PRODUCTION PROCESS

Mezcal CONVITE is a high quality artisanal mezcal. The thorough selection of wild agaves and the careful distillation adopted from ancient methods give our mezcals their distinctive flavors and luxurious tastes. Made 100% in the traditional way, without any accelerators or added flavors, using the highest quality ingredients. The production is made in small, exclusive lots, with a superb flavor. ESPADÍN-MADRECUISHE

Semi-dry and mineral, with citric tones and a sensation of herbal freshness. It is an enjoyable and unmatched combination in which the Espadín agave appears to hold back its attributes in order to highlight the flavour of the Madrecuishe.

 A Reposado Tequila is the first stage of

Stellum Bourbon finds its flavor in the tension of three Indiana Bourbon mash bills, two of which are high-rye, with the third being almost exclusively corn. Older barrels from both Kentucky and Tennessee are folded in slowly, through a multi-step blending process. This brings added layers of depth and complexity, ultimately allowing us to round out a uniquely Stellum flavor profile.

Barr Hill Gin is our ode to the hardworking bees of the Northeast. Each batch is distilled in our custom-built botanical extraction still. Plantation O.F.T.D. Rum is our take on that classic style of overproof rums. And not just ours: to join him on the quest to get the blend and the proof just right, Alexandre Gabriel scoured rum joints around the world to find six grizzled old salts who knew which end of a rum bottle was which.

Together they came up with this blend of Guyana, Jamaica and Barbados rums, bottled at 69 percent alcohol.

O.F.T.D. officially stands for Old Fashioned Traditional Dark but if you ask any of the seven collaborators who were in the room when this blend was born, they’ll tell you it really stands for something else that was exclaimed when the winning rum was tasted…

TASTING NOTES

Nose: Intense and very precise notes of coffee, orange, plum, jam and truffles.
