Pinhook was founded with the ethos of sourcing great barrels of whiskey and taking a creative and unique approach to blending and proofing. The Collaboration Series reflects our commitment to exploring the ever growing craft whiskey movement and “pinhooking” barrels based on experience, quality, a little patience, and a bit of luck.

Edition No. 3 – Jordan Salcito
In this third edition, Sean revisited his wine roots with Jordan Salcito, our 2024 collaborator. Jordan is an internationally renowned sommelier with a storied career in the wine world and at leading restaurants including Restaurant Daniel, Eleven Madison Park, and Momofuku where her wine list was named the “Most Original Wine List in the World” by World of Fine Wine Magazine. In 2016, she founded Drink RAMONA, a family of award-winning Italian spritzes. 

She bonded with Sean Josephs over their shared love of wine and backgrounds as sommeliers. Together, they blended this extraordinary Australian whisky from four distinct styles of Starward Australian Single Malt, which had been exclusively aged in red wine barrels, further bridging the worlds of wine and whiskey.

Like Pinhook, Starward is known for moving beyond tradition and letting curiosity and creativity be their guide. Inspired by the famed Australian wine region in their backyard, they aged their whisky in red wine barrels and in Melbourne, Australia's notoriously wild climate. The constant change in temperature makes the barrels contract and expand at a much faster rate, leading the whisky to take on the delicious flavors from the wood.

Hoosier History
Indiana became the 19th state of the United States on December 11, 1816. Just like other states in the Midwest, Indiana became a site for whiskey production due to its agricultural grain capacity, and natural limestone filtered water. The climate, with hot summers and cold winters, was imperative to the aging process, where the fluctuations help the spirit interact with the charred white oak barrels, imparting the exclusive flavor, color, and character. This natural advantage contributed to the development of distilling in the region. At this time distilling was a small-scale, farm-based activity before the rise of industrial, commercial distilling in the late 1800s.

Our 1816 Indiana Rye Whiskey continues to honor these traditions today. Aged in the fluctuating Indiana climate in charred white oak barrels. Hand-bottled by the small team at our craft distillery after it has been proofed to 101.6, producing the bold rye spice and floral notes with a hint of nutmeg, and cinnamon in the background. Truly history in a bottle!

FOEDER SERIES 25TH ANNIVERSARY BLEND OF STRAIGHT RYE WHISKIES

For years, we’ve toyed with the idea of blending the different styles of whiskey we create at Leopold Bros into a limited release. Taking inspiration from some of Scotland’s great producers, we found ourselves particularly enamored with vatted whiskies that were given time to marry inside large wooden casks, or what the beer world refers to as a foeder.
Seeking a vessel that would allow for such an homage, we reached out to our friends at New Belgium Brewing who, as luck would have it, had a gigantic French oak foeder they were willing to part with. We knew exactly what we wanted to fill it with from the moment it arrived, as we had been experimenting in advance: 8 year old Three Chamber rye whiskey with 5 year old Maryland style rye whiskey at full proof. Tasting the evolution of our Three Chamber rye whiskey over the last few years has been quite the journey, but discovering how that whiskey improves and enhances other styles of whiskey was perhaps the highlight. The viscosity and weight of the Three Chamber rye adds depth and body to our Maryland style rye whiskey, flushing it out with added sweetness and viscosity. Think baking spices and stone fruits galore. After marrying together in our French oak foeder, we bottled the resulting blend at barrel entry proof with no filtration for a full-flavored and robust American whiskey.

Bruichladdich Distillery Octomore 15.2 Islay Single Malt Scotch Whisky

Peated to 108.2 PPM and distilled from 100% Scottish barley, matured in a combination of American oak, red wine, and French ex-cognac casks. This unique trifecta adds layers of intrigue, resulting in a complex yet exceedingly elegant single malt Scotch whisky.

15.2 Cask Expression
Octomore 15.2 offers an intriguing and inviting comparison to its 15.1 counterpart.

Distilled from the same batch of Scottish grown barley and also malted to 108.2 PPM, the 15.2 uses a robust combination of second fill wine and second fill bourbon casks, with the spirit finished in first fill Cognac casks. This unique trifecta adds layers of intrigue, resulting in a complex yet exceedingly elegant single malt Scotch whisky. Hints of nutmeg, toasted oak and caramel add smoothness to the palate, with the delicate floral character of Octomore coming to the fore.

TASTING NOTES

Color: Hebridean Sand

Nose: Sweet citrus, lime zest and lemon meringue pie open on the nose, followed by toasted oak and a hint of earthy smoke. A medley of tropical fruit enhances the vibrancy of the single malt whisky, balanced with woody spices, smoked honey, toasted bread, and roasted coffee.

Palate: Viscous in texture, the sumptuously smooth spirit brings vanilla custard, caramel, toffee and a crack of black pepper. Charred oak, cinnamon and a hint of nutmeg provide added depth with pear drops and dried apricot cutting through Octomore’s inimitable peat smoke.

Finish: An unmistakable maritime quality lands on a finish, with waves of salt spray settling on the palate while peat embers linger.

DISTILLATION: Distilled in 2018 from the 2017 harvest

MATURATION PROFILE: Originally filled into a combination of second fill wine casks and second fill bourbon casks. In 2023 the spirit was recasked into first fill Cognac casks for the remainder of its maturation.
