However, to complete our composition, we turned to an experimental parcel of single malt re-racked into Spanish orange wine casks for three years. Bright, bold and delicious, our aim with Canvas is to inspire further creative work. Pour a glass, prime your canvas, and fill the frame.

FLAVOUR PROFILE

The gloriously waxy and citrusy nose is followed by forest honey and vanilla shortbread notes on the palate. Flavours of nutmeg, cardamom and chocolate intertwine in the long-lasting finish.

TASTE PROFILE

Bold and balanced aromas of vanilla, caramel, dried fruit, and hints of sherry for a rich taste profile.

Color: Dark amber.

Nose: Smoked wood, coffee and chocolate, followed by vanilla notes and ripe fruits.

Snowed in at home, our Director of Whisky Creation, Dr. Bill, began dreaming of this whisky. His goal was to capture the snug and magical feeling of sitting in front of the fireplace as snow blankets the world outside. In pursuit of rich, radiant taste and wintery aroma, he finished the 13-year-old single malt in Marsala wine casks from Sicily.
The experience begins with light flurries of fruit and honey, building to torrents of cocoa dust, flakes of red pepper and chunks of brazil nut toffee. It culminates in a feels-like-forever finish that swirls with cinnamon, ginger and clove.

TASTING NOTES

Taste: A juicy viscous, but slightly peppery mouthfeel, leads in to a burst of sweet, nutty flavours – coco powder, red pepper, brazil nut toffee and sweet barley malt.

291’s High Rye Colorado Bourbon was first created by accident when a double dose of rye was added to the bourbon recipe. After aging, the result was a delicious, complex bourbon that strikes a balance between 291’s Colorado Bourbon Whiskey and its Colorado Whiskey. This whiskey has a spice and fruitiness to round out the vanilla and oak. Made from corn, malted rye and malted barley mash. Presented at barrel proof.

“291 HR Colorado Bourbon whiskey greets your nose with fresh baked cinnamon rolls (emphasis on the cinnamon) and leather dusted with cocoa powder. Apricot and peach rings, along with toffee round out the sweetness, with cedar and pecans adding an earthy quality to the aroma. The cedar and cinnamon hit your palate upfront upon the first sip, and the toffee and leather move in right behind. Dried apricots guide the transition into the lengthy and spicy finish of oak, pepper, and cinnamon. This is a deliciously autumnal whiskey.”

Originally made as an experimental batch, Bad Guy is a wheated four-grain bourbon. 291’s first award-winning bourbon whiskey and it’s most bold, rich, and complex whiskey. Made from corn, malted wheat, malted rye and beech smoked barley mash, this whiskey is heavier on the sweet side despite its high proof. Always presented at barrel proof.

291 Colorado Bad Guy Bourbon Batch #6 is the perfect holiday whiskey. There is a crisp freshness reminiscent of the Colorado mountain air in the fall, with a richness and spice similar to the treats and baked goods we enjoy this time of year.

On the nose there is an assortment of baked fruits, such as peaches, apricots, and apples, all dusted with cinnamon and clove, and savored alongside rich toffee and a mug of steaming herbal tea. Aromatic cedar and eucalyptus add brightness to the nose just as an open window on a brisk fall day brightens up our home. The palate is bolder than first anticipated, with the high proof greeting us at the front door with a confident knock. And it brought its friends along: the eucalyptus, apricot, and spice. The greeting is a warm and welcomed one. As their joyful stay ends, we are left with oak, aspen, tingly cinnamon and clove, and subtle toffee on the finish.

291 “M” Colorado Whiskey starts as 291 Colorado Rye Whiskey, which is aged in new American White Oak barrels and finished with Aspen staves. The whiskey is then transferred to 291 barrels previously used to barrel-age Wisconsin maple syrup by producer Lincoln County Reserve Maple Syrup. The result is a whiskey with notes of toasted oak, toffee, maple syrup, and figs.

This rich, spicy, and viscous whiskey is like liquid french toast with a serious kick. “M” Colorado Whiskey is presented at barrel proof.

About the Brand

Founded in 1823, Fukano Distillery is located in Hitoyoshi City, of the Kumamoto Prefecture of Japan on the island of Kyushu. Hitoyoshi is surrounded by mountains and is known for its pure water and nature. Shigeruriku Fukano is the fifth generation of his family to run the distillery. They use a combination of malted and un-malted rice to make their whisky in a pot still. These releases are very limited in nature and only a few casks are bottled each year. For 2016 they have released a few single new oak casks and also one white label marriage of sherry and new oak casks. Fukano Distillery makes a wonderful whisky that is sold in export markets only and is not to be considered as a Japanese Whisky. It is a Whisky that is distilled, matured, and bottled in Japan.

Our Process

LOCALLY GROWN RICE, A PURE WATER SOURCE & CHARRED BARRELS

Because rice is a clean, sulfurless, distillate it doesn’t require copper stills to produce a drinkable beverage and is instead distilled in stainless steel still and distilled at a relatively low proof. After distillation the shochu, which would be called new make outside of Japan, is then transferred to new charred oak barrels and laid to rest in a warehouse that more closely resembles a Scottish dunnage than a Kentucky Rickhouse.

Fukano 10 Years old Tasting Notes

Appearance / Color : Warm Gold.

Nose / Aroma / Smell: The aroma is delicate but thick with florals, mixed citrus, and sandalwood.

Flavor / Taste / Palate: The palate opens up with a silky complexity stretching from exotic spices and mint to white plum and marmalade.

Finish: The palate is medium length and lingers with notes of marzipan and raisins.

The Smoky Twelve is the perfect marriage of fruit,malt, oak and rich layers of smoke. Crafted from a combination of unpeated and peated spirit and three cask matured for at least twelve years in bourbon barrels, sherry casks, and Marsala wine casks. RACHEL BARRIE MASTER BLENDER

Severo Añejo is deep amber in appearance, alerting tasters to its bold, complex flavor. Small-batch, hand-crafted, hand-numbered 100% Blue Weber Agave tequila. Aged 18 months in White American Oak. Carefully guarded family recipe dating back nearly 100 years.

A super premium, small batch spirit that is carefully crafted with a commitment to environmental sustainability and support for the local community, Mijenta’s Reposado is aged up to six months in a blend of American white oak, French oak and French acacia casks. As with Mijenta’s Blanco, Mexico-based Maestra Tequilera Ana Maria Romero oversaw the entire creation process of the Reposado. Presenting a more mature and fuller expression with a long finish on the palate, the Reposado is best enjoyed neat, on the rocks or as a nightcap cocktail, such as an Old Fashioned. It pairs well with dry fruit, soft cheeses, game meat, as well as flavorful Asian dishes. For dessert, Reposado is best savored with vanilla flavors, coconut and semi-bitter chocolate.

A limited number of bottles will be available, with only 6,500 produced in the first batch.

Tasting Notes:

On the eye: Light golden hue, Bright and Transparent with a powerful body.

On the nose: A delicate and inviting vanilla nose with notes of bergamot, honey, preserved fruits and orange blossom flowers.

On the palate: Rich flavors of cooked agave, honey, vanilla with a mid-palate of cacao nibs. A long and generous finish on the palate.

Gran Diamante Anejo Tequila undergoes meticulous crafting, deriving its excellence from the choicest Agave Tequilana Weber cultivated on the estate. Patiently aged for eighteen months within pristine, new French Oak barrels, it develops a luxurious body and a velvety texture. Its taste profile reveals graceful notes of subdued spice, pepper, and delicate oak undertones that gracefully linger into a deeply satisfying finish.

This Anejo boasts a robust character and an elegant aroma. Delicate hints of butterscotch, intertwined with cinnamon and nutmeg spices, create a refined bouquet. Further enhancing its allure are faint traces of chocolate and cigar, adding complexity to its aromatic profile.
