Lovingly handcrafted and aged in Kentucky, Pinhook Bourbon was established in 2014 and has produced several small-batch bottlings in their newly restored Castle & Key distillery in Frankfort, KY, to much critical acclaim. What makes their line unique is the brand's three distinctive characteristics: its limited availability, mass appeal, and strong ties to Kentucky's legacy of horse racing. Each release of Pinhook Bourbon is named after a thoroughbred owned by Bourbon Lane Stable. The label also features the horses racing records on their brand's website. Every fall Pinhook features an annual vintage of Pinhook Bourbon and Pinhook Rye, each of which is inspired by a thoroughbred horse. Each blend is as unique as the horse on the label. "Pinhooking" refers to an old Kentucky term for purchasing young thoroughbreds, holding them until they mature, and selling them when they are ready to run. Successful pinhooks much like whiskey are made on instinct, experience, an appreciation of quality, and a little luck. Pinhook bourbons and ryes are handcrafted to reflect the richness of the Kentucky soil and the character of its beautiful horse country. The Bourbon Vertical Series is an annual-release series that follows 1,350 MGP bourbons through their aging process up until 12 years of age. "It will be exciting to follow the maturation of both rye and bourbon over the course of 9 years and understand how each style of whiskey progresses individually as well as in comparison to the other," says Master Blender Sean Josephs. The War 5YO Vertical Series is crafted from a mash bill of 75% corn, 20.5% rye, and 4.5% malted barley. The Bourbon War Vertical Series 5 Year Old is a straight bourbon that's bottled at 104 proof, its additional year of maturation brings more dark fruit and caramel notes, as well as hints of smoke. The second in the series, it's a blend of 150 barrels that were aged at Castle & Key. It's named after a thoroughbred colt.

James E. Pepper 1776 100 Proof Straight Bourbon Whiskey

Elijah Pepper began distilling whiskey at the dawn of the American Revolution and during the War of 1812, he built the first log cabin distillery in Versailles, Kentucky. Eventually, he passed the family business on to his son, Oscar, and then on to his grandson, James E. Pepper. Colonel James E. Pepper was one of Kentucky's first Bourbon aristocrats he raced thoroughbreds in the Kentucky Derby, traveled in a private rail car and made famous the Old Fashioned cocktail. "Pepper Whisky is an old fashioned whisky, made in the old time way from a formula used for more than 100 years by three generations of the Pepper family," wrote James, in an advertisement dated August 22, 1887. "We claim not only to make the oldest but absolutely the purest and best brand of whisky made in America, and we invite comparison with any whisky of any age." In 1958, after the whiskey industry fell on hard times, the James E. Pepper Distillery was forced to close its doors. During its tenure, Pepper Whiskey, or "Old 1776 Whiskey" as it became it known, was a favorite of Presidents Andrew Jackson and Ulysses S. Grant, and was preferred by Daniel Webster, a leading American statesman and senator from Massachusetts. "Before re-launching this iconic brand," says Amir Peay, "we did extensive research and spent years collecting and analyzing full, preserved bottles of original Pepper Whiskey." Peay even acquired a letter written by Pepper himself, detailing the exact mashbill and recipe used to create Old 1776. "We wanted to pay homage to Pepper's legacy and do our best to recreate the original Pepper Whiskey something that was part of American history," he says. James E. Pepper 1776 Straight Bourbon Whiskey is made from a mash of approximately 62% corn and malted barley, and 38% rye. After distillation, the bourbon is aged for a minimum of four years in new, American oak casks. As a result, it has slightly sweet hints of vanilla, toffee and caramel, that subtly compliment notes of baking spices, spicy rye and oak. James E. Pepper 1776 Bourbon Whiskey earned Double Gold Medal at the San Francisco World Spirits Competition in 2013. "We used the same traditional methods that Pepper championed in order to restore these whiskies," says Peay.

Monkey 47 Schwarzwald Dry Gin 1L

After serving honorably in World War II, Commander Montgomery "Monty" Collins of the Royal Air Force was discharged in 1951 and moved to the Northern Black Forest where he opened a country guest home nicknamed "The Wild Monkey." The Black Forest area is notorious for producing some of the world's finest fruit liqueurs, and so Collins eventually began experimenting with distillation. In time, he perfected the recipe for his very own gin, which became the signature spirit served at The Wild Monkey until the 1970s. "When I heard about a special gin that contains classical spices and also ingredients from the Black Forest such as spruce shoots and lingonberries, I left my job and began doing research with the aim of bringing this gin back to life," says Alexander Stein, who resurrected Collins' gin. After two years of research and development, Stein, together with master distiller Christoph Keller, settled on a recipe that called for 47 unique ingredients. The ingredients include acacia, acorus, calamus, almond, angelica, bitter orange, blackberry, cardamom, cassia, chamomile, cinnamon, citron verbena, cloves, coriander, cranberries, cubeb, dog rose, elderflower, ginger, grains of paradise, hawthorn berries, hibiscus abelmoshus, hibiscus syriacus, honeysuckle, jasmine, kaffir lime, lavender, lemon, lemon balm, lemongrass, licorice, lingonberries, mondara didyma, nutmeg, orris, pimento, pomelo, rose hip, sage, sloe and spruce. The ingredients are steeped in French-made molasses alcohol for 36 hours prior to being distilled through an Arnold Holstein copper-pot still. Keller combines traditional maceration and distillation techniques, as well as vapor infusing certain ingredients, to gather precise amounts of the more volatile botanicals and accentuate more sublime flavors. Bottled at 47% ABV, Monkey 47 Schwarzwald Gin has an aroma of wood spices, vegetables, citrus and pine. The aroma gives to way to an incredibly complex bouquet of flavors, including earthy spices, fruit, herbs and tart citrus. The finish is rich and bursting, with a hint of lemon balm. Monkey 47 earned the World Spirits Award Gold at the International Wine and Spirits Competition, and was named one of the ten best gins by The Independent. The gin also earned a score of 93 points from the Beverage Testing Institute in 2014. Pick up a bottle today!

Koloa Kaua'i Dark Rum

In 1778, the HMS Resolution, commanded by Captain James Cook, made landfall on the island of Kaua'i, the oldest island in the Hawaiian archipelago. Cook was the first European to visit the Hawaiian islands, and his sailors undoubtedly exhausted from a long and arduous journey are believed to have introduced the concept of rum to the Hawaiians. Within a few years, Hawaii's first successful sugar plantation was established near the town of Koloa on the island of Kaua'i. "In many ways, this is where it all began," says Robert Gunter, master distiller at Koloa Rum Corporation. Each Koloa Rum is made exclusively from raw sugar cane crystals, which are grown on the island of Kaua'i. The island's rich, volcanic soil, along with its temperate climate, produce naturally flavorful and dense sugar cane. In addition, unlike most distilleries which use molasses in order to produce rum, Gunter only uses raw sugar cane crystals, which contain naturally higher concentrations of sucrose and minerals. "It just creates a better rum," says Gunter. After purchasing the sugar crystals from the Gay & Robinson Sugar Plantation (situated on the western part of the island), Gunter ferments the sugar using a proprietary strain of yeast he sourced from Guadeloupe, an island in the French Caribbean. "Never underestimate the importance of yeast in producing a quality rum." Following fermentation, the wash is twice-distilled through Koloa Rum's vintage, 1210-gallon, hybrid copper pot and column still. The still, which was originally manufactured in Pennsylvania shortly after World War II, was previously used to distill bourbon in Kentucky. During distillation, Gunter forces the alcohol vapors to pass through the column's seven plates. As the alcohol vapor rises, it is stripped of impurities and becomes more concentrated. In order to create Koloa Gold Rum, Gunter infuses the rum with carmalized sugar following distillation. Koloa Gold Rum has a vivid golden color, along with notes of sugar cane, candied apples, maple and vanilla that lead to a caramel finish. The rum earned the Silver Medal at the San Francisco World Spirits Competition in 2012 and at the International Rum Festival in 2013. In order to create Koloa Spice Rum, Gunter infuses the rum with carmalized sugar, natural vanilla and a proprietary blend of herbs and spices following distillation. Golden wheat in color, Koloa Spice Rum has hints of allspice, cinnamon and cake, and finishes with a touch vanilla. The rum earned the Silver Medal at the San Francisco World Spirits Competition in 2012, and the Bronze Medal at the Miami Rum Renaissance Festival in 2011. In order to create Koloa Dark Rum, Gunter infuses the rum with a completely unique set of herbs and spices, which gives the rum its signature deep mahogany color, and contribues notes of crme br?le, vanilla and caramelized oranges to the rum. Koloa Dark Rum earned the Gold Medal at the Miami Rum Renissance Festival in 2011, where it was named "Best in Class." Once each rum has been infused with the requisite ingredients, Gunter brings the rum to proof using water sourced from Mt. Waialeale, one of the wettest spots on earth. "The water is captured during rainfall and is slowly filtered through layers of volcanic strata before reaching these vast, underground aquifers," says Gunter. "That's what adds the unique taste and mouthfeel to our rum." Once the rum is brought to proof, each bottle is filled and labeled by hand.
