Its pure flavor defined by the nature of the sprat agave, slightly smoked for balance, produces a high-quality mezcal, not very aggressive, with short but intense fruity tones and a persistent finish that illuminates the palate.

This expression showcases an evolution of the brand's portfolio. A way to educate the consumer as to what is possible when only one variable is changed. Staves to Casks to specialty finishes. Oak is the only factor. Our most recent addition is aged for 8 years in charred new American Oak barrels before it is finalized by the distillers at Clear Creek in their own apple brandy barrels, creating a bridge between our brand and theirs.

TASTE: Oaky and herbal, like barley tea sweetened with manuka honey. Tastes of pipe tobacco and red ale on the mid palate finish in a ghostly bitterness imparted by the barrel’s waning char.

AROMAS: Warm September sweetness on the opening. Reminiscent of pie crust, maraschino cherries, flat cola, and late Summer petrichor.

BACARDÍ Limón rum named after the Spanish word for lemon. But it gets its fresh flavor from a blend of three citrus fruits; lemon, lime and grapefruit. So what does it taste like? Sunshine!

On the steep precarious hillsides of Oaxaca, Guerrero and Durango varieties of agave, indigenous to the region, grow wild and are heavily sought after by the local mezcaleros. These varietals produce flavors that are exotically intense, with rich earth tones and savory smokiness. From the heart of the maguey these flavors are traditionally extracted to produce mezcal that is wildly refined. Because we at bozal believe that something wild produces a far richer spirit.

Agave

One of the most physically distinct species of agave, the Cuishe, a subspecies of the Karwinskii Family of agave, grows vertically as a single stalk with its leaves spreading at the top. Due to its unusual structure, and the stalk containing the firmer piña material, the Cuishe can be difficult to harvest and to work with in general. This agave offers aromas full of tropical fruit with a dry piney and mineral finish.

Taste

Driven by intense citrus and strong minerality, the Cuishe has a dry entry. As is experienced in the rich tropical fruit on the palate that moves to sweet potato on the front. Green vegetal notes in the mouth and a dry smoky finish then follow. A complex flavor profile that proves quite enjoyable.

T’MARO CACAO NIB is a single-origin spirit-based cacao liqueur sweetened with dates. This product was made using Dandelion Chocolate single-origin cacao nibs from the Camino Verde farm in Ecuador. This product is a pure expression of two ingredients, chocolate and date liqueur.

THE STORY
Chef Elizabeth Falkner and beverage-alcohol industry veteran Heather Freyer were inspired by the Amaro and Eau de Vie they made and wanted to express dates and chocolate in the best way possible. They called on their friends at Dandelion Chocolate in San Francisco, a bean-to-bar chocolate maker to utilize some of their single origin cacao nibs to make this divine liqueur.

Situated on the Kentucky River in Frankfort, Kentucky, Buffalo Trace Distillery takes its name from an ancient pathway that migrating buffalo used when traveling westward. The trail was well-known among Native Americans and was eventually used by pioneering settlers who crossed the Ohio River and followed the buffalo trace to the Western frontier. Buffalo Trace Distillery is the oldest continually operating distillery in the United States and includes the rich legacies of master distillers such as E.H. Taylor, Jr, George T. Stagg, Albert B. Blanton, Orville Schupp, and Elmer T. Lee. Today, the distillery is still family-owned, operating on the same 130 acres of land adjacent to the Kentucky River as it has for over 200 years. Trace Distillery's own Master Distiller Harlen Whitley built upon those centuries of knowledge and experience when crafting their Wheatley Vodka. It's a small-batch affair that is distilled 10 times using their one-of-a-kind micro still. It's a combination of a 7X distilled wheat recipe and a 7X distilled grain recipe. After they are combined, they are distilled an additional 3 times, triple-filtered, and bottled at 82 proof, which they found to be perfect for the spirit to show through when mixing cocktails. Yet the crisp, clean, and pure spirit is perfectly drinkable on its own, which is when its subtle hints of vanilla shine through.

Veuve Clicquot Yellow Label Brut has been the symbol of the House since 1772. A perfect balance between power and finesse, its complexity comes from the predominant presence of Pinot Noir and Reserve Wines.

Distillery Information

Founded in 1772 by Philippe Cliquot from a wealthy banking family, his son Franois married Barbe Nicole Ponsardin. Sadly she was widowed at just 27 so took over the stewardship of the champagne company, something she proved very good at.
