Situated in the foothills of the Serra do Mar mountains in eastern Brazil, the quaint town of Morretes is home to approximately 15,000 residents, including Agenor Macarri Jr., the master distiller at Agroecolgica Marumbi. Macarri, who received a graduate degree in Cachaa Agronomy from Universidade Federal do Parana in Curitiba, is often referred to as Dr. Cachaa. Macarri has studied every component of cachaa production, from the genetics of sugar cane to the exposure of cachaa to different types of wood. Novo Fogo Organic Gold Cachaa is made from 100% estate-grown, organic sugarcane grown without the use of chemicals or preservatives. While many sugarcane farmers burn their fields prior to harvesting their plants (burning enables faster cultivation), Novo Fogo refuses to use flame-harvesting due to the detrimental effects it has on the sugars residing in the base of the cane stalk. Rather, when the sugarcane reaches its peak of maturity, expert farmers at the Novo Fogo estate tenderly harvest the crops by hand. After the sugarcane is harvested, it is pressed to extract the sugar cane juice. The juice is then mixed with with organic corn, rice and lime juice and is fermented for approximately 24 hours. After fermentation, the wash is distilled in one pass through Macarri's 1,200-liter copper-pot still (the bagasse the dry, fibrous residue remaining after the sugarcane stalks are pressed is used to heat the still). "We use pure sugar cane, grown organically and processed manually, with no chemicals, so why should we distill it twice"asks Macarri. "There are no impurities in it to remove through multiple distillation." After distillation, the heads and tails of the distillate are cut, and the remaining cachaa is matured in steel tanks for over a year a unique process which mellows and adds further character to the spirit. Novo Fogo Organic Silver Cachaa has a nose of lime, banana and coconut, which gives way to notes of sea salt, sweet peppers and more tropical fruits. The finish is smooth, and defined by bold notes of pure sugar cane. The cachaa is brought to proof and each hand-blown bottle is then filled and labeled by hand. Novo Fogo, which means "new fire" in Portuguese, wont burn you, and is now available in a cocktail kit complete with all the tools you need including a wooden muddler and two mason jars to make the perfect Caipirinha, the world's most popular cocktail!

Corti Brothers 7 Year Old Exquisite Whiskey

The Corti Brothers grocery, which was started by Frank and Gino Corti in Sacramento, CA 1947, has long been at the forefront of the artisan food movement. The store's mission was to do more than just hand people products, but to talk food and wine with them, and this mantra was embodied in Frank's son Darrell, who developed an encyclopedic knowledge of products from around the world. Continuing his father's legacy, Darrell grew Corti Brothers to such acclaim that the LA Times credited the grocery with starting the gourmet-food revolution. In addition to his expertise in food and wine, Darrell Corti has quite a history with whiskey as well. In 1974, he traveled to Kentucky to bottle a special bourbon for Corti Brothers bicentennial, and on two separate occasions in the mid-80s he worked with the Van Winkle family to bottle private selections of Van Winkle Reserve. Now, in the spirit of the burgeoning craft distilling movement, Darrell Corti has partnered with Amador Distillery to create his very own private label whiskey, Corti Brothers Exquisite Whiskey. Corti Brothers Exquisite Whiskey is crafted from just 13 casks of seven year old, Kentucky bourbon whiskey that has been made with a mashbill of 70% corn, 25% rye and 5% malted barley. After seven years of maturation in these new, American oak casks, the whisky is then finished in barrels which previously housed Harbor Winery's Mission del Sole. This practice of double-barreling is common for Scotch whiskies, but relatively unusual for a bourbon whiskey. Afterwards, the whiskey is un-chill filtered and bottled at 90.5 proof. Corti Brothers Exquisite Whiskey has a nose of port and caramelized brown sugar, which leads to a palate filled with bright fruits, port, sherry and oak. The finish is rich and sweet, with more oak and a nice earthy character that lingers.

TASTING NOTES

Appearance: Rose gold with highlights of worn copper.

Nose: Opens with mature aromas both sweet (canelé, panna cotta, crème de noyaux) and savory (walnut oil, leather). This is followed quickly by a vast array of fruit derived both from the spirit (smoked apricot, grapefruit peel) as well as the cask treatment (sloe gin, damson jam). The aroma is high toned, pungently floral and herbaceous, with subtle, balancing pops of minerality.

Palate: Darker (cocoa, molasses, burnt marshmallow) and spicier (cola, nutmeg, Tellicherry peppercorn) than the nose, an effect well-complemented by the cask treatment and rendered more complex by the savory and herbaceous themes running throughout.

Finish: A sweet and elegant signature of rose jelly, chestnut honey, and Pineau des Charentes that also features hazelnut, eucalyptus, and Corsican mint.

Kirk and Sweeney 18 Year Old Rum

Kirk and Sweeney was the name of a wooden schooner that was best known for smuggling rum from the Caribbean to the United States during Prohibition," says August Sebastiani, President of 35 Maple Street Distillery. Just before it entered the territorial waters of the United States, the schooner would drop anchor and sell the rum to smaller boats which would come up alongside the Kirk and Sweeney. The smaller boats, which were faster and more maneuverable than the boats in the Coast Guard's fleet, would smuggle the rum ashore. As other boats followed suit, the edge of U.S. jurisdiction the line where boats like the Kirk and Sweeney dropped anchor became known as the "Rum Line" and the row of ships waiting to sell rum on the Rum Line were said to be anchored on "Rum Row." Kirk and Sweeney 18 Year Old Rum is a rum crafted in the Dominican Republic from raw sugarcane. After being distilled, the rum is aged for 18 years in American oak casks. As a result, it has a deep amber and iridescent copper color along with an aroma of dried fruits and sweet, toasted breads. On the palate, initial hints of honey, toffee and caramelized sugar lead to subtler notes of almond and vanilla, which finally give way to bursts of figs, dried plums, caramel and sherry on the finish. "Playing off the concept of global navigation," says Sebastiani, "we silkscreened an antique nautical map of the main rum smuggling route around the circumference of the bottle" of Kirk and Sweeney Rum. In addition, the neck of the bottle is hand-numbered with the rum's batch and bottle number, while a photo of the Kirk and Sweeney and the bottle's safety seal are printed to look like authentic nautical brass. "The overall design serves as a reminder of the risk so many were willing to take for a good taste of rum during the 1920s," says Sebastiani. This limited edition 18 year old bottling builds off of the success of Kirk and Sweeney's flagship 12 year old rum, which earned a score of 95 points from Wine Enthusiast and was named one of the Top 50 Spirits of 2013.

The second release of the Booker’s Bourbon 2023 Collection is Booker’s Batch 2023-02 “Apprentice Batch.” This batch pays homage to the early days of my dad Booker Noe’s career – far before he was the Sixth Generation Master Distiller – when he first learned the art of making bourbon under the guidance of his cousin Carl Beam.

When Booker started working at the Jim Beam Distillery in Clermont in 1952, Carl became like a mentor to him. Back then, they didn’t have official titles like Master Distiller, but everyone knew Carl was in charge. He didn't put up with any foolishness and made sure Booker was set straight. But even if Booker did mess around sometimes, he was a fast learner and was ready to be put to work, and that quickly got him Carl’s approval.

Two years after Booker started, we purchased a distillery in Boston, KY to increase our production capabilities. Carl and Booker worked closely together to get it up and running, and eventually, Carl handed the reins over to Booker. This is where he was able to experiment and master the bourbon- making process, and later on, the location was renamed the Booker Noe Distillery.

Carl showed Booker the ropes at the distillery, but from there, his approach was sink or swim and it was just the push Booker needed. His apprenticeship under Carl helped him become the Master Distiller and legendary innovator we all remember him as today.

The liquid is a medium amber color from the seven years spent aging in the white oak barrels. The oak-forward aroma is well-balanced with notes of vanilla and toasted nuts, and all together the result is really pleasant. After the first sip, you’ll find the long finish doesn’t overpower the warm taste.

Situated along the banks of the East River, Kings County Distillery is New York City's oldest operating whiskey distillery and the first distillery in New York City since Prohibition. Wedged between Williamsburg and Vinegar Hill, Colin Spoelman and David Haskell, the master distillers at Kings County, make hand-crafted bourbon, moonshine, and now single malt whiskey out of the 117-year old Paymaster Building at the Brooklyn Navy Yard. A typewriter the two distillers found on the sidewalk in Williamsburg is used to make the labels that adorn their clear, flask-like bottles, while a hairdryer (made by Revlon) is used to affix each bottle seal. Handwritten scrawls on a chalkboard keep track of different batches, and mesh laundry bags are used as strainers. Kings County Single Malt Whiskey is just like a single malt Scotch except it's made in Brooklyn! The barley is sourced from England and Scotland before being malted with a touch of peat, and open-fermented. Following fermentation Kings County uses traditional Scottish pot stills to double distill the whiskey, which is then aged in their own used bourbon barrels, maturing anywhere from one and a half to four years. Kings County Single Malt Whiskey has an aroma of hay and peat, all the while carried by a palate of honey that leads to a finish of burnt orange peel. Kings County Single Malt Whiskey won the Gold Medal at the American Craft Spirit Awards in 2016, and Kings County Distillery was named ADI's Distillery of the Year in 2016 as well!

This area is also the number one wine-producing region in the United States, and home to a world class culinary institute. Taconic prides itself on preserving a bourbon whiskey tradition: From George and Martha Washington's home during the American Revolution, to the Great Estates of the Vanderbilt's, Roosevelt's and Rockefeller's, to the hunting preserves and horse farms of today, bourbon whiskey has been savored for generations (Taconic Distillery). To maintain an unadulterated flavor of the whiskey, Taconic never chill filters, and distill their whiskeys below 160 proof to retain the flavors from the grains. It is the flavor of the grains that are transferred through the distilling process as fatty molecules or flavor oils which results in a cloudiness in the whiskey. Those flavors are transferred through the distilling process as fatty molecules (flavor oils). Some distillers will chill filter the fatty molecules and sacrifice a certain amount of flavor for clarity. Taconic uses distinct Coopers Select, Char #3 new oak barrels made by the Independent Stave Company. Their barrels have a unique maturation process; aged in shipping containers. Less is lost to the angel's share, due to the saturation of the air inside the containers. Being exposed to great temperature fluctuations, results in greater movement of spirit in and out of the barrel staves. Aging occurs in cycles, during times of increased temperature such as in the summer, the whiskey expands through the char, through to the untreated wood beneath. While in the wood, the whiskey dissolves various flavorful compounds. When temperatures drop, the liquid contracts and brings out all of the flavors of the wood, producing flavors that complement the body of the whiskey. Taconic's Straight Bourbon Whiskeyis bottled at a barrel strength 115 proof. Taconic adds a touch of our artisanal water to give the bourbon healthy dose of butteriness. At 57.5% ABV, it is bold and refreshing, with aromas of light vanilla kissed with hints of honey and caramel.
