Banhez Pechuga de Pavo  is comprised of 100% Espadín distilled with indigenous seasonal fruits and raw turkey breast placed in  a copper still outfitted with a refrescadora. This unique single distillation technique imparts deliciously balanced fruit aromas, while preserving the agave’s roasted flavors. The addition of the turkey, along with being culturally  significant, adds  a spectacular textural complexity into this special spirit. Versions of “distilados con pechuga” has been consumed across Oaxaca on special occasions for centuries.

The El Buho Jabali Mezcal is a very small production of 738 liters. The jabali agave is notorious for being the most difficult agave to work with due to the foam it produces and the lower sugar content. It requires three to four distillations. This agave is named after the wild boar because of it’s spikey, curved leaf resemblance to the animal. This production was also aged in stainless steel for eight months.

This wine is produced primarily from the terroir of “La Crau”, with the blend primarily Grenache reinforced by a strong proportion of Syrah, and complemented by Mourvèdre, Counoise and Vacarèse. The red wine of Château de Nalys is intense with a deep, dark, ruby red colour. A third of the wine is aged for 18 months in large oak vats and oak barrels. With aromas of small black fruits and spices, on the palate it has silky tannins and a powerful, long finish. This Grand Vin from Châteauneufdu-Pape is a perfect illlustration of the nobility and complexity of the wines of Château de Nalys.

This special batch of mezcal is made exclusively from Espadín agave planted 10 years ago by the Jimenez Mendez family in their field (hornos), in Santiago Matatlán, Oaxaca. After nine years the agave sprouted quiotes, which were cut, and left in the field for one year before harvesting. The resulting mezcal is a coveted family treasure called “PURO CAPÓN.”

El Buho Especial brings delicious, limited edition mezcals made from rare and wild agaves. This tepeztate expression comes from multiple batches of the rare agave, which grows wild off the mountainsides. The plant ages 25-30 years before harvesting and requires a 3rd distillation due to its low sugar content. Made only in limited edition batches, savor the tropical fruit, sandalwood and exotic peppers notes.

Glen Scotia Victoriana has been bottled at cask strength and finished in heavily-charred oak casks. Victoriana has notes of richly-spiced fruit, vanilla and oak throughout the palate, followed by a gently smoky finish.

The raised imagery of desert sage, the Nevada state flower, can be found on the Silver Dollar bottle as well as the amber Smoke Wagon bottles and in the label of the Straight Bourbon. The Morgan silver dollar (replicated on the bottle's face) was minted in Carson city, the state capitol. It is the perfect symbol and name for our vodka due to its Nevada significance and the fact that silver dollar vodka is silver filtered.

Smoke Wagon? Does that mean it's smokey? Smoke Wagon is actually old west slang for the 1873 Colt single action army revolver or "the gun that won the west". Our logo stamped in wax consists of two crossed Smoke Wagons over the state of Nevada. Below it is our motto and a quote from Seneca, bibamus moriendum est. The literal translation is "drink, for we must die" but the meaning is more along the lines of, drink and enjoy today because we won't be around forever. We can only assume Seneca meant to drink responsibly, of course.

Comprised of 100% Tepeztate agave (which can take up to 25 years to mature), this rare bottling of this unique agave species yields a flavor rich in smoke and terroir driven earthiness, with a green pepper vegetal nose, soft green apple fruitiness, and notes of citrus zest.

Spring Run is a variation of Wolves signature blend, consisting of (1) whiskey distilled from Stout craft beer, aged in French Oak for 10 years, (2) whiskey distilled from Pilsner beer, aged in New American Oak for 6 years, (3) a Rye selected for its back palate spice, and (4) a single malt American whiskey distilled from two-row malted barley and aged in used French Oak for 10 years

This limited-edition collaboration offers a refined and incredibly smooth tequila, aged in French Oak Napa Valley Cabernet wine barrels and finished in fine Spanish Sherry-Fino casks. With aromas of spicy pepper, dried fruits, and clover honey, Rare Hare Double Barrel Añejo has a long, mellow and easy to drink finish. Handcrafted in Mexico by skilled artisans, a crystal glass bottle accentuates the rich hues of our aged tequila.

The sustainably sourced and locally fabricated wooden box is laser etched to reveal the details of this special añejo. It has a clear front sliding door, with the collaborative branding and story etched into each panel. Each handcrafted wooden presentation box of the only 1,530 bottles.

This year’s annual special release celebrates Coy Hill which is the highest-elevated rolling hill on the Jack Daniel Distillery property.  This rare high-proof release honors the art of the whiskey-making process, as well as showcases how a barrel house location along with the extreme weather and maturation conditions produces an exceptional whiskey flavor.  The Coy Hill High Proof is bottled in its purest form straight from the barrel, with minimal filtration, uncut at 137.4 - 148.3 proof. This one-of-kind Jack Daniel’s Single Barrel bottle should remain upright at all times unless you are pouring it into a glass to enjoy.

At Dovetail Distillery we malt our own wheat for use in our mash bill in a hand-built cedar cabinet. We then grind the malted wheat, wheat and oats into a fine flour which is then weighed out for our small batch process. We use local water from the Sierra Nevada snow melt to cook our mash and then allow it to ferment in open containers until it is ready to distill. At Dovetail Distillery we use the tried-and-true process of double distilling in a copper pot still to produce a spirit with both a full body and flavor. White Dove is unfiltered to maintain a full flavor.

TASTING NOTES:  White Dove has a strong peppery taste up front which is followed by a buttery caramel finish that lasts on the palette for several minutes.

AROMA:  White Dove has a strong aroma of cut grass and toasted oats.

MAKER'S NOTES:  White Dove pairs well with stone fruits and anything with a floral note. White Dove can easily be substituted in place of gin due to its strong botanical flavor. White Dove is unfiltered in order to maintain a rich, full flavor and body as is the tradition of an authentic Whiskey.
