Ixcateco represents the local traditions, customs and ancestral techniques that have been preserved for centuries as part of the production of this spirit. Ixcateco seeks to become a medium for the development of social and cultural projects, to promote environmental responsibility for producers and consumers, and to dignify one of the most important economic activities in the village of Santa María Ixcatlán, in the Cañada region of Oaxaca.

Ixcateco is produced and owned by Amando Alvarado Alvarez, who has been distilling agave spirits since the age of fifteen. Mainly utilizing wild Papalomé (agave potatorum), Amando is one of a dwindling number of mezcaleros who maintain the centuries-old, ancestral practices of fermenting in rawhide and distilling in clay. Ixcatec is the native ethnic group of Santa María Ixcatlán, where fewer than 10 people still speak the 1,300+ year
old language known locally as Xwja

Ixcateco mezcalero Amando Alvarado Alvarez typically harvests his maguey in the dry season. This is the time of year when greater yield is achieved because the sugar content of the agave is greater. Papalomé (agave potatorum) is traditionally the only maguey used by in
Ixcatlan to make agave spirit, although there are many other maguey species around including rabo de leon, cimarrón, maguey blanco, and pulquero. These are used for construction, textiles, and pulque. The agave's fructans are transformed into fermentable sugar by slowly cooking the heart of the maguey in an underground oven covered by palm leaves for three nights. The roasted agave is then milled into smaller pieces first with a machete, then by pounding those pieces with large wooden mallets. The milled agave is placed into rawhide vessels with spring water where natural fermentation takes place. Distillation takes place on clay pots made in nearby
Oaxaca City. The spirit is distilled twice over direct fire and adjusted to proof with colas, or tails.

Tasting Notes

About the Brand

Our love and appreciation of mezcal began more than 15 years ago, when very few people had a clue about mezcal, including us. It was by chance that one of our founders had a great experience with mezcal while attending a wedding in Oaxaca, and it sparked intrigue and curiosity to learn more about this mysterious spirit.

Back at this time in 2005, when most were drinking tequila, we decided to open the first mezcal bar in Mexico City: “La Botica.” This bar helped create a buzz about mezcal and was the first of many steps on our journey in the world of mezcal.

As other aficionados began to discover mezcals from Oaxaca, we were exploring the different agave regions of Mezcal’s Denomination of Origin (D.O.) – which is the largest in the world.

This helped us to learn about the different varietals of agaves, as well as the distinctive expressions from many maestros mezcaleros distilling artisanal mezcal.

When some mezcal brands had started to venture outside of Oaxaca, we were exploring less known agave regions, where excellent mezcal is produced, but cannot be legally named mezcal because it is outside of the Mezcal D.O.

We are proud to be able to present the first mezcal ever to be produced using only solar power, therefore having minimal carbon footprint & environmental impact. Moreover, the production method allows the agave flavors to shine and the mezcal features a clean, non-smoked, superb flavor profile.

We have sought to retain the peaty intensity for which THE PEAT MONSTER has long been celebrated, whilst creating a depth and elegance not seen before.

New batches of THE PEAT MONSTER boast a spectrum of powerful coastal flavours, combining the smokiness of a driftwood fire with more medicinal peat notes. Orchard fruits and rich cask-derived creaminess balance the multi-layered smoke. It is a new peaty landscape, as the Painting Label shows.

The evolution is a subtle one. We hope you will hunt down both labels and enjoy teasing out the contrasts.

GRAIN RECIPE
Woodford Reserve is crafted from a grain recipe of 72% corn, 18% Rye, and 10% malted barley. This recipe balances the sweetness of corn with the spice of rye, and the nuttiness of malt to build the base for the world’s most flavorful bourbon.
WATER SOURCE
The water we use to craft Woodford Reserve comes directly from the distillery. It is naturally filtered by the limestone deposits under our property. Iron-free and mineral rich, it is a crucial ingredient in process.
FERMENTATION
Our fermentation process is among the longest in the industry. This extra time, paired with our unique yeast strain, creates a great depth of character and a complex range of flavors.
DISTILLATION
The perfectly balanced flavor of Woodford Reserve comes from a careful batching process of whiskey distilled in pot stills and whiskey distilled in column stills. No other whiskey can boast such a flavor combination.

This year’s bottle features the artwork of Kentucky native Jaime Corum, an equine artist known for her stunning horse portraits.
