Ix is an organic tequila distilled in the valley of El Arenal, Jalisco. The agaves are cooked in clay ovens before fermentation and distillation which include both the fibers and liquid in both steps of production, an unusual thing to do when making tequila. As with all products in the Greenbar Collective, for each bottle sold a tree is planted.

A distinctive tequila distilled by Melly Cardenas at her small distillery in the highlands of Jalisco. Made from mature agave cultivated at the height of it's sugar production, it is baked within 24 hours of being cut, spends 24 hours in earthen ovens, and is rested for 24 hours before crushing. It is naturally fermented, twice distilled, and rested in reused American whiskey barrels for 8 months. Bottles are hand blown with recycled glass in Guadalajara.

Nose: The nose has an aroma of freshly-laid pavement with stewed agave notes.

Palate: La Gritona is not too sweet, no vanilla, chocolate, or pepper, just refreshing and vegetal agave.
