To demonstrate this further, Belvedere has revived this traditional malting technique which unlocks rich depth, flavor and complexity that would otherwise remain hidden in the rye. Tequila Fortaleza is a small-batch, handcrafted tequila. It is made today with the same production methods that our family used to make tequila, over one hundred and forty years ago! We select each agave for ripeness before it is harvested, and cook them by steam in our small brick oven. We then use a two-ton stone wheel called a tahona to slowly squeeze the juices from the agave. After adding water from the volcanic mountain of Tequila and separating the fibers, we ferment the musto for 3 to 5 days. When fermentation is complete, we achieve our distinctive tequila by distilling twice in two very small, copper-pot stills.

The team at Tequila Fortaleza is humbled and honored to announce that a jury of industry legends has picked our Tequila Fortaleza Winter Blend 2019 as winner of the Best New Spirit 2020 category at the Spirited Awards of Tales Of The Cocktail.

Hand-selected by Nicole Austin, this Cascade Moon release complements the series by offering a complex and mature rye addition to the lineup. The barrels containing aging rye arrived from Indiana to Cascade Hollow in 2012, where they spent another nine years in Cascade Hollow’s single story rickhouses. The temperature conditions led to a gracefully slow maturation, bringing the beautiful and unique notes of the whisky forward. At 13-years old, this rye is both delightfully balanced and sophisticated. The whisky is a mellow and enjoyable rye at an ideal 100-proof.

Yoichi Single Malt is a range of single malt expressions from the Yoichi Distillery, Nikka's first distillery built in 1934. The founder Masataka Taketsuru chose the town of Yoichi in Hokkaido because of the similar environmental conditions to Scotland, where he learned whisky-making. Yoichi malts are described as bold and strong with refined peaty notes and smokiness brought by the traditional direct coal-fired distillation. Sea breeze from the Ishikari Bay delivers a briny hint to the whisky during maturation. This limited edition of Non-Peated Yoichi single malt was introduced in 2021 as the first of the “Nikka Discovery” series. In anticipation of Nikka Whisky’s 90th Anniversary, the series offers an inside look at the various experiments in the whisky-making process that Nikka has practiced over the years. This expression is comprised solely of unpeated malts as opposed to the preconceived “peaty” image of Yoichi. It offers a delicate balance of bright fruitiness and rich mouthfeel, along with its distinctive smokiness generated by coal-fired distillation.

Niu Lan Shan Chen Niang Baijiu Liqueur is a distinguished spirit renowned for its rich heritage and exceptional craftsmanship. Carefully crafted using time-honored techniques, this baijiu liqueur embodies the essence of tradition and innovation. Distilled with precision and finesse, it offers a harmonious blend of flavors, capturing the essence of select ingredients. Its smooth and nuanced profile presents a delightful experience to the discerning palate. Whether savored neat or in a crafted cocktail, Niu Lan Shan Chen Niang Baijiu Liqueur promises a memorable journey through the depths of Chinese distillation expertise.

Barbicaia Sangiovese Vino Nobile di Montepulciano 2019 is a dry red wine from Italy. It's made from at least 70% Sangiovese grapes, also known as Prugnulo Gentile. The wine also contains other grape varieties, including Cannaiolo. Vino Nobile di Montepulciano is a classic Italian wine that's rich in flavor and complexity. It's named after the picturesque hill town of Montepulciano, near Siena. The wine was a favorite among kings, popes, and the local aristocracy.

KAH Tequila Extra Añejo is made from 100% Blue Agave and is aged in American Oak casks for at least 36 months, bottled at 40% ABV (80 proof).

Sugar skulls or calaveras has always been a significant part of Aztec and their descendant traditions in the Day of the Dead celebrations. Back then sugar skulls represented deceased ones, often with written names on the forehead of the skull. ABOUT THE PRODUCT
Vanilla is a spice consisting of the fruit of certain tropical creeper orchids of Mesoamerican origin.
The plants cultivated for the production of vanilla are the only orchids cultivated for human consumption. To obtain a richly aromatic spice, the cultivation and processing of vanilla requires long and attentive care from farmers. This makes it, by weight, one of the highest value agricultural food products in the world.
It was the planters from Réunion who introduced, around 1880, the cultivation of vanilla to Madagascar. Today, Madagascar produces 60 to 80% of the vanilla in the world.

During a time when efficiency took priority over quality, our distillery was viewed as outdated. Prior to its closure in 1994, our single malt accounted for less than 1% of all "pre-renaissance" whiskies still maturing in our warehouses. However, our older spirits have become highly prized and cherished. To honor the exceptional work of our predecessors, our head distiller, Adam Hannett, has meticulously nurtured the finite 1992 vintage on its 29-year journey through various casks. This unpeated spirit has been matured in top-quality oak and its recipe is kept highly confidential, as is customary with all previous Black Art editions. The 9th edition of Black Art is our most alchemic single malt and the oldest ever produced. It is the epitome of the Black Art series and is designated as Edition 09.1.

Tasting Notes

Appearance: The color is a deep russet.

Aroma: The fragrance is simply breathtaking, with tropical fruit, coconut, tobacco, oak spices, and toasted pine needles interweaving to create a complex aroma. Over time, this magnificent whisky releases waves of succulent mango, honey-drizzled melon, warm orange zest, grilled pineapple, and ripe summer strawberries. The scent is tantalizingly fruity and mouth-watering, with gentle oak nuances of coconut, ginger, buttery shortbread, vanilla custard, and a hint of tobacco.

Palate: The viscosity and depth of this dram are unparalleled. The tobacco and brown sugar notes of the oak provide the foundation for the superb fruit combinations to shine. A hint of water and a second sip reveal even more of the intricate layers of this remarkable whisky.

Finish: The luscious fruit sweetness lingers on the tongue for an extended period, with apricot, mango, and baked banana flavors, along with toasted sweet oak, honey, and vanilla. One never wants the experience to end.

Character: In creating this edition of Black Art, we were inspired by the efforts made in crafting the earlier versions of this series, where there was an unrelenting quest to layer flavor. This whisky rested in some of the finest casks, acquiring a delicate layer of fruit before being moved to a new cask. We carefully monitored and tasted it, seeking new directions with each new cask, until it reached perfection.

Octomore 12.2 follows in the footsteps of previous Sauternes legends, confirming that heavy peat smoke combined with the sweet dessert wine of the French region is an incredible pairing. And in parallel, it follows in the footsteps of the now infamous Octomore 4.2 (Comus), which became one of the most acclaimed and sought- after whiskies in our distillery’s portfolio.

Making a statement in its surprising pairing and balance of sweet and smoky, this Octomore 12.2 spent three and a half years in ex-American oak casks, building a solid foundation of fruity and floral spirit in our lochside warehouses before being recasked in to impeccable quality Sauternes casks. The pivotal role of the Sauternes casks add 18 months of supercharged fruit.
Melon, white peach, honeysuckle and coconut add a real twist and sweetness to compliment the peat smoke of this heavily phenolic malt.

TASTING NOTES

CHARACTER: The Sauternes casks bring another dimension to the vitality of Octomore. The honey-soaked fruit and dry smoke work beautifully together; that classic combination of smoke and sweet fruit coming to the fore.

COLOUR: Amber

NOSE: Notes of melon, honey and smoked almonds can be found on the nose. Toasted oak and earthy smoke are held back by layers of fruit and honey, opening up to orange peel, peaches, ripe sweet melon, lemon and honey - all wrapped in a malted grain sweetness. Dried apple and pear drops come next with a wave of peat smoke and toasted oak, releasing earthy and pine resin notes.

PALATE: Lusciously soft and sweet, fruit sweeps across the palate with bursts of lemon zest, vanilla, melon and orange blossom. Another sip highlights the structure the French oak brings with caramel, baking spices and a touch of dryness, carrying the smoke and the malt sweetness. The presence of ripe fruit drizzled in sweet syrup speaks of the influence of the Sauternes casks.

FINISH: On the finish, a salty lemon tang arrives as the fruit and oak subtly fade. Earthy peat smoke moves in to dominate the finish and stamp the Octomore DNA on this dram.

Octomore 12.3 is single vintage, single field, single malt. Raised in Church Field on Octomore Farm by friend and farmer James Brown, this Islay grown barley has been trickle distilled through our tall narrow necked stills just two miles from where it was grown. This terroir-driven spirit would take two separate journeys before being combined; 75% was filled into ex-American whiskey casks, while the remaining 25% spent five years maturing in genuine Pedro Ximenez Solera casks from Jerez bodega Fernando de Castilla. This Islay barley spirit has breathed slowly and delicately for five aged years, its salty citrus marine note resulting from the locale of where the barley was grown and our warehouses proximity to the sea. The Pedro Ximenez casks contribute sweet dried fruit notes which highlight the rich dry peat smoke of Octomore.

High n’ Wicked is an importer and specialty bottler of exceptional whiskies. It was founded in 2019 by two former Brown-Forman senior executives, W. L. Lyons Brown, III and Kevin E. Sachs. Brown and Sachs worked together in the International Division in the 1990’s and were instrumental in building Jack Daniel’s and Southern Comfort in Europe and Asia.

The company features five year old Kentucky Straight Bourbon and Kentucky Straight Rye available year round. It will also offer unique, small production expressions of each annually, including cask strength, single barrel and double wood finishes. Some will carry greater age as the brands evolve.

High n’ Wicked also offers limited releases of American Bourbon, Single Malt Irish Whiskey and Single Grain Irish Whiskey. These “Singular Limited Releases” feature single barrels and expert double wood finishes that add layers of complexity to already superb distillates. There will be one to two of these annually approximating 1000 nine liter cases.
