To achieve the rich varietal expression and approachable fruit profile in their Cabernet Sauvignon, they harvested their fruit at the peak of ripeness, followed by frequent pump-overs throughout fermentation. This constant contact between the skins and juice enables maximum flavor extraction from the fruit. They then aged the wine for approximately 11 months in a combination of American and French oak barrels to lend sweet, toasty vanilla tones and build structure.

This is an approachable dry Merlot filled with red fruit freshness. The strength of the raspberry licorice flavors offer more than fair value for the elegant wine.

The 2016 vintage had an early dry spring, followed by a long mild summer which gave the vineyards time to slowly mature the fruit to the peak of flavor, allowing our Chardonnay to develop excellent structure and crisp acidity.

Distillery Information

Death's Door Spirits began back in 2005, in part as an experiment, when a group of people began trying to start farming on the island once more swapping potatoes for wheat. Brothers Tom and Ken Koyen had enough seed to plant five acres, and this grain is used in all of Death's Door Spirits today. The company's new state of the art craft distillery was opened in June 2012, and is the largest craft distillery in Wisconsin, as well as being one of the biggest in the region.

HMS Royal Oak was in the vanguard of ships to engage the French in the famous Battle of the Saints. Captained by Thomas Burnett, the Royal Oak maneuvered skillfully and brought to bear all of her 74 guns on the enemy for the duration of the battle. With 8 men lost and 20 wounded, the Royal Oak played an integral role in the first skirmishes of the battle and encouraged us to create a rum of rarity, intensity, and boldness.

TASTING NOTES

Bright amber color with a nose of prunes, raisin fruit, toasty oak and tropical spiced. Intense mouth-feel of sweet sultana fruit, tobacco, and chocolate, with vanilla from the oak. Complex finish with sweet fruit, caramel, and spice.

RUM BLEND

Admiral Rodney Royal Oak, the original Admiral Rodney blend, contains 7-12 year old Coffey still rum that has been aged exclusively in previously used Bourbon casks and blended to perfection.

HMS Princessa was originally a Spanish vessel captured by the British in 1780 at the battle of Cape St. Vincent. Captained by Charles Knatchbull with Rear Admiral Francis Samuel Drake abroad, this 70 gun ship of the line was one of the first ships to engage the French in the Battle of the Saints. Fighting valiantly, the Princessa engaged the enemy throughout the battle and inspired us to create this rum that embodies power and integrity.

TASTING NOTES

Deep mahogany color with honeyed raisins on the nose and a hint of vanilla and tobacco. Sweet with intense brown sugar, crème brulee tones balanced by dry toasty oak. Complex finish with good oak integration, caramel, and tropical spice.

RUM BLEND

Admiral Rodney Princessa contains Coffey still rum pulled off lower sections of the still resulting in a robust and complex flavor profile. This rum is aged from 5-9 years in Bourbon and Port casks before being blended together by our Master Blender.

HMS Formidable was Admiral Rodney’s flagship in the famous Battle of the Saints. Formidable was in the center of the British fleet and took advantage of a sudden change of wind to “break the line” and sail into the French fleet unleashing her 98 guns on Admiral de Grasse’s ships. Fighting with gusto and courage, Formidable’s gallantry has inspired an exceptional rum that celebrates valor, honor, and service.

TASTING NOTES

Intense dark golden color with a nose of wonderful honeyed raisin fruit, spiced and vanilla. A complex palate of luscious sweet sultans fruit balanced with toasty oak. Long finish leaving a lasting impression of the brilliance of great rum.

FEW Alice In Chains All Secrets Known Bourbon Whiskey Tasting Notes

Nose: An intriguing nose shows its multiple influences, with sour cherries, floral notes of violets as well as agave nectar and honey, plus leather, spice, and oak.

Palate: The palate is spicy with cinnamon, black pepper, and tannic oak, along with vanilla, menthol, and dark chocolate-covered berries.

Finish: The finish is the most whiskey-centric segment of the sip until a final flourish of earthy agave as a closing note.

Distillery Information

FEW Spirits is an American craft distillery based in Evanston, Illinois, just outside of Chicago. They pride themselves on producing everything from grain to glass; every aspect of the production of their spirits is done by them. They currently produce a range of award-winning gins and whiskies, all using ingredients sourced as local to the distillery as possible.

The whisky we distil from the organic barley of Mid Coul reflects the complex natural flavours of the landscape. Just as our stillmen refuse to abandon the traditional crafts of distillation in favour of automation or industrialisation, so farmer William Rose rejects the use of herbicides, pesticides and artificial fertilisers. Crop rotation is key. Our barley must take its turn in a seven year farm cycle that also produces organic cattle, sheep, oats, beans, grass, carrots, market gardening and a megawatt of green electricity. Respecting the land, the soil and the climate nourishes a genuine and thorough understanding of terroir and the results are pure Bruichladdich.

TASTING NOTES

Nose: Fresh malted barley, melon, peach and apricot. Opens up with notes of rich honey, lemon meringue and floral notes of gorse and heather. Vanilla and caramel and pastry notes from the wood are nicely balanced with the intensity of the fruit, waves of pear apple and gooseberry still hint at the fresh green fruits of the spirit.

Taste: Sweet pear drops, vanilla fudge, chocolate and marzipan initially. No aggression here at all just well-integrated flavours and a round gentle texture. The oak and malt notes complement each other so well overlapping each other with toasted rye bread, buttery popcorn and fresh oak, vanilla fudge and smooth caramel merging. The organic barley seems to give more fruit from the distillation and a more viscous texture which is a joy to the olfactory senses.

Finish: Sweet citrus, lemon drops, come through well on the finish and a slight char from the oak gives depth. The finish feels more marine, a little briny alongside the oak and malt which works beautifully.

Character: Elegance, richness and definite Bruichladdich DNA. The depth of flavour comes from the malt and its transformation through the alchemy of distillation. The spirit is pure and fresh, the oak rich and honied, together with time the combination of great oak, superb barley and slow distillation make for an amazing exploration of the fundamentals of making whisky.

A relative newcomer in the agave spirits world, Avilas have been produced exclusively in Morelos, Mexico for the past 30 years using the unique production method of both smoking and steaming the agave piñas.

Revel, the first Avila to come to market in the US, is made from 100% pure Blue Weber agave using zero additives or sweeteners.
