Following his coronation at the Scone Palace in 1488, King James IV purchased a keg of beer at the Tullibardine Brewery, the first public brewery in Scotland. At the time, the brewery used crystal clear spring water that flowed from the Ochil Hills down to the brewery in order to craft its unique ales. Nearly five centuries later, a Welshman named William Delme Evans purchased the brewery and converted it into a distillery (Evans was also responsible for designing the Jura and Glenallachie distilleries). In 1949, the first drops of Scotch whisky flowed from the distillery's stills and today over six decades later the distillery continues to use much of the same ingredients and methods that the Tullibardine Brewery used in crafting King James' beer, including the same crystal clear spring water. Tullibardine Single Malt Scotch Whisky is made exclusively from locally-sourced malted barley. Once the grains arrive at the distillery, they are milled and mashed before being fermented in the distillery's washbacks. Following fermentation, the wash was distilled by John Black, Tullibardine's longtime master distiller, through the distillery's copper-pot stills (the stills were installed in 1974). Tullibardine legendary master distiller Black, who was born in 1942 at the Cardhu Distillery, has spent over five decades in the Scotch whisky industry until he sadly deceased recently in 2013. Tullibardine Highland Single Malt 225 Sauternes Finish Scotch Whisky is also aged in American oak casks that were previously used to mature bourbon. After its initial beauty rest, it is finished for one year in 225-liter sauternes casks sourced from the Chateau Suduiraut. As a result, the whisky has a golden-yellow color, along with an aroma of citrus, cinnamon and creamy vanilla. Notes of spices, maple syrup and candied orange dominate the palate, and lead to a long finish with hints of delicate spices. Tullibardine 225 Sauternes represents a unique spirit, distilled in time-honored tradition and finished with a modern twist.

Having crafted an iconic rum “house” from humble beginnings, our founders, decided to pour all of their skills and knowledge into creating a rum to mark the 25th anniversary of its origin. Little did they know that almost 60 years later, that rum would be the most awarded their country would ever produce, having won more Gold and Double Gold medals at the San Francisco World Spirits Competition than any other Venezuelan rums.

To craft this rum, our founders disrupted the usual way of rum making and added Ex-Sherry casks to the array of Ex-Bourbon barrels that were already used. Thus Pampero Aniversario is created from our “Exclusive Reserve”: our rarest, most complex rums.

To honour this, we created one of the most distinctive bottles on the bar, wrapped in the history and story of the Llanero (Venezuelan Cowboy), our icon.

New Deal Old Tom Gin is pot-distilled in-house from 100% grain. Juniper, rose petal, citrus, and orris root add depth and texture. Each small batch ages in Oregon wine barrels, developing warm, toasted notes and an amber color. Our Old Tom Gin is just lightly sweetened in the traditional style.

We’re proud to announce that New Deal Old Tom Gin was awarded the best-in-class Platinum Medal in Sip Magazine’s 2021 Best of the Northwest spirits competition. 

What is Old Tom Gin? There are no exact rules but Old Tom is a gin that is often barrel aged and lightly sweetened. Before the advent of the column still, spirits were often much cruder and it was common to add sweetening agents to make them more palatable. And palatable this gin was indeed! Before London Dry Gin stole the show, Old Tom Gin was the gin of choice in 18th century England. In fact, it was so popular that it led to a gin craze that was seen as problematic in the eyes of the government. Several prohibitive laws were passed to slow consumption but this only drove the gin scene underground.

How did Old Tom Gin get its name? Well, like the history of many cocktails and spirits, nobody knows the exact answer but there are several theories. Some think an old tom cat fell into a vat of gin. Yikes. Others say that two men named Tom worked at a distillery, one young and one old, and that Old Tom was the one that invented this style of gin. The most fun theory seems to center around a wooden cat. Since gin was nearly outlawed, pubs secretly selling this ‘mothers ruin’ would alert interested parties to its availability by putting a wooden plaque of a cat outside their building. After a coin was deposited through a slot in the wall, the bartender would slyly pour a shot through a pipe out to the patron. This is the story we like to believe.

A Young Italian Embarks on an Adventure

This story began 1875 when Alfredo Francisco Pellas Canessa, a young adventurer from Genoa, Italy, risked everything by leaving behind his family and the comforts of the old continent to travel to the exotic country of Nicaragua.

A Steamboat Route to Unite the Oceans

Initially, he invested in a shorter and safer steam boat route through Nicaragua to transport passengers and goods from the East Coast of the US to the West Coast during the height of the California Gold Rush. The route was a huge success, but when news broke about the construction of the Panama Canal and the U.S. coast-to-coast railroad, Alfredo Francisco knew it was time to set out on a new adventure.

The Flor de Caña Story begins in 1890

In 1890, he found the perfect setting for the Flor de Caña distillery at the base of the San Cristóbal volcano, the tallest and most active volcano in Nicaragua. The fertility of its surrounding lands, the enriched water and the hot volcanic climate proved to be instrumental in forging the rum’s unique and smooth flavor.

Through its 130-year history, the brand, the company and the family have lived through a plane crash, a civil war, nationalizations, hyperinflation, fires, hurricanes, earthquakes and volcanic eruptions.

CURADO TEQUILA

The agave plant has existed on earth for an estimated 12 million years. Pre-Hispanic Mesoamerican cultures found many uses for the plant: the cooked Piña for food, the dried fibers for rope, clothing and paper, and – perhaps most importantly – the fermented Agave juice (Pulque as it is known in Mexico) as the first alcoholic beverage of the American continent. It is a miraculous plant, full of life, that spends long years maturing under the Mexican sun. Nourished by the earth’s minerals, the plants absorb this energy, which becomes their life essence. Mexico is home to an abundance of different spirits – Tequila, Mezcal, Raicilla, and many more. These distillates are all products created from this plant, all unique in their flavors and aromas, depending on the type of Agave that is used to make Curado, we use a blanco Tequila from the Highlands of Jalisco as a canvas, then we infuse the liquid with pieces of cooked Agave. At first the infusions only used Blue Agave from the state of Jalisco, but the project soon evolved to include other varieties of Agave from other regions of Mexico. We want to build bridges, not walls.

Curado’s current expressions are: Blue Weber from Arandas, Espadín from Oaxaca and Cupreata from Michoacán. We have taken an anthropological approach in our search for knowledge, connecting with – and learning from – people with generations of wisdom and experience.

Each variety of Agave is cooked using the technique of each respective region and then taken to Jalisco. There we infuse it in the best 100% Blue Agave Tequila from the Highlands of Jalisco region. The proportion of agave to tequila varies in each expression depending on the type of Agave received.

Curado embodies the union of three families: Estes, Camarena and Vantguard. The inspiration to create the brand originally came from two factors. The first influence came from traditional Mexican Curados, which is the name given to Pulques infused with natural flavors (Pineapple, Coconut, Coffee beans, etc.). The second part of our inspiration stemmed from observing the maceration of various spirits undertaken by bartenders across the world, using various spices, herbs and fruits. The result was Curado, the first Tequila to be infused with cooked Agave. The idea that other Agave varieties could be represented in this evolved spirit, providing variety and complexity of flavor whilst always respecting the denomination of tequila, is what set us apart.

Each animal on the different expressions of Curado represents its land of origin; all of them belong to the oneiric world of Alebrijes. Alebrijes are a modern form of art and expression from the local Mexican artist Pedro Linares, who “saw” these animals carrying him from the world of the living to the world of the dead and back. Often defined with features that belong to other creatures (wings, tails, patterns and colors), Alebrijes are impossible animals that will take you to unexpected places… so is Curado.

La Leyenda, which translates to "The Legend" in English, lives up to its name by delivering a memorable and authentic mescal experience that captivates the senses.

The journey of La Leyenda Mazcal Reposado begins with the meticulous selection of mature agave plants, which are hand-harvested by skilled jimadors who have honed their craft over generations. These prized agaves, harvested at the peak of ripeness, are then roasted in traditional underground ovens for several days. This cooking process imbues the mescal with distinctive smoky aromas, evoking the essence of the rugged Mexican landscape.

Following roasting, the agaves are crushed using a stone tahona, an ancient method that pays homage to the past. The resulting mash is then fermented in wooden vats using natural airborne yeasts, a process that allows the flavors of the agave to develop naturally and retain their authenticity.

After fermentation, the mescal undergoes a double distillation process in copper alembic stills. This careful distillation ensures that only the most refined and purest expressions of the agave's character make it into the final product.

La Leyenda Mazcal Reposado is further enhanced by its aging process, which sets it apart from its unaged counterparts. The reposado designation signifies that this mescal has been matured in oak barrels for a minimum of six months, a period that allows the spirit to develop a remarkable complexity while retaining its earthy and smoky foundation.

Tasting Notes

Appearance: In the glass, La Leyenda Mazcal Reposado presents itself with a golden hue, a testament to its time spent in oak barrels. The liquid glistens with a rich texture, inviting the drinker to explore its depths.

Aroma: Upon the first nosing, a bouquet of roasted agave fills the air, accompanied by subtle notes of caramel and vanilla. The smoky aromas from the cooking process intertwine harmoniously with a hint of dried fruits, leaving a tantalizing impression.
