Each offering in the series features one of Dylan's paintings on a hand-made ceramic bottle in a collectible leather case.

The southernmost of the Inner Hebridean Scottish Isles, the island of Islay (pronounced EYE-lah) is just 240 square miles and home to only 3,457 people. Still, the island is one of just five distilling regions in Scotland whose identity is protected by law. Islay's unique climate and geography impart signature characteristics to Scotch distilled and matured on the island. Despite its small size, the island boasts 130 miles of coastline, and the warm Gulf Stream from the Atlantic Ocean provides for cool winters and mild summers. In addition, the island is largely composed of peat, a phenolic compound that emits smoky aromas when burned. The salty winds and peat bogs of Islay result in Scotch that has a signature salinity and is balanced by a touch of smoke. The Big Smoke Islay Blended Malt Scotch Whisky was crafted by blending together whiskies from some of the island's most iconic distilleries. As a result, the whisky has an aroma of salted caramel, buttered biscuits and bonfire that gives way to chewy notes of caramel, vanilla, mint, smoke, charcoal, cinnamon buns and honey on the palate. The finish is clean and crisp, with touches of saltines, leather, wood and tobacco. The whisky earned a score of 90-95 points from Wine Enthusiast.

In the late 1950s, the Medley Distillery began producing a bourbon named Ezra Brooks in Owensboro, Kentucky. The distillery, which was founded in 1901, traced its origins back to the birth of Kentucky bourbon; while Reverend Elijah Craig is usually credited with producing the first bourbon whiskey at his mill in Lebanon in 1789, the Medley family began distilling whiskey at the same time in the adjacent county in Kentucky. In fact, except during the thirteen years during which distillation was outlawed in the United States, a member of the Medley family has been operating a distillery continuously since 1812. Today, Ezra Brooks Straight Rye Whiskey continues to be handcrafted in the heart of Kentucky. Bottled and aged in the old fashioned way for an unmistakable, unforgettable mellow flavor. This bourbon liqueur has sweet floral notes with undertones of vanilla, cinnamon, and fine wood. The palate is subtle, with notes of vanilla, floral tones and a warm, lengthy, buttery finish. 

Highclere Castle Gin. Infuse Spirits is aptly named. Seth Benhaim started infusing spirits in his garage in 2012 at the age of twenty-five. When he entered his first Vodka releases that year in the San Francisco Worlds Spirits Competition, his accomplishments made him the youngest ever winner of both Best in Show and Double Gold. Infuse Spirits has gone on to develop a wide range of products, including six Vodkas, a Bourbon, a Rye, and a range of six unique cocktail bitters. The whisky we distil from the organic barley of Mid Coul reflects the complex natural flavours of the landscape. Just as our stillmen refuse to abandon the traditional crafts of distillation in favour of automation or industrialisation, so farmer William Rose rejects the use of herbicides, pesticides and artificial fertilisers. Crop rotation is key. Our barley must take its turn in a seven year farm cycle that also produces organic cattle, sheep, oats, beans, grass, carrots, market gardening and a megawatt of green electricity. Respecting the land, the soil and the climate nourishes a genuine and thorough understanding of terroir and the results are pure Bruichladdich.

TASTING NOTES

Nose: Fresh malted barley, melon, peach and apricot. Opens up with notes of rich honey, lemon meringue and floral notes of gorse and heather. Vanilla and caramel and pastry notes from the wood are nicely balanced with the intensity of the fruit, waves of pear apple and gooseberry still hint at the fresh green fruits of the spirit.

Taste: Sweet pear drops, vanilla fudge, chocolate and marzipan initially. No aggression here at all just well-integrated flavours and a round gentle texture. The oak and malt notes complement each other so well overlapping each other with toasted rye bread, buttery popcorn and fresh oak, vanilla fudge and smooth caramel merging. The organic barley seems to give more fruit from the distillation and a more viscous texture which is a joy to the olfactory senses.

Finish: Sweet citrus, lemon drops, come through well on the finish and a slight char from the oak gives depth. The finish feels more marine, a little briny alongside the oak and malt which works beautifully.

Character: Elegance, richness and definite Bruichladdich DNA. The depth of flavour comes from the malt and its transformation through the alchemy of distillation. The spirit is pure and fresh, the oak rich and honied, together with time the combination of great oak, superb barley and slow distillation make for an amazing exploration of the fundamentals of making whisky.
