Ballyhoo begins as a sourced irish whiskey with a mash bill of 93% corn imported from france and 7% malted barley that we bring to our distillery to further age and finish in used port barrels from portugal. this second step softens the grain whiskey and rounds out the flavour into an easy sipper. we do not add artificial colour or caramel, so the product remains quite light in appearance, but with some reddish undertones from the port.

Tasting Notes

First Aromas: The nose is light and soft with gentle vanilla and almond mixing with some warming spice and sweetness.

On the palate: Notes of vanilla with some hints of spice and subtle wood from the bourbon casks, the additional port finishing adds a smoothness to the whiskey.

The finish: It lingers long, warm and ever so smooth.

TASTING NOTES

AROMA: Fruit-led introduction with fresh citrus notes of mandarin and candied apple, while dustings of white pepper with grated nutmeg deliver subtle levels of spice that complement the rich and velvety tones of hazelnut chocolate and toffee. Carefully balanced, the charred oak works in tandem with the elegant grain character, elevating the delicate and nuanced fresh floral tones with the addition of sweet vanilla and warming toasted wood aromas.

TASTE: Caramelised red apples and orange zest with luscious, sweet, and decadent waves of crème brûlée that seamlessly intertwine with the pot still spices and cereal undertones, creating an intriguing and wonderful medley of fruits and spices.

FINISH: Rich and lasting finish in which the grain and pot still spices are the first to softly fade allowing the oak, after years of carefully maturing the spirit, to have the final say.

The oldest permanent release in the Redbreast family, 27-Year-Old is a Single Pot Still Irish Whiskey comprising exclusively of Pot Still whiskeys that have been triple distilled, matured in the finest bourbon, sherry, and ruby port casks for no less than 27 years, and left untouched.

Taste
Incredibly rich in texture with a luxuriously fruity introduction. Ripe red-fleshed plums, black cherries, and summer berries are balanced by the prickle of a hint of chili oil. The taste evolves as cherry menthol introduces vanilla and cinnamon sweet spices combined with red pepper, nutmeg, and toasted oak for an intriguing complexity.

A satisfyingly long balance of ripe fruit and wood spices, worthy of a journey of nearly three decades.

Created by the marriage of meticulously selected casks, both Bourbon and Port, this single malt Irish whiskey is a small piece of history, unique and rare. Batch No. 3 is a limited release of 13,000 bottles at 46.5%. It is a marriage of Bourbon and Port casks. A burst of blue/black fruits on the nose forms a tart almost jam like sweetness on the palate with some subtle notes of citrus peels, the liquid coats the mouth like warm honey, mixed berries and marmalade linger on the tongue.

Situated in the province of Munster, the Cork Distilleries Company was founded in 1877. Two years after it opened its doors, the distillery began bottling its first whiskey, and in 1882, the company hired a young Corkman named Patrick J. O'Flaherty as their salesman. The classic charmer spent 4 decades selling his whiskey in Ireland. Known for his easygoing personality and generosity, he would ensure everybody around him always had a great time and was always buying rounds for the patrons in the pubs he visited, becoming a universally-loved character. The whiskey's original name was soon forgotten with everybody was starting to order "Paddy whiskey". In 1912, the distillery officially renamed the whiskey Paddy Irish Whiskey in his honor. Today, Paddy Old Irish Whiskey is made from the finest malted and unmalted barley harvested from the East Cork countryside, together with water sourced from river Dungourney. It's a triple-distilled blend of grain, malt, and pot-still whiskey, each component contributing an integral part to the smoothness of the finished spirit: a floral sweetness from the grain, toasted biscuit from the malt, and creaminess from the pot-still. Light, balanced, and pure, it has a rich golden color and deep spice, honey, and vanilla notes. It is matured in 3 different oak casks, before being bottled at 80 proof.

In 1805, the Mitchell & Sons Wine Merchants Company was established in the heart of Dublin, Ireland. By the turn of the 19th century, the Mitchells sold a range of Irish whiskeys under the name "Spot." This name originated from the company's practice of marking casks of different ages with a spot of colored paint. As a result, Mitchell & Sons sold whiskies named Blue Spot, Green Spot, Red Spot and finally Yellow Spot, which was last seen in the mid-to-late 1960s. Today, Yellow Spot Single Pot Still Irish Whiskey continues to be crafted in the heart of Ireland. The whiskey is made from malted and unmalted barley, which are milled and mashed before being triple-distilled through a traditional pot still. Following distillation, the whiskey is matured for 12 years the Yellow Spot brand was always aged for this amount of time in a combination of American Bourbon casks, Spanish sherry butts and Spanish Malaga casks. The inclusion of the single pot still spirit aged in Spanish Malaga casks gives Yellow Spot its famously sweet character. After the various casks have been blended together, Yellow Spot Single Pot Still Irish Whiskey is bottled at 92 proof, just a bit higher than other traditional Irish whiskies which are bottled at 90 proof. "Pot Still Whiskeys define the traditional flavor character of Irish whiskey and we have seen a renewed interest and growth in the category over the last few years," says Brian Nation, the master distiller at Midleton Distillery, which makes Yellow Spot Whiskey. Yellow Spot Single Pot Still Irish Whiskey has an aroma of red bell peppers, nutmeg, green tea and sweet peaches from the Malaga casks. On the palate, there is a honey sweetness accented by cloves, baked apples, milk chocolate, coffee and creme brulee. The finish is dry and complex, with notes of toasted oak, red grapes and barley. Yellow Spot Single Pot Still Irish Whiskey was released in the United States in 2015 in extremely limited quantities. The whiskey was named Irish Whiskey of the Year by Whisky Advocate in 2016, in addition to winning Gold in the Wizards of Whiskey competition that same year.

Situated in the Midlands region of Ireland, the city of Tullamore was ruled for centuries by Clan O'Molloy. On May 10, 1785, a hot air balloon crashed into the city and began a fire that destroyed over 100 homes, making Tullamore the site of the world's first known aviation disaster. Following the accident, the city adopted a phoenix (a phoenix is a mythological Greek bird that is reborn after it dies) rising from the ashes as its coat of arms, a symbol of its resilience and recovery. Tullamore DEW Distillery was founded within 50 years of the accident, and is situated at the very site where the hot air balloon struck a smoking chimney, which started the fire. Tullamore DEW Irish Whiskey is made from three different grains, including malted barley, unmalted barley and corn. Once the grains are harvested, they are milled and mashed with hot water before being fermented in wooden washbacks. During fermentation, the grains' sugars are converted into alcohol, creating a strong yet sour beer called wash. The wash is then triple distilled through three copper-pot stills: a wash still, a low wines still and a pot still. Through each distillation process, the alcohol content and flavors of the whiskey are intensified. Following distillation, Tullamore DEW Trilogy Irish Whiskey is aged for 15 years in a combination of ex-bourbon, ex-Oloroso Sherry and special ex-rum casks, making this both the oldest whiskey ever released by Tullamore DEW and the first time the distillery has used rum casks in such a way. As a result, Tullamore DEW Trilogy has a rich aroma filled with tropical fruits, mixed nuts, tannins and oak. The palate transitions to flavors of chocolate fudge and whipped cream, and leads to an incredibly long and intense finish. Tullamore DEW Trilogy Irish Whiskey shows the power of three in many ways three generations of the Williams family, three types of Irish whiskey (malted barley, unmalted barley and grain), the distinctly Irish process of triple-distillation, the unique crafts of distillation, blending and maturation, and aging in three different types of casks.

In addition to being very highly-regarded, the Barton house is unique in that it's named after famous Irish winemaker Thomas Barton, whose descendants still run Chteau Loville Barton today. Green Spot Chteau Loville Barton Single Pot Still Irish Whiskey has an aroma of wild raspberries, French oak, gingerbread and banana that gives way to notes of vanilla, green apple, lemon peel, honey and marshmallow on the palate. The finish is smooth with a pleasant chewiness, with hints of cereal, wine and Christmas spice. Green Spot Chteau Loville Barton Single Pot Still Irish Whiskey is a limited-time expression of the whisky Jim Murray author of the Whisky Bible called, "unquestionably one of the world's greatest whiskies."
