberfeldy single malt that is produced here remains the heart of Dewar's blend today. The premises are open for tours and cask tasting with a whisky lounge and cafe on hand. Dewar's whisky is crafted by blending together "the rarest of rare whiskies from across Scotland." The backbone is that 27-year-old single malt whisky that is crafted at Aberfeldy Distillery. Once the 27-year-old is married together with other whiskies, the resulting blend is allowed to rest again in oak casks. This secondary maturation process "is a marriage made in heaven ensuring our whiskies are even smoother and creamier," said Dewar's retired master blender Thomas Aitken. It's this great foundation and the signature "double aging" process that have made Dewar's the most awarded blended Scotch whisky in the world. Where the "double aged" series ends, the innovative and premium Double Double picks up. Created by Dewar's Master Blender Stephanie MacLeod, this 27-year-old expression takes the matured single malt and grain whiskies and blends them, then lets each style age separately. Afterwards, both are blended together and re-casked for an additional month. In the end, the liquid is transferred to Paolo Cortado sherry casks for a round of finishing, before being bottled at 92 proof. The 4-sided bottle reflects the 4 stages of the aging process.
