WINEMAKER NOTES

Grapes are picked at night followed by hand sorting before the fruit is gravity fed to tank for a long natural fermentation using an overall average of 8% whole clusters in the final blend. Regular punch downs result in a wine of great structure and focus with a distinctive spice character of earth and clove which is prevalent in this area of the western Sonoma Coast. The 2021 Pinot Noir is fresh and lively with perfumed black raspberry and cherry aromatics wrapped in rustic forest floor notes. Ruby in color, it presents a deep purple hue. Our Unfiltered Cabernet Sauvignon 2018 boasts aromas of red wild cherry with tobacco notes, followed by dark fruit and spices. The palate is structured yet refined. The density and volume on the midpalate complement the structure, making for a beautifully complex wine. Very long finish.

In 2021, the overall weather pattern was cooler than 2020 with bud break later than the five-year average and bloom earlier than average. Summer brought more wind than we normally experience in Napa Valley creating a more mild overall season into fall that provided a long hang time prior to harvest. The 2021 vintage is marked by high quality fruit with exceptional color and tannin. The concentration, low yields, and small berries were reminiscent of the 2015 vintage.

Winemaker Notes

The wine was aged for sixteen months in 48% new oak (50% French, 50% American) and 52% older French and American oak barrels before bottling. The coopers included Ermitage, François Frères, Demptos (French & American), Canton (American), Dargaud Jaegle, Orion and Taransaud. The 2021 Napa Valley Cabernet Sauvignon has classically expressive aromatics of ripe currant, tobacco, leather, pencil shavings and dark chocolate notes. A rich, fleshy wine that is full-bodied, dense and layered with dark plum, blackberry and savory spices. It is a vibrant and alive offering with acid structure and depth for long-term cellar aging.

Maker Notes

These barrels are hand selected to be in our single barrel program and sought after by bourbon enthusiasts. We estimate that 5-8% of all the barrels we taste are of single barrel quality.  These barrels typically have a unique and distinct flavor profile, as the wood from each barrel imparts its own characteristics into the whiskey.

The Fighting 69th is proud to introduce its new Fighting 69th Single Malt Irish Whiskey, which is a new limited release expression. This new whiskey is made from the finest malted barley, fermented and triple distilled in copper pot stills. Enjoy the rich complexity that is achieved from gentle aging in a combination of seasoned bourbon, rye, port, sherry, and rum casks. Savor the notes of toffee and vanilla, which give way to aromas of stone fruit and chocolate, with a finish of honey and cinnamon.

Wilderness Trail Rye Whiskey, crafted in Kentucky, showcases meticulous attention to detail and a balanced flavor profile. Made from a mash bill of rye, corn, and malted barley, it offers a smooth and complex taste with notes of caramel, vanilla, and oak, complemented by subtle hints of spice. Svensk Ek is a rare gem when it comes to character. The powerful Swedish oak casks and all-natural Swedish ingredients bring notes of dried ginger, sweet caramel and spicy oak.

TASTING NOTES

Nose: Fruity aroma of pear, apricot, and zesty citrus. Sweet tones of vanilla fudge and honey. Spicier tones of ginger and pepper.

Taste: The taste lives up to the promise of the aroma with pear, citrus, and dried ginger. The sweet tones now lean towards caramel, sweet almonds, and slightly bready notes. The taste also reveals spicy oak influences.

Aftertaste: The aftertaste is long and warming. Sweet milk chocolate balances the robust oak influences and the spicy pepper and ginger.

Mackmyra Björksav Swedish Single Malt Whisky is a unique expression from Mackmyra Distillery, Sweden's first whisky distillery. It features birch sap in its production and is aged in a blend of American oak, Swedish oak, and birch sap wine casks. Team 144 Commemorative Bottle is 90 Proof and has been aged more than 2 years (30 months) in Owensboro, Kentucky. The Bourbon is rich in color with an amber hue and made with all Kentucky-grown corn, majority coming from Daviess County. The mash bill consists of 70% corn, 21% winter rye, and 9% malted Two-Row and Six--Row barley. The higher rye content results in a bourbon with warming spice notes on the nose and palate. Additional aroma notes to look for include cinnamon, dried cherry, and a light leather.

Taste: Notes of cinnamon, vanilla, caramel and chocolate mint.

Finish: Long and dry with oak and pepper and a caramel loop.

The 2021 Sonoma Coast Chardonnay is comprised of fruit sourced primarily from the Bob's Ranch Vineyard, as well as the Sangiacomo Vineyard. Bob’s Ranch Vineyard is characterized by its proximity to the Pacific Ocean. Coastal breezes along with low rolling hills and morning fog define this cool climate. The Sangiacomo Vineyard is a certified sustainable vineyard, first planted in 1969. The block we source from is entirely "Old Wente" field selection. The proximity to the Pacific Ocean and San Pablo Bay makes this site ideal for growing Chardonnay.

2021 Sonoma Coast Chardonnay opens with vibrant aromas of lemon zest, fresh apple, crisp peach, and vanilla cream. The palate is round and flavorful, finishing with bright acidity and a note of spicy ginger.

Maker Notes

This wine incorporates choice fruit from vineyards throughout Napa Valley, from our organic estate vineyards to small rugged hillside sites of our partner growers. By blending these various lots, we create a rich panorama on the palate, a landscape of complexity and character that clearly depicts Napa Valley.

Our 2019 growing began with ample rainfall and lingering soil moisture. A warm, extended summer saw very few extreme heat events, with foggy mornings setting the stage for vibrant and expressive wines. The long, relatively mild finish to the season helped to preserve freshness and balance in the fruit with hang time that allowed for impressive color, structure and tannin. This is an exceptional vintage defined by well integrated acidity, dense texture, and great depth.

TASTING NOTES

Our 2019 Napa Valley Cabernet is expressive with aromas of dark cocoa, red berry, and dried herbs. The palate is lush and fruit-forward with hints of spice and leather. The tannin is polished—fully integrated and balanced through the lengthy finish.
