Corsair Gin-Head Style American Gin

In the 1650s, a Dutch doctor named Franciscus Sylvius was searching for a remedy to the kidney and stomach ailments that he often encountered in his practice of internal medicine. At the time, Dr. Sylvius was a Professor of Medicine in Leyden, and he attempted to infuse juniper berries into a spirit distilled from grain in order to create a panacea. The resulting elixir eventually became known as gin, and was so popular that within a few decades, the Dutch were exporting 10 million gallons annually. For the next 250 years, nearly all the gin produced in the world was barrel-aged since the spirit was stored and transported in oak barrels (at the time, glass was too fragile and plastic and stainless steel containers were still not available). In order to craft a more traditional gin, "we've rested our signature vapor basket gin in our charred oak barrels previously used to age our spiced rum," says Darek Bell, the founder and Master Distiller at Corsair Artisan Distillery. Since opening its doors in 2009, Corsair has received numerous accolades and awards, including being named the 2013 Craft Distillery of the Year and 2013 Innovator of the Year by Whisky Magazine. Corsair's Artisan Gin remains one of the few gins produced using a gin-head (otherwise known as a carter head or vapor basket). This method, allows the flavors and essential oils of the gin's sustainably grown botanicals to be gently extracted using vapor; this technique yields a less bitter spirit than maceration resulting in a more aromatic, clean-tasting gin. This gin head style gin is made using 100% organic botanicals, which yields a brighter, more well-balanced spirit. Using a vapor basket essentially highlights the unique mixture of botanicals use in the spirit, such as citrus, cucumber, cardamom and coriander. Among other accolades, this crisp gin has struck Gold at the San Francisco World Spirits Competition, the World Beverage Competition, and the International Review of Spirits Awards BTI.

Mascota Tequila Añejo is made from the finest 100% blue weber agave, naturally fermented, twice distilled and double barrel-aged for 3 years.  Using a mix of French and American Oak Barrels, each barrel infuses its own unique characteristics, enriching the spirit further, giving it a greater even more complex depth, with exceptional smoothness. Mascota Tequila Añejo is additive free and distilled to the highest standards. 
 
Tasting Notes
Golden amber color. Offers hints of honey, citrus, oak and cooked agave on the nose. Rich flavorful taste of caramel, oak and citrus. A very classy and refined añejo for sipping. Age: 3 years in French & American Oak Barrels.
 
Due to the extended 3-year tequila aging process of our Añejo expression, this product is very limited and highly collectable. 
 
Of special note, our little Tan Mascota Pup's name is “Hope” as she stands as a symbol of love and hope for all living things. THE EXPERIENCE

COLOUR: Amber honey.

NOSE: Dried fruit, ginger and toffee. Rich orange with hints of clove and nutmeg.

PALATE: Rich raisin and sultana with notes of caramel, vanilla and ginger, balanced by wood spice and zesty citrus.

FINISH: Warm oak spice with ginger, turning to sweet orange.

He followed our journey of The Macallan cask from its origins in the forests of America and Europe, through the cooperages and Bodegas of Spain, and to our distillery in Speyside, Scotland. There the casks meet our new make spirit and are patiently matured until they are harmoniously united to create a distinctive single malt with a sweeter, warmer taste and character.

Nuda Tequila was founded by a Persian-Mexican connection, in a way reflecting the two cultures that have played the largest roles in the creation of the famous Mexican spirit. It was the Aztecs that began fermenting the blue agave hundreds of years ago. But it wasn't until the Spanish aristocrat Pedro Snchez de Tagle introduced the distillation process to Mexico in the 1700s that tequila was born. The distillation process itself was perfected in the 10th century by Al-Razi, a Persian alchemist, physician, and philosopher. Nuda continues this story with an added "sensuality, sophistication and elegance of the Queen of Tequila." Nuda has 5 expressions currently in their lineup: Silver (Blanco), Reposado, Aejo, Extra Aejo, and the ultra-premium 5 Years Extra Aejo. The process begins with the harvest of mature, ripe 8-year-old blue Weber agaves in Jalisco, Mexico. Once the leaves are removed, the heart is cooked in order to convert the starches within into sugars. The cooked agaves are then crushed, releasing the juice or "aguamiel". After fermentation, the liquid is distilled 3 times the third and final distillation removing the heavier components, resulting in a pure, clean, and soft spirit. Following the distillation, each of the 5 expressions is aged for a varying amount of time. Nuda Tequila Reposado spends 11 months in French oak barrels, 2 months more than is required for rested tequila. This imparts the spirit with additional vanilla, chocolate, and oak notes. It is bottled at 80 proof in sandblasted glass bottles depicting the feminine beauty of the Queen of Tequila.

Founded in 2015 by Bobby Finan and Sean Insalaco, the industrial chic distillery opened its doors in July of 2015, in New York's historic Hydraulics manufacturing district. The distillery is named after the Tommyrotters Club, which according to the distillery founders, were a band of rebellious artisans in the early 20th century who broke rank from the Arts and Crafts Movement to create for creation's sake. They sought adventure, mischief and inspiration in nature. Bobby Finan gravitated towards the craft-distilling scene in NYC, and in 2013 he got his first start in the industry at the Cooperstown Distillery. After relocating to his hometown Buffalo in 2014 he met business partner, Sean Insalaco, and by July 2015, Tommyrotter Distillery was up and running. In the spring, summer and fall months, their multi-story distillery is open to visitors. Their beautiful modern glass-walled mezzanine tasting room gives a unique view of the entire production process. At Tommyrotters their production process is simple yet quite meticulous. No frills. No automation. Just handcrafted spirits, distilled batch by batch in small copper stills. Their spirits are distilled from American farm-grown grains. Smaller stills allow for greater control over the distillation process. They fill and label every single bottle by hand. They currently have three award winning expressions in their lineup, one vodka and one American gin, and one barrel aged gin. Their gin is described as being simultaneously juniper and botanical rich. Infused with herbs spices, roots and flowers sourced from all over the world that are harmonized in the distiller's secret recipe. Their impassioned take on an American gin is Pot-distilled in small batches to articulate a deliberate blend of infused herbs, fruits, roots and flowers. An ode to our craft, this is an independent gin (Tommyrotter).Bottled at 42% ABV, it won a Silver Medal at the 2016 San Francisco World Spirits Competition.

Peated to a heavyweight 40ppm, Port Charlotte Scottish Barley is a cuvee crafted from cask profiles originally selected by master distiller Jim McEwan. It showcases the supreme elegance of this remarkable single malt – a union of the classic floral elegance of Bruichladdich and heavy peat. Trickle distilled from 100% Scottish Barley the spirit gently matures in the lochside village of Port Charlotte before being bottled here at the distillery using Islay spring water.

TASTING NOTES

Character: The texture is extraordinarily rich with a huge depth of character. The smouldering heat of peat fires pulls you into a whirlpool of islay flavours and aromas but with such finesse that you welcome the storm.

Colour: Gilded lily.

Nose: Opening with assertive waves of peat smoke and Atlantic squall, the olfactory system is on high alert in anticipation of some major sensory excitement. A swell of aromatics flood the senses with notes of iodine, salty canvas, crushed sea shells, charred oak staves, black pepper, paprika and leather tobacco pouches. The second wave brings vanilla, figs and soft plump dates, marinated pear, freshly milled malt, dark sweet toffee and cracked walnuts. It’s smoky. It’s smouldering. It’s sensuous. Just close your eyes and inhale long and deep. This is aromatic awesomeness.

Palate: Wow! Waves of the sweetest, smoothest, warmest smokiest spirit that you have ever experienced flood onto the palate like the atlantic surf on Saligo Bay. It is potent, focused and the flavours explode brilliantly onto the palate. Full of depth and complexity, the smokey sweetness of the barley contrasts beautifully with the marine freshness of the spirit and the richness of toffee and vanilla. The complexity is enhanced further with a citrus twist and then mellow oak tempers the fire. Once the taste buds adjust to what is happening, they rejoice in the company and pleasure of this young Celt.

Finish: It’s long and heart-warming, arousing feelings of pride and passion. It brings courage and strength, honesty and faith to your very soul.

Following his coronation at the Scone Palace in 1488, King James IV purchased a keg of beer at the Tullibardine Brewery, the first public brewery in Scotland. At the time, the brewery used crystal clear spring water that flowed from the Ochil Hills down to the brewery in order to craft its unique ales. Nearly five centuries later, a Welshman named William Delme Evans purchased the brewery and converted it into a distillery (Evans was also responsible for designing the Jura and Glenallachie distilleries). In 1949, the first drops of Scotch whisky flowed from the distillery's stills and today over six decades later the distillery continues to use much of the same ingredients and methods that the Tullibardine Brewery used in crafting King James' beer, including the same crystal clear spring water. Tullibardine Single Malt Scotch Whisky is made exclusively from locally-sourced malted barley. Once the grains arrive at the distillery, they are milled and mashed before being fermented in the distillery's washbacks. Following fermentation, the wash was distilled by John Black, Tullibardine's longtime master distiller, through the distillery's copper-pot stills (the stills were installed in 1974). Tullibardine legendary master distiller Black, who was born in 1942 at the Cardhu Distillery, has spent over five decades in the Scotch whisky industry until he sadly deceased recently in 2013. Tullibardine Highland Single Malt 225 Sauternes Finish Scotch Whisky is also aged in American oak casks that were previously used to mature bourbon. After its initial beauty rest, it is finished for one year in 225-liter sauternes casks sourced from the Chateau Suduiraut. As a result, the whisky has a golden-yellow color, along with an aroma of citrus, cinnamon and creamy vanilla. Notes of spices, maple syrup and candied orange dominate the palate, and lead to a long finish with hints of delicate spices. Tullibardine 225 Sauternes represents a unique spirit, distilled in time-honored tradition and finished with a modern twist.
